SOPA DE ALBONDIGAS
This recipe, which I found in an old Sunset cookbook, is the only one I've found that's as good as our favorite little family-owned Mexican restaurant. . .

Steps:
- In a large saucepan cook onion and garlic in hot oil until onion is tender but not brown.
- Stir in water, broth and tomato paste.
- Bring to a boil; add potatoes and carrots.
- Simmer 5 minutes.
- Meanwhile combine egg, cilantro or parsley, salt, oregano and pepper.
- Add ground beef and rice and mix well.
- Form into 1-inch meatballs.
- Add, a few at a time, to the simmering soup.
- When all meatballs are added, bring soup back to boiling.
- Reduce heat and simmer about 30 minutes, or until meatballs and vegetables are done.

Steps:
- In a large heavy pot, melt butter and sauté the garlic and onions until translucent, about 3 minutes.
- Add the corn kernels, chiles, and zucchini and cook for two more minutes.
- Stir in the mushrooms and squash blossoms and continue to cook, about 5 minutes.
- Add chicken broth and bring to a boil.
- Lower heat and simmer and additional 10 to 12 minutes.
- Adjust salt to taste.
- Serve with a tortilla squares and a spoonful of creme frâiche or heavy cream.

- Calienta el aceite en una cacerola pesada de tamaño grande a fuego medio. Agrega la cebolla y el ajo; cocínalos, mientras los revuelves, durante 4 minutos o hasta que estén tiernos.
- Agrega la calabaza y el caldo. Haz que hierva. Reduce el fuego a bajo; cocina estos ingredientes durante 40 minutos.
- Vierte la sopa por tandas dentro del vaso de la licuadora; pon la tapa. Bátela hasta obtener una consistencia homogénea. A cucharones, coloca la sopa dentro de 7 tazones individuales. Completa cada una de las porciones con la crema agria y el tocino desmenuzado. Acompáñala con galletas RITZ Crackers, si así lo deseas.

CALABAZA SOUP WITH CINNAMON CREME FRAICHE: SOPA DE CALABAZA CON CANELA CREMA FRESCA
Steps:
- Preheat oven to 400 degrees F. In a small saute pan toast the cumin, coriander, chile, and clove for 3 minutes over medium heat. When the spices have begun to release their aroma, add them to a large mixing bowl with the panela and olive oil, mix well with a whisk to break up any clumps of spices.
- Add the diced and peeled calabaza and mix well to coat. Pour the calabaza onto a large sheet tray and place in the oven to roast until the calabaza has softened and caramelized, about 30 minutes.
- While the calabaza is in the oven, heat 1 tablespoon of olive oil in a large saucepan, when the oil begins to smoke add the onion and garlic and saute for around 5 minutes.
- When the onion has become translucent add the calabaza and chicken stock and cook at a gentle simmer for 15 minutes, puree the mixture with a hand held blender, add the heavy cream, and simmer for another 5 minutes, season with salt and pepper and reserve in a warm place.
- In a small bowl combine the creme fraiche and canela and mix well. To serve, ladle the soup into a large bowl and finish with a dollop of the canela-creme fraiche.

- Pela y limpia la calabaza. Si ya la has comprado en bolsa y limpia, puedes saltarte esta parte. Córtala en trocitos pequeños para que sea más fácil de cocinar.
- Pela y limpia el puerro. Quítale la parte verde, pues solo utilizarás la zona de la cabeza y la parte blanca. Corta en rodajas.
- Coloca el aceite de oliva en una cazuela. Agrega primero el puerro y déjalo sofreír un par de minutos a fuego lento.
