A tasty soup that is just right for chasing away those winter chills. Very easy to make and one of my most often requested recipes! Top with Parmesan cheese and serve with hot crusty French bread if desired.

5 ¼ cups vegetable broth
1 (14.5 ounce) can Italian-style stewed tomatoes
1 clove garlic, minced
2 tablespoons grated Parmesan cheese
1 (16 ounce) package prepared cheese tortellini, thawed
10 ounces spinach, rinsed and chopped

Steps:

  • Bring a large pot of lightly salted water to a boil. Combine tortellini and spinach and bring to a boil; reduce heat slightly and boil for 7 minutes. Drain and add to the tomatoes and broth; simmer for 20 minutes. Serve.

2 tablespoons olive oil
1 medium onion, chopped
1 teaspoon minced garlic
4 carrots, peeled and sliced into 1/4-inch coins
8 cups chicken stock
1 cup frozen green peas
One 12-ounce container tricolor cheese tortellini
2 ears corn, kernels removed
2 cups fresh baby spinach, torn into smaller pieces
Grated Parmesan cheese, for garnish

Steps:

  • In a large stockpot over medium heat, heat the oil until it shimmers, about 2 minutes, then add the onion, garlic, and carrots, and saute for 5 minutes or until the vegetables are slightly soft. Pour in the chicken stock, increase the heat to high, and bring to a boil. Add the peas, tortellini, and corn and cook for 12 minutes, or according to the package directions for the tortellini.
  • Remove the stockpot from the heat and add the spinach, stirring until it wilts. To serve, spoon the soup into bowls and top with grated Parmesan cheese.

1 tablespoon olive oil
1 tablespoon butter
1 cup diced onions
1 cup sliced carrots
1 cup diced celery
2 cloves minced garlic
1 teaspoon each minced rosemary, thyme, parsley, and turmeric
1/2 teaspoon each salt and pepper
1 quart chicken broth
2 cups shredded chicken
8 ounces tortellini

Steps:

  • Heat olive oil and butter and add in onions, celery, and carrots. Sauté a few minutes until veggies begin to soften
  • Add in garlic, herbs, and seasonings and sauté another minute or two until fragrant
  • Pour in broth, bring to simmer, cover and cook for about 10 minutes. Add in chicken and tortellini. Cook for another 3 to 5 minutes until Tortellini is cooked and chicken is heated through
  • Top with extra parsley and serve!

Here is a Tortellini Soup that uses a clear and golden broth, rather than a tomato soup base. The nutmeg adds an amazing scent and flavour, and the soup tastes great the next day. I've adapted the original recipe, found in "Betty Crocker's Italian Cooking", for a vegetarian version.

2 garlic cloves, finely chopped
2 medium celery ribs, chopped
1 small onion, chopped
1 medium carrot, chopped
3 tablespoons butter
8 cups vegetarian chicken broth
4 cups water
2 (10 ounce) packages dried cheese-filled tortellini (I often use fresh tortellini and adjust the cooking time accordingly)
2 tablespoons chopped fresh parsley
1/2 teaspoon pepper
1 teaspoon freshly grated nutmeg
freshly grated parmesan cheese

Steps:

  • Cover and cook the garlic, celery, onion, and carrot in butter in a large pot over medium-low heat for 10 minutes.
  • Stir in the broth and water. Heat to boiling, and reduce the heat.
  • Stir in the tortellini. Cover and simmer for 20 minutes or until the tortellini is tender, stirring occasionally.
  • Stir in the parsley, pepper, and nutmeg. Cover and cook for 10 minutes.
  • Top each serving with cheese.

1 cup chopped onion
2 cloves garlic, minced
6 cups low-sodium chicken broth
1 (16 ounce) can whole peeled tomatoes, cut into pieces
2 cups thinly sliced carrots
1 cup thinly sliced celery
1 cup ketchup
¾ cup dry red wine
1 (9 ounce) package refrigerated cheese tortellini
2 cups thinly sliced zucchini
¼ cup grated Parmesan cheese, or to taste

Steps:

  • Heat a Dutch oven or large skillet over medium-high heat. Cook and stir sausage in the Dutch oven until browned and crumbly, 5 to 7 minutes; drain and discard grease. Add onion and garlic; cook and stir until onion is tender, 5 to 10 minutes.
  • Stir chicken broth, tomatoes, carrots, celery, ketchup, and red wine into sausage mixture; bring to a boil. Reduce heat, cover, and simmer until carrots and celery are tender, about 30 minutes. Add tortellini and zucchini to the soup and cover; simmer until zucchini are tender, 25 to 30 more minutes. Ladle soup into serving bowls and top with Parmesan cheese.

1 can diced tomato (or peeled, diced fresh)
2 cans chicken broth (or equivalent bouillon cube)
2 cups fresh spinach, chopped (or slightly less frozen)
1 stalk celery, finely chopped
2 medium carrots, chopped
1 bay leaf
2 tablespoons fresh basil
1 teaspoon fresh parsley
2 tablespoons fresh oregano
2 teaspoons crushed, chopped garlic
1 medium onion, chopped
1 teaspoon freshly ground black pepper
2 teaspoons good quality olive oil
1 cup water

Steps:

  • Saute celery, onion, carrots and garlic in oil.
  • Add spinach and tomatoes and simmer 10 minutes.
  • Add spices and chicken broth.
  • Simmer, covered, until vegetables are tender-crisp.
  • Add water and tortellini and simmer 10- 15 minutes.
  • Remove bay leaf and serve.
