CHARRED COURGETTE, LEMON & GOAT'S CHEESE GALETTE



Charred courgette, lemon & goat's cheese galette image

Bake this galette for a veggie main course with the wow factor. The pastry has a lovely nutty flavour that pairs well with the creamy goat's cheese topping

110g unsalted butter
100g plain flour
100g wholemeal rye flour
1 tbsp lemon thyme or normal thyme, finely chopped
½ tsp fine sea salt
1 egg , lightly beaten
2 bunches of spring onions , kept whole, roots trimmed
2 courgettes , cut into strips about 5mm thick
5 tbsp mascarpone
150g soft goat's cheese
1 small lemon , zested
50g parmesan or vegetarian alternative, finely grated
pine nuts , toasted, and a drizzle of olive oil, to serve

Steps:

  • The night before you make the galette, wrap the butter and put it in the freezer. When you're ready to make the pastry, put the plain flour, rye flour, thyme and sea salt in a large mixing bowl. Take the butter out of the freezer and wrap one end in foil, then use this to hold it as you coarsely grate the butter into the flour mixture. Unwrap the last piece of butter and carefully grate that in as well. Roughly mix everything, then add 5-6 tbsp cold water and mix swiftly with a cutlery knife to combine, then use your hands to bring it together into a dough and knead briefly. Wrap and chill in the fridge for at least 1 hr. Will keep in the fridge for up to two days.
  • For the topping, heat a griddle pan or non-stick frying pan over a high heat until searing hot, then griddle the spring onions in two batches and on each side for 1-2 mins, or until you have achieved dark char marks. Set aside on a plate, then repeat with the courgette strips. You can do this the day before and keep the cooked vegetables in an airtight container overnight.
  • Mix the mascarpone and goat's cheese with the lemon zest and parmesan in a bowl until smooth. Season to taste and set aside.
  • Roll the pastry out between two pieces of baking parchment to a rectangle roughly 35 x 25cm. Peel off the top layer of parchment and spread the cheese mixture over the pastry, leaving a 3cm border. Top with the spring onions and brush the border with some of the beaten egg. Use the parchment underneath to slide the galette onto a baking sheet. Chill for 30 mins.
  • Heat the oven to 200C/180C fan/gas 6 and put another baking sheet inside to get hot. Brush the edges with more beaten egg, then slide the galette, still on its paper, onto the hot baking sheet. Bake for 30 mins, then top with the courgette and bake for a further 5 mins, or until the pastry is golden brown and crisp at the edges. Serve with a drizzle of olive oil and scatter over some pine nuts, if you like. Goes well with mint sauce.

1 (9 inch) frozen single pie crust, thawed
3 leeks - white and light green parts only, halved lengthwise, and sliced
3 eggs
½ cup heavy whipping cream
½ cup milk
2 tablespoons chopped fresh chives
¼ teaspoon ground nutmeg
¼ teaspoon salt
¼ teaspoon ground black pepper
2 ounces soft goat cheese, crumbled

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Prick pie crust all over with a fork; place on a baking sheet.
  • Bake in the preheated oven until lightly golden, about 15 minutes. Remove crust and set aside to cool slightly; reduce oven temperature to 375 degrees (190 degrees C).
  • Bring a large pot of water to a boil and simmer leeks just until tender, about 7 minutes; drain thoroughly.
  • Whisk eggs, heavy cream, milk, chives, nutmeg, salt, and black pepper together in a bowl. Spread leeks evenly over bottom of pie crust; dot with goat cheese. Pour egg mixture over leeks.
  • Bake in the preheated oven until puffed, lightly browned, and a sharp knife inserted near the center comes out clean, 40 to 50 minutes. Remove to cool until warm or room temperature before serving.

1 1/2 cups whole wheat pastry flour plus flour for rolling
3/4 teaspoon salt
4 ounces (1 stick) unsalted butter, in pieces
2 eggs, 1 separated
1 clove garlic, peeled
2 scallions, trimmed and coarsely chopped
1/4 cup flat-leaf parsley
12 ounces plain goat cheese
Ground black pepper
1/4 cup chopped walnuts

Steps:

  • Heat oven to 400. Place flour and salt in food processor and pulse briefly to mix. Add butter and pulse until butter is cut to pea-size. Separate one egg and mix yolk with 7 tablespoons cold water. Open food processor and drizzle over flour mixture. Pulse until dough starts to come together. Add an additional tablespoon water if needed.
  • Roll dough on floured surface to make a circle about 14 inches in diameter. Trim edges for a neat edge. Place pastry on a baking sheet lined with parchment.
  • Turn on food processor (I don't bother to wash it out) and drop garlic through feed tube to mince. Add scallions and parsley and process until finely minced. Beat together remaining egg white and whole egg; add to processor along with goat cheese. Process until smooth. Season liberally with pepper.
  • Spread filling in a 10-inch circle on pastry, leaving about a 2-inch border all around, then fold border over the edges of the filling, pleating it as you go. Scatter walnuts on top. Bake about 30 minutes, until filling is set and pastry is lightly browned. Serve hot or at room temperature.

