- Preheat oven to 350 degrees F ( 175 degrees C ). Line baking sheets with parchment paper.
- In a small bowl mix together the egg whites, sugar, and nuts until well blended. Drop dough by teaspoonfuls, three inches apart, onto the lined cookie sheets. Using the back of a spoon, dipped in water, flatten into rounds about 1.5 inches in diameter. Bake for 8 to 10 minutes in the preheated oven. Cookies should be lightly browned. Let cool slightly before removing from sheets. If the cookies are stuck, they need to be baked a little longer.
- In a plastic bowl, melt the chocolate in the microwave oven, stirring every 15 or 30 seconds until smooth and creamy. This can also be done over a double boiler. Spread the chocolate onto the flat side of a cookie and stick it together with the flat side of another cookie to make a sandwich until all the cookies are used up.

Steps:
- Make the filling: In a large bowl, combine the nuts with the butter, rose water, orange blossom water, sugar, cinnamon and cloves; stir to thoroughly coat the nuts. Set aside.
- Make the dough: In a large bowl, combine the semolina, farina and flour. Sprinkle the mastic and mahlab over the dry ingredients. Make a well in the middle of the dry ingredients and add the yeast and sugar to the well. Add 3 tablespoons warm water to the yeast mixture and let sit until it begins to foam, about 1 minute. Pour in the milk and, with a fork, gradually mix the wet and dry ingredients together until a dough forms.
- Transfer the dough to a clean work surface and knead until it is pillow soft and workable. If the dough becomes too stiff to work with, gradually sprinkle in water to bring it to a workable consistency. Return the dough to the bowl and set aside on the counter for 1 hour, covering the bowl with a clean kitchen towel to prevent the dough from drying out as you shape the cookies.
- Preheat the oven to 370°F. Prepare two baking sheets with parchment paper.
- Place about 3 tablespoons dough in the palm of one hand and use the other palm to roll it into a ball. Make an indentation in the ball with your finger. Spoon 1 1/2 tablespoons of the nut mixture into the indentation, then bring the edges of the dough up around the filling. Pinch the edges all around to seal in the filling. Flip the cookie over into the other hand, seam-side down, and gently press until the seam side is flattened. Place the cookie on a prepared baking sheet and repeat with the remaining dough.
- Bake until the cookies are pale blond, 12 to 15 minutes. Transfer to a wire rack to cool. The cookies can be stored at room temperature for 2 days; they will keep in an airtight container in the refrigerator up to 2 weeks or in the freezer up to 3 months. Before serving, dust liberally with confectioners' sugar.
MAPLE WALNUT COOKIES
I have not tried this recipe. I'm posting this recipe for safe keeping. I got this recipe from Fruit Sweet And Sugar Free cookbook. Crunchy, buttery, and maple flavored, these exceptional maple walnut cookies or the delicious variations quickly become everyone's favorite.

- Preheat the oven to 350.
- Toast the walnuts in a preheated oven for 7-10 minutes, stirring occasionally. Let the nuts cool. Then process in a food processor, using the pulse action, until they are finely ground. Do not overprocess or you will end up with a paste.
- Cream together the butter and maple syrup. When light and fluffy, add the egg and beat well for 1 minute. Stir in the extracts, then the flour, and the finely ground nuts. Cover the dough and refrigerate it for 20 minutes to make it easier to handle.
- Preheat the oven to 350. Line baking sheets with baking paper.
- Using a #24 scoop (2 tablespoons) or a spoon, scoop out the dough and place the balls 1-inch apart on the baking sheets. With lightly moistened fingers, flattern each cookie to a thickness of 1/2 inch.
- Bake the cookies until golden brown, for 15-18 minutes on an insulated or double pan.
- Let the cookies cool on the pans before removing.
- Variations:
- Maple Almond: Substitute almonds for the walnuts.
- Maple Hazelnuts: Substitute hazelnuts for the walnuts.
- Maple Pecan: Substitute pecans for the walnuts.
- Almond: Substitute almonds for the walnuts and fruit sweeteners for all or part of the maple syrup.

- In a small bowl, combine flour, cocoa, and baking soda.
- In a large bowl, beat sugar, brown sugar, and butter until well blended.
- Blend in 1/4 cup peanut butter to mixture. Add vanilla and egg, beat well.
- Add flour mixture until blended. Set aside.
- In a small bowl, combine filling ingredients, blending well.
- Roll filling into 30 one inch balls.
- For each cookie, with floured hands shape 1 tbs dough around 1 peanut butter ball, covering completely.
- Place cookies 2 inches apart on an ungreased cookie sheet.
- Flatten with the bottom of a glass dipped in sugar.
- Bake at 375 degrees for 7 to 9 minutes or until set and slightly cracked.
- Cool on wire racks.
