12 Medjool dates
4oz soft goat cheese (chevre)
24 raw unsalted almonds
Balsamic vinegar

Steps:

  • Preheat the oven to 350°F. Slice each date in half, lengthwise, and remove the pit and stem.
  • Set out a 9x13" baking sheet. Fill each date with about ½ teaspoon of goat cheese and press one almond into each.
  • Bake in the oven for approximately 10 minutes, to warm through.
  • Finish by drizzling the stuffed dates with a good quality, aged balsamic vinegar.
  • If your vinegar is thin, reduce it in a saucepan over medium to high heat for 10-15 minutes to thicken it. Let cool before drizzling.
  • Serve at room temperature or slightly warmed.

4 ounces cream cheese, at room temperature
1/4 cup grated parmesan cheese
1/4 cup extra-virgin olive oil, plus more for brushing
Freshly ground pepper
8 small cocktail tomatoes (about 10 ounces), quartered
2 tablespoons chopped fresh chives
2 teaspoons balsamic vinegar
1 clove garlic, finely chopped
Kosher salt
Toasted baguette slices, for serving

Steps:

  • Preheat the oven to 400 degrees F. Combine the goat cheese, cream cheese, parmesan and 2 tablespoons olive oil in a food processor and season with pepper; puree until smooth. Brush a 1-quart baking dish with olive oil, then spread the cheese mixture in the dish, mounding it slightly higher around the edge than in the middle. Bake until golden and heated through, about 15 minutes.
  • Meanwhile, combine the tomatoes, chives, vinegar, garlic, the remaining 2 tablespoons olive oil and 1/2 teaspoon salt in a medium bowl. Spoon the tomato mixture on top of the dip. Serve with baguette slices.

Steps:

  • Put the goat cheese log on a serving plate. Score it lengthwise and then a few times crosswise, to open it up a bit.
  • Whisk the dressing ingredients and pour over the goat cheese. Best to prepare this a half hour before serving so it softens a bit and absorbs the flavors of the dressing. Serve with crackers or sliced baguette. Enjoy!

Steps:

  • Place cheese in a small ovenproof dish, and bake at 325 degrees for 15 to 20 minutes until golden brown. Remove the dish from the oven, drizzle with olive oil, and garnish with fresh thyme (if desired) and whole pink peppercorns. Serve with sliced baguette or crackers.

  • Add the blueberries to a small saucepan over medium heat. Add the rosemary, honey, salt and balsamic vinegar. Cook over medium heat for 10 minutes, stirring occasionally.
  • Meanwhile, in a small bowl, beat the goat cheese and cream cheese together.
  • Spread the goat cheese mixture over a small plate and top with the blueberry mixture that has been allowed to cool for a few minutes.

1/4 cup olive oil

black pepper
4 oz goat cheese log ((1 cup))
2 tbsp panko bread crumbs
1 tsp dried tarragon
1 French baguette (sliced)

Steps:

  • Preheat the oven to 350°. Cut the top off the garlic heads so that the cloves are exposed. Place the heads in a small baking dish.
  • Drizzle 3 tablespoons of the oil over the tops, allowing it to sink in around the garlic papers. Season to taste with kosher salt and freshly ground pepper. Bake for 1 hour.
  • Meanwhile, prepare the goat cheese for baking. In another small baking dish, place the log of goat cheese. Drizzle the remaining tablespoon of oil over the cheese, rolling the log to coat.
  • In a small bowl, combine the bread crumbs, tarragon, and a little more freshly cracked pepper. Sprinkle the bread crumb mixture over all sides of the log, turning as necessary.
  • Bake cheese, uncovered for 30 minutes alongside the garlic.
  • The garlic cloves will practically pop out of their skins. Spread them on baguette slices along with some goat cheese.

12 ounces log of fresh mild goat cheese
1 (8 ounce) package cream cheese, softened at room temperature
6 sun-dried tomatoes, dry and not packed in oil
1/4 cup dry white wine
1/2 teaspoon dry basil
1 teaspoon minced garlic
1/4 teaspoon salt
1 dash white pepper
8 frozen puff pastry shells

Steps:

  • Soak the sundried tomatoes in the wine for 30 minutes or overnight for best results.
  • Mix the goat and cream cheeses together in a bowl, blending well.
  • Remove the sundried tomatoes, chop them fine, and discard the wine. Add to cheese mixture.
  • Add all other ingredients.
  • Mix very well until evenly blended.
  • Cover and refrigerate until ready to use.
  • To serve in a puff pastry shell, bake the shells according to the package instructions. Cool them to room temperature.
  • Place a scoop of the herbed goat cheese mix into each pastry shell.
  • Return the shells to the oven and bake at 350°F for 10 minutes to just warm them.
  • Best served warm with a knife to spread the herbed cheese onto pieces of the pastry.
