- Preheat the oven to 350°F. Slice each date in half, lengthwise, and remove the pit and stem.
- Set out a 9x13" baking sheet. Fill each date with about ½ teaspoon of goat cheese and press one almond into each.
- Bake in the oven for approximately 10 minutes, to warm through.
- Finish by drizzling the stuffed dates with a good quality, aged balsamic vinegar.
- If your vinegar is thin, reduce it in a saucepan over medium to high heat for 10-15 minutes to thicken it. Let cool before drizzling.
- Serve at room temperature or slightly warmed.

Brush a 1-quart baking dish with olive oil, then spread the cheese mixture in the dish, mounding it slightly higher around the edge than in the middle. Bake until golden and heated through, about 15 minutes.
- Meanwhile, combine the tomatoes, chives, vinegar, garlic, the remaining 2 tablespoons olive oil and 1/2 teaspoon salt in a medium bowl. Spoon the tomato mixture on top of the dip. Serve with baguette slices.

- Preheat the oven to 350°. Cut the top off the garlic heads so that the cloves are exposed. Place the heads in a small baking dish.
- Drizzle 3 tablespoons of the oil over the tops, allowing it to sink in around the garlic papers. Season to taste with kosher salt and freshly ground pepper. Bake for 1 hour.
- Meanwhile, prepare the goat cheese for baking. In another small baking dish, place the log of goat cheese. Drizzle the remaining tablespoon of oil over the cheese, rolling the log to coat.

- Mix the goat and cream cheeses together in a bowl, blending well.