1 tablespoon butter
2 cups sliced leeks (white and pale green parts only)
2 tablespoons chopped fresh marjoram or 1 1/2 teaspoons dried
1 egg, beaten to blend
1 10-ounce tube refrigerated pizza crust dough
4 ounces soft fresh goat cheese (such as Montrachet), crumbled

Steps:

  • Position rack in top third of oven; preheat to 450°F. Heat wine and butter in heavy medium skillet over medium-low heat until butter melts. Add leeks. Cover; cook until leeks are crisp-tender, about 4 minutes. Remove from heat. Mix in marjoram. Reserve 2 teaspoons egg; stir remaining egg into leek mixture. Meanwhile, unroll pizza dough on lightly floured baking sheet. Stretch or pull dough to 13 x 10-inch rectangle. Spread leek mixture over dough, leaving 1-inch border on all sides. Sprinkle cheese and pepper over filling. Fold 1-inch border in over filling. Brush folded edge with reserved 2 teaspoons egg.
  • Bake galette until crust is golden brown, about 14 minutes. Cut galette into 4 pieces and serve warm.

1 cup chopped green onions
2 cloves garlic, minced
1 (5 ounce) creamy goat cheese log
½ cup grated Parmesan cheese
1 pinch cayenne pepper, or more to taste
2 sheets frozen puff pastry, thawed
½ pound zucchini, thinly sliced
½ pound roma tomatoes, thinly sliced
salt and ground black pepper to taste
1 teaspoon olive oil, or as needed
2 tablespoons thinly sliced basil leaves

Steps:

  • Heat 2 tablespoons olive oil in a skillet over medium heat; cook and stir green onions in the hot oil until softened, about 3 minutes. Add garlic; cook until fragrant, about 1 minute. Remove from heat.
  • Combine goat cheese, Parmesan cheese, and cayenne pepper in a small bowl; stir with a fork until blended.

The recipe is from America's Test Kitchen, with some minor modifications made by me (highlighted in italics). Goat cheese should be fairly easy to find in any decent supermarket. I found the best value for it at a warehouse club, where they were charging less for a pound of it than a normal grocery store charged for half the amount. Make sure to wash leeks thoroughly, as they can be gritty.

4 ounces mild goat cheese, crumbled
1 (9 inch) partially baked pie crusts, baked until light golden brown, 5 to 6 minutes (warm)

Steps:

  • Adjust oven rack to center position and heat oven to 375 degrees.
  • Sauté white parts leeks in butter over medium heat until soft, 10-15 minutes.
  • Meanwhile, whisk all remaining ingredients except goat cheese in medium bowl.
  • Spread goat cheese and leeks evenly over bottom of warm pie shell and set shell on oven rack.
  • Pour in custard mixture to 1/2-inch below crust rim.
  • Bake until lightly golden brown and a knife blade inserted about one inch from the edge comes out clean, and center feels set but soft like gelatin, 32 to 35 minutes.
  • Transfer quiche to rack to cool. Serve warm or at room temperature.

vegetable oil (for deep frying)
6 -8 ounces goat cheese

1/2 cup breadcrumbs
2 tablespoons extra virgin olive oil
salt and pepper
black olives (to garnish) (optional)
fresh basil, chopped for garnish (optional)

Steps:

  • Slice and discard the ends of the potatoes. Cut the potatoes into 3/4-inch slices. Cut a round hole out of the center of each slice, forming a sturdy ring with at least 1/2 inch border of potato around the hole. Heat about 2 inches of vegetable oil in a skillet to 300 degrees F. Fry the potato rings until light golden brown, about 5 minutes. Drain on paper towels and allow to cool enough to handle.
  • Fill the potato rings with the goat cheese and coat both sides with gread crumbs. Refrigerate for at least 2 hours or overnight. Heat the olive oil in a large skillet over moderate heat and saute the potato rings until golden brown on both sides, about 30 to 40 seconds per side.
  • Transfer to serving plats and season with salt and pepper. Garnish with olives and chopped basil if desired.

4 leeks , trimmed, halved and finely sliced
large knob of butter
2 tbsp thyme leaves and 4 nice sprigs
375g block puff pastry
4 slices goat's cheese (with a rind)
truffle oil or walnut oil (optional)

Steps:

  • Wash the leeks in a colander but don't worry about drying them as you want a bit of water clinging on. Heat the butter in a wide saucepan until sizzling, then add the wet leeks and thyme leaves plus salt and pepper. Sweat the leeks really gently for 20-25 mins until they have practically melted but not coloured, adding a little more butter if needed. Set aside and allow to cool.
  • Heat oven to 220C/200C fan/gas 7. Roll the pastry out to the thickness of a £1 coin. Cut out 4 saucer-size circles and place on a baking sheet. Spread the leeks over the circles leaving a slight border around the edge. Put a slice of goat's cheese in the middle of each tart and top with a thyme sprig. Pinch the pastry edge together to slightly encase the leeks, then bake the tarts for 25 mins until puffed up and golden. Serve hot and drizzled with flavoured oil if you have it.
