GOLDEN BAKED ONIONS
I love to invent new dishes, but I also enjoy making tried-and-true recipes, like my mom's baked onions. The onions are a rich and satisfying side dish with poultry and beef, but they can also be a meal all by themselves!-Chris Gaskill, Knoxville, Tennessee

Steps:
- In a large skillet, saute onions in butter until tender. In a large bowl, combine the soup, milk, pepper and 2 cups cheese. Stir in onions., Transfer to a greased 2-qt. baking dish. Sprinkle with remaining cheese. Brush bread slices with melted butter on one side. Arrange buttered side up over cheese. , Bake, uncovered, at 350° for 25-30 minutes or until bubbly. If desired, broil 4-6 in. from heat until bread is golden brown. Let stand for 5 minutes before serving.

GOLDEN ONION PIE

Steps:
- Make dough:
- Stir together yeast, milk, and sugar in bowl of a stand mixer fitted with paddle attachment (or in a bowl to mix by hand) and let stand until foamy, about 5 minutes. (If mixture doesn't foam, start over with new yeast.)
- Add flour, salt, egg, and butter and mix at low speed (or stir) until a dough forms. Increase speed to medium-high and beat 3 minutes (or knead by hand 5 minutes).
- Sprinkle dough lightly with flour and cover bowl with a kitchen towel (not terry cloth). Let dough rise in a draft-free place at warm room temperature until doubled, 1 1/2 to 2 hours.
- Make filling while dough rises:
- Cook onions and bacon in butter with 1 teaspoon salt and 1/2 teaspoon pepper in a 12-inch heavy skillet, covered, over medium-high heat, stirring occasionally, until onions are softened, about 20 minutes.
- Remove lid and cook, stirring occasionally, until onions are golden, 20 to 30 minutes. Cool onions.
- Whisk together sour cream and yolks, then stir into onions.
- Bake pie:
- Preheat oven to 375°F with rack in middle.
- Roll out dough on a lightly floured surface with a lightly floured rolling pin into a 12-inch round. Fit dough into springform pan (stretching slightly if necessary to hang over edge) and spread filling evenly in it. Fold edges of dough over filling, leaving some filling exposed in center. Let pie stand 20 minutes at room temperature.
- Bake until crust is golden-brown and filling is bubbling, about 11/4 hours. Cool slightly before serving.

CREAMY BAKED ONIONS
Parboiled onions are baked in heavy cream with fresh thyme, salt and pepper.

Steps:
- Preheat the oven to 350 degrees Fahrenheit. Use the butter to grease the baking dish.
- Peel the onions and remove the tops and tails using a sharp knife.
- Add water to a large saucepan and lightly salt the water. Bring to the boil. Add the onions and bring back to boiling point. Reduce the heat and allow the onions to simmer for 20 minutes until tender.
- Remove the onions from the heat and drain. Allow to cool slightly before cutting the onions in half. Arrange the onion halves flat side down or cut side down in the greased baking dish.
- Place the thyme sprigs in different places between the onions in the dish.
- Pour the cream over the onions and top with a light dusting of freshly ground black pepper.
- Bake in the oven uncovered for 20 to 25 minutes until bubbling and turning slightly golden brown. Remove the thyme sprigs. Garnish with fresh parsley and serve warm from the dish.

GOLDEN ONION BAKE
Onion lovers unite!!! This is a very good side dish for BBQ. I found this recipe in a magazine over ten years ago, I think while waiting at the Vet's. Vidalias are best, but I just use spanish, red's, or any combination thereof.

Steps:
- Preheat oven to 350-degrees.
- Butter casserole dish (shallow one).
- Melt butter in large skillet and add onions.
- Cook until tender and translucent.
- Stir often.
- Transfer onions to prepared dish.
- Combine milk, soup, salt and pepper in a bowl.
- Pour over onions.
- Sprinkle cut cheese over top.
- Brown bread slices (one side only) in skillet.
- Add butter as needed.
- Placed on top of casserole with browned side up.
- Bake until bread browns even more.
- About 30 minutes.
- Serve hot.

GOLDEN ONION SOUP
Good as gold! Caramelized onions pair perfectly with crunchy croutons in this oven-baked soup.

- Heat oven to 400°F. In 13x9-inch pan, melt 1/4 cup butter in oven. Toss bread cubes in butter until evenly coated. Sprinkle with cheese. Bake uncovered 10 to 15 minutes, stirring occasionally, until golden brown and crisp.
- Reduce oven temperature to 325°F. In 4-quart ovenproof Dutch oven, melt 1/4 cup butter over medium heat. Stir in brown sugar and Worcestershire sauce. Toss onions in butter mixture.
- Bake uncovered about 2 hours 30 minutes, stirring every hour, until onions are deep golden brown. Remove from oven; stir in broth and water. Heat to boiling on top of stove. Serve with croutons.

GOLDEN BAKED ONIONS
This is from the TOH F/M 04 issue. This is such a versital recipe. It goes from picnic table to dining room table. I used low sodium soup and used 6 grain bread instead of French bread. I halved the recipe, for 2 of us, and used it as a side dish to Beef Burgundy.

- In a bowl, combine soup, milk, pepper, and 2 c cheese.
- Stir in onions.

- Prepare grill for indirect heat. Peel onions, leaving root ends intact. Cut a thin slice from the top of each, then carefully cut a 1-in. hole in the center. Cut each onion into quarters, cutting to within 1/2 in. of bottom. Place each onion on a double thickness of heavy-duty foil (about 12 in. square)., Sprinkle bouillon, thyme, salt and pepper into centers; top with butter. If desired, drizzle with wine.
