WINONA'S PERFECT GOLDEN FRY BATTER
This is the recipe my Mom has used for many years. We have an annual shrimp fry, and this is the perfect batter. Veggies, chicken, and even dill pickle slices are great using this fry batter!

Steps:
- Stir oil into the flour.
- Add milk and egg, whipping with whisk until smooth.
- Mixture should have the consistency of heavy cream. If it is too thick, add milk one tablespoon at a time until until it "looks right".
- The perfect breading with this batter is cracker meal. Just whirl the crackers in your processor until it is very fine.
BATTER FOR DEEP FRYING
This batter is awesome for deep frying anything! Onion rings, mushrooms, zucchini spears, fish, chicken, shrimp, etc. It is light and thin so you can actually still taste the food you deep fried. This recipe doesn't seem like it would make a lot, but it's so thin that it really covers a lot of food.

Steps:
- In a mixing bowl, combine the flour, cornstarch, baking powder, and salt.
- In a separate mixing bowl, combine 1/2 cup plus 1 Tablespoon water, 1 Tablespoon beaten egg, and oil.
- Add wet ingredients to dry and combine until mixed.
- Follow your deep fryer instructions for whatever veggie or meat you're frying.
- This batter is thin and delicious. Don't worry if it doesn't look like it's thick enough. It works great.

Steps:
- Mix eggs and flour together, then thin with water to a consistency just thick enough to adhere to the food you intend to fry.
- If necessary, rinse or dip food to be fried in water.
- Then dip food into seasoned flour, then into batter, then back into the seasoned flour.
- For shrimp, onion rings, or almost anything else, you'll be able to gauge doneness by the golden color of the batter; the trick is to not attempt to batter-fry too-large pieces of anything.
BEER BATTER FOR DEEP FRIED VEGGIES 'N' THINGS
I developed this recipe in 1982 and published it in my cookbook in 1996. It has been a favorite with many who have tried it.

Steps:
- In a deep fryer, add oil as per directions for your deep fryer and heat to 375°F.
- In a large mixing bowl, add onion soup mix, flour, baking powder, eggs and mustard and whisk until smooth and well blended.
- Add beer and mix with a spoon to blend.
- Let batter rest for about 10 minutes before using.
- Prepare vegetables, rinse and pat dry with paper towels.
- Dip veggies into batter, drop into hot oil in batches and deep fry until golden brown, turning at least once.
- When done, remove and place on paper towelling to absorb excess oil.
- Serve hot with your favorite dipping sauce or Uncle Bill's Garden Dip.

GLUTEN FREE CHINESE FRY BATTER
My son has Celiac, and I developed this after talking with the Chef at a local Chinese resturant, who likes to cook Gluten Free. It works well with shrimp, vegetables, fish, pork and my favorite.. chicken. Will fry the chicken pieces and then stir fry with vegies and spicy sauce.

Steps:
- Take the first 4 ingredients and mix in a bowl. Next beat the Egg and add it to the Club Soda. Pour the Egg mix into the dry mix; add the Vanilla & Brown Sugar. Mix, adding more pure Club Soda until desired thickness.
- A thin batter is desirable if the protein is to be stir fried after cooking. A thick batter is desirable if the protein is served with a sauce.
- Dredge the protein in the Brown Rice Flour. Then dip it in the batter mix. Let excess fall off and then place in fryer.
