GOAT CHEESE AND HERB STUFFED CHICKEN BREASTS

Goat Cheese and Herb Stuffed Chicken Breasts image

Provided by Geoffrey Zakarian

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 13

4 skin-on boneless chicken breasts
Kosher salt and freshly ground black pepper
1 large egg white
8 ounces goat cheese, crumbled
2 tablespoons finely minced fresh parsley
2 tablespoons chopped fresh tarragon
1 tablespoon finely minced shallots
1 tablespoon Dijon mustard
Zest of 2 lemons
2 tablespoons canola oil
2 tablespoons butter
2 cloves garlic, smashed
2 sprigs fresh thyme

Steps:

  • Preheat the oven to 375 degrees F.
  • Using a paring knife, make an incision in the side of each chicken breast, passing the knife though horizontally to make a slit but not cutting through the other side of the breast. With the paring knife inserted, rotate the knife to carve out a bit more space and create a pocket. Season the outside and inside of the chicken with salt and pepper.
  • Lightly beat the egg white in a bowl to break it up, then add the goat cheese, parsley, tarragon, shallots, mustard and lemon zest and mix until incorporated. Transfer the mixture to a resealable plastic bag (or piping bag). Snip off a corner of the plastic bag and pipe the mixture into each chicken breast until filled.
  • Heat the oil in a large ovenproof saute pan over medium-high heat until hot and glistening. Add the chicken breasts skin-side down and cook until the skin turns a dark golden brown, 8 to 10 minutes. Add the butter, garlic and thyme, then flip and transfer the pan to the oven; cook the chicken until the internal temperature reaches 160 degrees F, about 10 minutes. Allow the chicken to rest for 5 minutes before slicing and serving.

GOAT CHEESE, APRICOT, AND SAGE-STUFFED CHICKEN BREASTS

Goat Cheese, Apricot, and Sage-Stuffed Chicken Breasts image

Provided by Laura Werlin

Categories     main-dish

Yield 4 servings

Number Of Ingredients 14

1 tablespoon olive oil
1 cup finely chopped yellow onion (about 1/2 large onion)
2 small cloves garlic, minced
1 tablespoon chopped fresh sage leaves
Salt and freshly ground black pepper
1/4 cup dried apricots (about 2 ounces), plumped in hot water, drained, and cut into 1/4-inh pieces
1/2 cup fresh goat cheese (2 to 3 ounces), (or use fromage blanc or softened cream cheese)
2 whole boneless, skinless chicken breasts (about 2 pounds total), each cut in half lengthwise
1 egg, lightly beaten
1 cup Japanese panko crumbs or use toasted coarse bread crumbs
5 tablespoons unsalted butter
2 tablespoons white wine
1/2 cup unsalted chicken stock
Whole fresh sage leaves, for garnish

Steps:

  • Preheat the oven to 400 degrees F.
  • In a medium-size saute pan, heat the olive oil over medium-high heat. Add the onions and cook for 5 minutes. Turn the heat down to medium and add the garlic. Cook for 5 minutes, stirring frequently. Don't let the onions and garlic brown. Next, add the chopped sage and salt and pepper to taste, and cook until the onions are translucent, 5 to 10 minutes. Add the apricots and cook until heated through, 5 minutes. Remove the pan from the heat and let cool for 10 minutes. Thoroughly mix in the goat cheese and set aside. (This can be made up to 24 hours in advance and refrigerated. Bring to room temperature before stuffing the chicken breasts.)
  • Place each chicken breast between 2 pieces of plastic wrap. With a kitchen mallet, a cleaver, or a heavy tin can, such as a can of tomatoes, pound the breasts until they are between 1/8 and 1/4-inch thick. (They will not roll easily if they are too thick.) Season with salt and pepper.
  • Spread about 1/4 cup of the stuffing down the center of each chicken breast. Fold up the short ends of the chicken breast, and then roll one long side jelly-roll-fashion to the other side. Tie the ends with string to secure them. Place the egg in a shallow bowl and the panko crumbs in another shallow bowl. Dip the chicken in the egg, and then roll in the panko crumbs until completely coated. In an ovenproof saute pan, melt 4 tablespoons of the butter over medium-high heat. Place the chicken in the pan and brown on all sides, about 8 minutes. Then put the pan in the oven and bake until the chicken is a deep golden color and firm when pressed, 10 to 12 minutes.
  • After the chicken breasts come out of the oven, remove the strings and put them on a warmed platter; tent with foil. Next, place the pan over high heat and deglaze it with the wine. Boil until reduced to about 1 tablespoon, 1 to 2 minutes, and then add the chicken stock. Boil until reduced by half, 3 to 5 minutes, and add salt and pepper to taste. Remove from the heat and swirl in the remaining 1 tablespoon butter.
  • Cut each breast in half crosswise and place one half on its side on the plate. Lean the second half against the first, facing down. Alternatively, slice breast into even slices. Drizzle with the sauce, garnish with sage leaves, and serve immediately.

BALSAMIC-GLAZED CHICKEN SANDWICHES WITH GOAT CHEESE

Balsamic-Glazed Chicken Sandwiches With Goat Cheese image

Found this in Cooking Light and surprise, everyone liked it (that's rare in our house). My DS uses plain cream cheese instead of the goat cheese but my DH & I like the slight tang of the goat cheese.

