GLUTEN-FREE WHOLE GRAIN OATMEAL COOKIES

3/4 cup sorghum flour ((3 ounces; 85 grams))
1/4 cup gluten-free oat flour ((3/4 ounce; 21 grams))
2 tablespoons ground flax ((2/3 ounce; 18 grams))
1 teaspoon salt
1 teaspoon baking powder
3/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
2 sticks butter, softened ((1 cup; 8 ounces; 226 grams))
1 cup dark brown sugar ((7 1/2 ounces; 212 grams))
1/2 cup turbinado sugar ((3 3/4 ounces; 110 grams))
1 large egg ((about 1 3/4 ounces; 50 grams, out of shell))
2 teaspoons vanilla extract
3 cups gluten-free oats ((10 1/2 ounces; 297 grams))
1 1/2 cups chocolate chips ((9 ounces; 255 grams))
1 cup raisins ((5 1/4 ounces; 148 grams))

Steps:

  • Adjust oven rack to middle position. Preheat oven to 325°F. Line two baking sheets with parchment paper. Set aside.
  • In medium bowl, whisk together sorghum flour, oat flour, ground flax, salt, baking powder, ground cinnamon, ground nutmeg, and ground cloves. In bowl of stand mixer fitted with paddle attachment, combine butter and sugars. Cream on medium speed until thick paste forms, about 2 minutes. Stop mixer and scrape down sides and bottom of bowl. Add egg and vanilla. Turn mixer on to medium speed and blend until light and fluffy, about 1 minute. Stop mixer. Scrape down bottom and side of mixer. Mix for 1 additional minute. Stop mixer. Add whisked dry ingredients and oats. Mix until thick dough forms, about 1 minute. Turn off mixer. Add chocolate chips. Turn mixer on to low. Mix until combined, about 30 seconds.
  • Using a tablespoon measure, drop heaping tablespoons of dough onto prepared baking sheet. Lightly press down dough with palm on your hand but don't flatten cookies. Bake 1 tray at a time until golden brown, about 20 minutes. Cool for five minutes on baking pan. Transfer cookies to wire rack to cool completely. Repeat, baking second batch on cool baking sheet, until all dough is used. Store cooled cookies in sealed container for up to 1 week.

  • Combine wet ingredients in mixing bowl. Add remaining ingredients in order listed; mix well.
  • Use a cookie scoop to drop onto parchment-lined baking sheet.
  • Bake at 375°F for 10 to 15 minutes or until browned.

Unlike many other oatmeal cookie recipes with refined sugars and flours, you won't find any of that nonsense here. Just old-fashioned oats, maple syrup, and loads of fiber. Oh yeah, and dark chocolate chips, which by the way are little antioxidant powerhouses. Scrumptious and entirely guilt free! Adding gluten-free brewer's yeast to this recipe makes for a great, nutrient-dense lactation cookie for new, nursing moms. Omit for a more classic oatmeal cookie. Store in an airtight container at room temperature, or freeze.

½ cup oat flour
3 tablespoons gluten-free brewer's yeast
2 tablespoons ground flaxseed meal
2 tablespoons psyllium husk powder
2 teaspoons ground cinnamon
1 cup coconut oil
¼ cup maple syrup
2 tablespoons unsulfured molasses
2 large eggs
1 teaspoon vanilla extract
1 teaspoon kosher salt
1 ½ cups dark chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a cookie sheet with parchment paper.
  • Whisk together oats, oat flour, brewers' yeast, flaxseed meal, psyllium husk powder, and cinnamon in a bowl.
  • Beat coconut oil, maple syrup, and molasses in a stand mixer fitted with the paddle attachment on medium-high speed until combined and light in color. Add eggs, vanilla, and salt; beat on medium speed, scraping the bowl and the beater often, until well mixed.
  • Add dry ingredients in several additions, beating on low speed until combined. Fold in chocolate chips until evenly dispersed in the dough.
  • Scoop evenly sized balls of cookie dough onto the prepared sheet, spacing them 2 inches apart. For thinner cookies, press down on each ball of dough with the palm of your hand.
  • Bake in the preheated oven until cookies are just beginning to brown around the edges, 8 to 10 minutes.
  • Cool on the baking sheet for 5 minutes before removing to a wire rack to cool completely.

WHOLE GRAIN 'STEEL-CUT' OATMEAL COOKIES

I just recently started eating Coach's 'steel-cut, cracked and toasted' Oats and it's got me hooked. It's nutty and full of flavor. The original recipe from the package the brown sugar is packed and the table salt is regular salt. Please note that I'm not sure how this will work with regular oatmeal. The number of cookies will depend on the size you make them. Okay, I bought another brand of 'steel-cut' oatmeal to see if there was a difference. There was enough difference in the texture, flavor, cook-time and overall quality (to me) that I recommend you use the Coach's brand for this recipe.

1 cup brown sugar
1/2 cup sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1 3/4 cups all-purpose flour
1/4 teaspoon sea salt
2 eggs
2 teaspoons pure vanilla extract
2 teaspoons ground cinnamon
2 cups coach's 'steel-cut' oats
3/4 cup pecans, chopped
3/4 cup dried cranberries (optional)

Steps:

  • Preheat oven to 375 degrees.
  • Cream butter.
  • Add both sugars, salt, baking powder, baking soda, eggs, vanilla, cinnamon and half the flour. Beat to combine.
  • Beat in the remaining flour.
  • Add oats, pecans and cranraisins.
  • Drop by rounded teaspoon on ungreased cookie sheet.
  • Bake at 375 degrees for 12-15 minutes or until edges are golden brown. Cool on wire rack.
