Martha first tasted this delicious sweet-potato spoon bread at The Elms, a restaurant and tavern owned by Brendan and Cris Walsh in Ridgefield, Connecticut.This recipe, part of Martha's Ultimate Thanksgiving Menu 2007, was adapted from Martha Stewart Living, November 1997.

3 large sweet potatoes
1/4 cup yellow cornmeal
2 cups milk
4 tablespoons unsalted butter
1/4 cup light-brown sugar
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 1/2 teaspoons ground cinnamon
1 teaspoon salt
1/2 cup all-purpose flour
1/4 cup honey
4 large eggs
1 cup heavy cream

Steps:

  • Heat oven to 400 degrees. Bake sweet potatoes until soft when pierced with a knife, 40 to 45 minutes. Let cool. Peel, and discard skins.
  • Reduce heat to 350 degrees. In a medium saucepan over medium heat combine cornmeal, milk, butter, brown sugar, spices, salt, and 1 cup water. Cook, stirring, until slightly thickened, about 10 minutes. Let cool.
  • Butter a 2-quart baking dish. Working in batches if necessary, place cornmeal mixture, sweet potatoes, flour, honey, eggs, and cream in a food processor. Process until smooth; pour into dish. Bake until golden brown, about 45 minutes. Serve.

Golden Sweet Potato Spoon Bread image

A lovely mild spoon bread that makes a great addition to any meal! This can be made ahead and baked later. This recipe came courtesy of Ben Barker, Magnolia Grill, in Durham, N.C. Cook time does not include cooking of sweet potato. You could replace the potato with pumpkin for pumpkin spoon bread, or other squash. I might even try banana and see what happens!

1 large sweet potato
1 1/2 cups milk
2 cups half-and-half
1 tablespoon salt
3 teaspoons sugar
1 cup cornmeal
1/2 cup flour
8 tablespoons butter, cut into pieces
6 eggs, separated
1/4 cup cream

Steps:

  • Bake sweet potato in center of 325°F oven until tender, about 1 hour.
  • Peel and puree until smooth; set aside.
  • Butter a 12-cup shallow casserole.
  • Heat milk, half and half, salt and sugar in a heavy saucepan over medium heat.
  • When small bubbles appear around the edge, slowly whisk in cornmeal and flour, stirring constantly.
  • Continue to stir as mixture cooks and thickens.
  • When smooth and creamy, remove from heat and stir in butter until completely melted and combined.
  • In a medium bowl, beat yolks and cream together until lightened in color.
  • Gradually add to cornmeal mixture.
  • Add 3/4 cup sweet potato puree.
  • Add salt to taste, if desired.
  • Recipe can be made ahead to this point.
  • Preheat oven to 350°F.
  • Beat egg whites and fold into cornmeal mixture.
  • Spread into prepared dish.
  • Bake until puffy, golden brown aand just set, about 30 to 35 minutes.
  • Makes 12-14 servings.

1/2 cup cornmeal
12 ounces sweet potatoes
1 1/2 cups 1% milk
2 large eggs, separated
2 extra large egg whites
2 tablespoons maple syrup
1 tablespoon fresh grated ginger
1 teaspoon salt

Steps:

  • Bake sweet potato until cooked through. Allow to cool slightly, then remove skin and mash well.
  • Bring milk to a simmer on the stove. Whisk in cornmeal and continue whisking as cornmeal cooks, approximately 2 minutes. Remove from heat.
  • Preheat oven to 350°F Spray an 8x8 baking dish with nonstick spray.
  • In a large bowl, stir together mashed sweet potatoes, cornmeal mixture, egg yolks, ginger, salt, and maple syrup.
  • Using an electric mixer, whip egg whites until very stiff peaks form. Stir (do not just fold) half of the egg whites into the potato mixture. GENTLY fold the remaining egg whites into the mixture.
  • Spread mixture into prepared dish and bake for 35 minutes or until set.

1/2 cup yellow cornmeal, plus more for pan
2 small sweet potatoes (12 ounces), peeled and cut into 1-inch pieces
1 1/2 cups low-fat milk (1%)
2 large eggs, separated, plus 2 large egg whites
2 tablespoons light-brown sugar
1 tablespoon unsulfured molasses
1 tablespoon grated, peeled fresh ginger
1 teaspoon salt

Steps:

  • Preheat oven to 350 degrees. Butter a 2-quart baking dish and dust with cornmeal. Steam sweet potatoes until tender, about 15 minutes. Remove from heat and mash until very smooth; let cool slightly.
  • Meanwhile, in a medium saucepan, bring milk to a simmer. Whisk in cornmeal in a thin stream. Cook, whisking constantly until just thickened, 1 to 3 minutes; remove from heat and let cool slightly.
  • In a large bowl, stir together mashed potatoes, cornmeal mixture, egg yolks, sugar, molasses, ginger, and salt. Whisk the egg whites until stiff peaks form. Stir in half of egg whites into cornmeal mixture. Very gently fold in remaining egg whites.
  • Spoon mixture into prepared baking dish, place on a baking sheet and bake until puffed and set, 35 to 40 minutes.

One of my favorite recipes made by my grandmother and handed down to me. My Granny made this bread as a sweet treat, but it was great for breakfast.

1 sweet potato
1 ¼ cups white sugar
½ cup canola oil
2 eggs
1 ⅔ cups sifted self-rising flour
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
⅓ cup water
½ cup chopped pecans
cooking spray
1 cup brown sugar
1 teaspoon butter
½ cup chopped pecans

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Wrap sweet potato in aluminum foil.
  • Bake sweet potato in the preheated oven until easily pierced with a fork, about 1 hour. Set aside to cool.
  • Whisk white sugar and canola oil together in a bowl. Add eggs; mix well. Sift flour, cinnamon, and nutmeg into sugar mixture. Slowly whisk water into flour-sugar mixture until incorporated.
  • Peel sweet potato; mash into the batter. Fold in 1/2 cup chopped pecans.
  • Reduce oven temperature to 320 degrees F (160 degrees C). Spray a 9x5-inch loaf pan with cooking spray.
  • Pour batter into the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted in the center of the bread comes out clean, about 1 hour.
  • Heat brown sugar and butter in a small saucepan over low heat until sugar is dissolved, about 5 minutes. Add 1/2 cup chopped pecans and stir to combine. Remove from heat. Pour glaze over bread.

Slit the skins and scoop the potatoes into a large bowl. Mash until smooth. You should have 1 1/4 cups of mashed sweet potatoes. Increase the oven temperature to 425°.
  • Meanwhile, lightly butter a shallow 2-quart glass or ceramic baking dish and dust it with cornmeal, tapping out any excess. In another large bowl, whisk the cornmeal with the sugar, salt and baking soda. Melt the butter in the boiling water, then stir the butter-and-water mixture into the dry ingredients. Let cool slightly.
  • Using an electric mixer, beat the buttermilk, honey, cumin, white pepper, cloves and cayenne into the mashed sweet potatoes until combined. At medium speed, beat in the cornmeal mixture.
  • In a clean stainless steel bowl, using clean beaters, beat the egg whites until stiff but not dry. Fold the beaten egg whites into the sweet-potato mixture until no white streaks remain. Pour the batter into the prepared baking dish and bake for about 40 minutes, or until golden and risen and a toothpick inserted in the center comes out clean. Serve the sweet potato spoon bread warm or at room temperature.