Provided by greksgirl

Categories     Lunch/Snacks

Time 1h

Yield 3 sandwiches, 3 serving(s)

Number Of Ingredients 13

1/2 cup balsamic vinegar
1/4 cup red wine
2 teaspoons brown sugar
1 teaspoon soy sauce
3 (6 ounce) boneless skinless chicken breasts
1/2 teaspoon salt
1/4 teaspoon pepper
cooking spray
1 tablespoon olive oil
1 large red onion, sliced
1 (3 ounce) package goat cheese (we like Chavrie)
3 kaiser rolls
1 cup arugula, trimmed (optional)

Steps:

  • Combine the vinegar, soy sauce, red wine and brown sugar in a small saucepan over medium heat. Bring to a boil, stirring until the sugar disolves. Cook until reduced to 1/2 cup (about 12 minutes). Remove from heat and cool slightly.
  • While the vinegar cooks, spray a large non-stick skillet with non-stick cooking spray and heat on med-high heat. Sprinkle the chicken with the salt and pepper and brown to desired doneness, at least 4 minutes per side. Remove form the skillet and cover, keeping it warm. Add the olive oil to the skillet and spread around to coat the bottom well, add the onion and cook, stirring often to prevent burning, till brown or carmelized. Remove from heat.
  • Thinly slice the chicken. Spread a thin layer of cheese over the bottom of each roll, divide the chicken between each roll and top with the onion. Drizzle each with a small amount of the vinegar mixture(about 1 Tbsp.) and top with the arugula, if desired.

GOAT CHEESE-STUFFED CHICKEN

Goat Cheese-Stuffed Chicken image

I came up with this recipe after being inspired by a Spanish tapa I had at an amazing restaurant in Las Vegas. I basically took their goat cheese tomato sauce appetizer idea and added chicken. This is restaurant-quality and will wow any dinner guest!

Yield 4

Number Of Ingredients 15

1 (14 ounce) can diced tomatoes with basil, garlic, and oregano - drained
2 tablespoons extra-virgin olive oil
½ onion, chopped
3 cloves garlic, minced
2 tablespoons tomato paste
2 tablespoons chopped fresh thyme
½ teaspoon white sugar
¼ teaspoon salt
4 skinless, boneless chicken breast halves
1 (4 ounce) log goat cheese, crumbled
2 green onions, diced
2 tablespoons chopped fresh thyme
½ teaspoon ground black pepper
2 tablespoons butter
1 teaspoon extra-virgin olive oil

Steps:

  • Place tomatoes in a shallow dish; crush with a potato masher or by hand.
  • Heat 2 tablespoons oil in a saucepan over medium heat. Add onion; cook and stir until softened and translucent, 3 to 5 minutes. Add garlic; cook until fragrant, about 1 minute. Cover and simmer until chicken is longer pink in the center and the juices run clear, 5 to 7 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

  • Combine all of the marinade ingredients in a blender (I put mine in a cup and used my immersion blender) and blend until ingredients are well combined. Transfer the blended marinade to a gallon Ziploc bag and set aside.
  • Place the chicken breasts on a cutting board. Using a sharp knife, slice the breasts from the side (creating a top and bottom) almost all the way through (we’re doing this before marinating so we don’t have to cut slippery marinated breasts). Add the chicken to the bag and seal. Use your hands to massage the chicken through the bag and make sure the breasts are evenly coated with marinade. Place the bag in your refrigerator and allow the chicken to marinate for 6-10 hours, turning the bag once or twice if possible to make sure the chicken is evenly coated by the marinade.
  • When the chicken is done marinating, pre-heat your oven to 400 degrees and line a baking sheet with parchment paper. Remove the chicken breasts from the marinade and transfer to the baking sheet. Open each breast at the slit and spread one ounce of the goat cheese across the bottom inside surface of each breast. Sprinkle the sliced basil over top of the goat cheese in each breast and follow with the chopped apricots. Close the breast, folding the top half back over the apricots and cheese.
  • Place the baking sheet of breasts into the pre-heated oven and bake for 30-35 minutes until chicken is cooked through. Serve warm.

GOAT CHEESE RECIPES THAT GO BEYOND SALADS - GREATIST

From greatist.com
Estimated Reading Time 6 mins
  • Grilled Peach Salad With Warm Goat Cheese. Peaches and goat cheese are a popular combo, but with grilled fruit and breaded, pan-cooked cheese, this salad takes the duo to new levels.
  • Fig, Mint, and Goat Cheese Salad. Naturally sweet and packed with fiber and antioxidants, fresh figs are awesome, but they may not be a staple on your grocery list—until you try this salad.
  • Pea Shoot Salad With Shrimp, Goat Cheese, and Citrus Vinaigrette. The addition of shrimp provides enough protein for this salad to be a filling starter or even a light meal on its own.
  • Watermelon Salad With Goat Cheese, Watercress, and Mint. You’ve probably heard of salads that pair watermelon with feta, but this recipe shows how the goat variety can work just as well.
  • Artichoke, Bean, and Goat Cheese Salad. Bookmark this one for springtime. With goat cheese topping a plate of seasonal ingredients such as fresh asparagus and green beans, plus arugula and mint, this salad is way better than chewing on a pile of kale.
  • Roasted Beet and Goat Cheese Salad. A side salad can be so much more than a plate of mixed greens. This one, made with heart-healthy, inflammation-fighting red beets; crunchy, brain-boosting walnuts; and creamy goat cheese for protein, looks good, tastes good, and is super nutritious.
  • Creamy Goat Cheese Greek Zoodle Salad. Stirring goat cheese into the lemony, olive oil-based dressing makes the zucchini noodles super creamy without mayonnaise or other bottled condiments.
  • Zucchini Goat Cheese Stacks With Mint, Pine Nuts, and Crispy Prosciutto. This appetizer looks impressive but is actually really easy to put together, since it’s just a simple matter of layering ingredients.
  • Goat Cheese and Sun-Dried Tomato Crostini. You can’t beat the combo of cheese and bread, and this appetizer serves it up right with creamy goat cheese slathered onto a thin slice of super-crunchy Italian bread.
