1 ¼ cups vegetable oil
3 eggs, lightly beaten
3 cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon baking soda

2 cups peeled, pitted, and chopped peaches
⅔ cup brown sugar
⅔ cup all-purpose flour
¼ cup butter, softened
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease 16 muffin cups or line with paper liners.
  • Beat white sugar, vegetable oil, and eggs together in a bowl using an electric mixer on medium until creamy. Mix 3 cups flour, 1 teaspoon cinnamon, baking soda, and salt together in a large bowl. Gradually beat flour mixture into egg mixture until batter is just combined; fold in peaches. Spoon batter into prepared muffin cups.
  • Mix brown sugar, 2/3 cups flour, butter, and 1 teaspoon cinnamon together in a bowl until crumbly; sprinkle over batter.
  • Bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean, 20 to 25 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

1/3 cup (67g) packed light or dark brown sugar
1 Tablespoon (15g) granulated sugar
1/2 teaspoon ground cinnamon
1/4 cup (60g) unsalted butter, melted
2/3 cup (84g) all-purpose flour (spoon & leveled)
1/2 cup (115g) unsalted butter, softened to room temperature
1/2 cup (100g) packed light or dark brown sugar
1/4 cup (50g) granulated sugar
2 large eggs, room temperature
1/2 cup (120g) yogurt or sour cream, at room temperature*
2 teaspoons pure vanilla extract
1 and 3/4 cups (219g) all-purpose flour (spoon & leveled)
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/8 teaspoon ground allspice
1/2 teaspoon salt
2 Tablespoons (30ml) milk, at room temperature
1 and 3/4 cups (about 320g) peeled, chopped peaches (about 3 peaches)*
1 cup (120g) confectioners' sugar
3 Tablespoons (45ml) heavy cream (or milk for a thinner consistency)
1/2 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 425°F (218°C). Spray a 12-count muffin pan with nonstick spray or line with cupcake liners. Set aside.
  • Mix the brown sugar, granulated sugar, cinnamon, and melted butter together in a small bowl until combined. Add the flour and use a fork to gently mix until crumbs form. Don't over-mix into a paste. Just mix until it is crumbly. Set aside.
  • Whisk the flour, baking soda, baking powder, cinnamon, allspice, and salt together in a large bowl. Set aside.
  • Using a handheld or stand mixer fitted with a paddle attachment, beat the butter and both sugars together on high speed until smooth and creamy, about 2 minutes. Scrape down the sides and bottom of the bowl as needed. Add the eggs, yogurt or sour cream, and vanilla extract. Beat on medium speed for 1 minute, then turn up to high speed until the mixture is combined and mostly creamy. (It's ok if it appears somewhat curdled.) Scrape down the sides and bottom of the bowl as needed. With the mixer running on low speed, add the dry ingredients and milk into the wet ingredients and beat until no flour pockets remain. Fold in the chopped peaches.
  • Spoon the batter evenly into each cup or liner, filling each all the way to the top. Spoon crumb topping on each, gently pressing it down so it sticks.
  • Bake for 5 minutes at 425°F; then, without opening the oven, reduce the oven temperature to 350°F (177°C). Bake for an additional 16-19 minutes or until a toothpick inserted in the center comes out clean. The total time these muffins take in the oven is about 21-24 minutes. Allow the muffins to cool for 5 minutes in the muffin pan, then transfer to a wire rack to continue cooling. When warm, the muffins are quite fragile because of the wet peaches. Let them cool for at least 15 minutes before unwrapping and eating.
  • Whisk all of the icing ingredients together and drizzle over warm or cooled muffins.
  • Iced or plain muffins stay fresh covered at room temperature for a few days or in the refrigerator for up to 1 week.

1 1/4 cups chopped peaches (from 1 large or 2 small), plus very thin slices for tops (optional)
Fine sanding sugar, for sprinkling (optional)

Steps:

  • Preheat oven to 350 degrees. Line a standard 12-cup muffin tin with baking cups. In a medium bowl, whisk together flour, baking powder, and salt. In a separate bowl, whisk together sugar, eggs, milk, and butter. Stir wet ingredients into dry ingredients, until just combined. Fold in peaches.

