Crock Pot Garlic Lime Chicken - Chicken breasts simmered in an amazing garlic and lime mixture, and cooked to a tender perfection!

6 boneless skinless chicken breasts
salt and fresh ground pepper (, to taste)
4 large carrots (, cut into a few big pieces (optional))
1/4 cup lime juice ((about 2 to 3 whole limes))
3 tablespoons soy sauce or liquid aminos
1 tablespoon light worcestershire sauce
1 tablespoon rice vinegar
1 tablespoon sesame oil
2 to 3 garlic cloves (, minced)
2 tablespoons cornstarch
toasted sesame seeds (, for garnish (optional))
fresh cilantro (, for garnish (optional))
4 cups steamed broccoli florets ((optional))

Steps:

  • Season chicken breasts with salt and pepper and arrange on the bottom of your slow cooker insert.
  • Arrange carrots over the chicken. Set aside.
  • In a small mixing bowl combine lime juice, soy sauce, worcestershire sauce, rice vinegar, sesame oil, and garlic; whisk until thoroughly combined.
  • Pour over chicken and veggies; close with a lid.
  • Cook on HIGH for 3 to 4 hours or on LOW for 6 to 7 hours.
  • Spoon 2 tablespoons liquid from the slow cooker into a bowl and whisk cornstarch into the liquid until well combined.
  • Stir the cornstarch mixture back into the slow cooker.
  • Continue to cook on high until the sauce thickens, about 20 to 30 minutes.
  • Garnish chicken with toasted sesame seeds and cilantro.
  • Serve over rice with a side of steamed broccoli.

1 package (1 pound 4 ounces) bone-in skinless chicken thighs
1/4 cup fresh lime juice (2 limes)
1 1/2 cups Progresso™ chicken broth (from 32-ounce carton)
2 cloves garlic, finely chopped
1/2 teaspoon dried thyme leaves
1/4 teaspoon pepper
2 tablespoons butter or margarine
1 cup uncooked instant rice
Chopped fresh parsley, if desired

Steps:

  • Place chicken in 3- to 4-quart slow cooker. Add remaining ingredients except rice and parsley.
  • Cover and cook on Low heat setting 8 to 10 hours. During last 15 minutes of cooking, stir in rice.
  • Remove chicken from cooker. Place cooked rice on each serving plate. Top with chicken. Spoon any remaining juices over chicken. Garnish with parsley.

6 chicken breasts
1/2 cup soy sauce
1/3 cup lime juice
1 tablespoon worchestershire sauce
2 garlic cloves, minced
1/2 teaspoon dry mustard
1/2 teaspoon ground pepper

Steps:

  • Place chicken in slow cooker.
  • Combine remaining ingredients and pour over chicken.
  • Cook on Low for 6-8 hours. Be careful not to overcook.

1/4 teaspoon salt
3/4 teaspoon pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon thyme
6 boneless skinless chicken breast halves
2 tablespoons butter
2 tablespoons olive oil
4 tablespoons lime juice
1/2 cup chicken broth

Steps:

  • On a plate, mix together first seven ingredients (through thyme). Sprinkle mixture on both sides of chicken breasts.
  • In a skillet heat butter and olive oil together over medium-high heat. Saute chicken until golden brown (about 5 minutes on each side) and done through.
  • Remove chicken and add lime juice and chicken broth to the pan, whisking up the browned bits off the bottom of the pan. Keep cooking until sauce has reduced slightly. Add chicken back to the pan to thoroughly cover and serve.