5 small/medium peaches (pitted and skin removed, divided)
1.75 cups white whole wheat flour
½ cup light brown sugar
1 teaspoon baking soda
1/8 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
2-3 tablespoons water
2 large eggs
1/2 cup honey
1/2 cups unsweetened, plain almond milk (unsweetened)
2 teaspoons vanilla extract
2 tablespoons melted coconut oil

Steps:

  • First, preheat the oven to 350ºF and line a nonstick muffin tin muffin lines. Lightly spray with coconut oil cooking spray.
  • Prepare the peaches by slicing them in half. Remove the pits and skin. Dice one of the peaches into small chunks and place the chunks into a medium bowl. Set the other 4 peaches aside.
  • Add the other dry ingredients to the medium bowl and mix to combine.
  • To prepare the peach puree, place the 4 other pitted and skinned peaches into a high speed blender. Add water and blend until smooth. If it needs more moisture, add more water. Then, measure out 1 cup of peach puree.
  • Add the 1 cup of peach puree to the bowl with dry ingredients.
  • Then, add the rest of the wet ingredients (minus the melted coconut oil) and whisk until combined.
  • Finally, add in melted coconut oil and mix one final time, making sure everything is thoroughly combined.
  • Transfer batter into muffin tin by filling each muffin about 3/4 of the way full or even close to the top. Option to sprinkle on optional nuts or rolled oats for texture.
  • Then, bake at 350ºF for 18-20 minutes or until muffins are fully cooked in the middle.

1 Cup (200 g) Granulated Sugar
4 tsp Baking Powder
2 tsp Ground Cinnamon
1/2 tsp Ground Cloves

2/3 Cup (166 ml) Coconut Oil
2 Large Egg
1 Cup (250 ml) Whole Milk

1 large peach (peeled, remove pit and chopped into chunks)
1 large peach ( pit removed and sliced)
1 Tbsp Sparkling Sugar

  • Preheat oven to 350 F (176 C) and line a 6 muffin tray with paper cups.
  • In a medium bowl whisk together dry ingredients.
  • Stir together wet ingredients (except peaches) in a separate smaller bowl.

  • Remove from oven, lay peach slices across the tops. Press very gently to stick to batter.
  • Transfer muffin tray back to the oven and continue baking for an additional 15-20 minutes or until toothpick inserted into center comes out clean.
  • Let muffins cool in tin for 10 minutes.

  • Preheat oven to 350°F.
  • Mix together dry ingredients, stir in oats and peaches.
  • Mix together eggs, oil and milk, stir into flour and mix gently just until flour is incorporated; don't over mix lumpy is ok.
  • Pour into greased muffin cups - I dislike muffin papers - don't grease if you use them.
  • Bake 15- 18 minutes until done and muffin springs bake when lightly touched.
  • Note: Whole wheat pastry flour is easily found in most health food stores and some grocers, King Arthur White Wheat Flour is also good. Both of these give your muffins a lighter texture while still providing good nutrition.
  • If using blueberries use about 1 1/2 cups.

few drops of almond extract
25g butter , melted
100g self-raising flour
25g ground almonds
2small peaches
2 tsp peach conserve or apricot jam
1 tbsp flaked almonds
half-fat crème fraîche , to serve

Steps:

  • Preheat oven to 220C/fan 200C/gas 7. In a large bowl, use a hand whisk to mix the eggs, sugar and almond extract together for a minute until foamy. Pour in the melted butter and continue to beat until combined. Gently fold in the flour, ground almonds and a pinch of salt.
  • Halve, stone and slice the peaches. Divide muffin mixture between 6 holes of a non-stick muffin tin. Top each with a blob of conserve or jam and arrange a few slices of peach on top. Steps:

  • Preheat oven to 350 degrees F. Lightly grease a 12-cup muffin tin. Melt butter in a saucepan over low heat and set aside. Mix flour, baking powder and salt in medium bowl. In another bowl, whisk the egg, then add the sugar. Whisk until thick and thoroughly mixed. Continue to whisk, adding the milk and melted butter. Add the sour cream and stir to combine. Fold the egg mixture into the flour mixture until well combined. Add the chopped peaches and stir until just combined.
  • Drop tablespoons of the batter into the muffin tins until half full. Bake for 35 minutes or until a toothpick inserted into a muffin comes out clean.
