GLUTEN FREE VEGAN BREAD (WHOLEMEAL) - WITH OAT FLOUR
Perfect gluten free vegan bread (wholemeal) made with oat and other gluten free flours. This easy-to-make loaf stays fresh for days, makes amazing sandwiches, toasts beautifully and tastes delicious. Can be made in a bread tin, shaped into rolls and will hold its shape proved in a basket before baking. - Mix together all the dry ingredients EXCEPT the YEAST (flours, oat, flax, psyllium husk, salt and bicarbonate of soda) in an airtight container and shake vigorously to blend.
- Weigh the yeast into a separate small container (airtight if not making the bread immediately) and set to one side. Keep near the flour blend so that you don't forget to use it.
- Very lightly grease the inside of a 1 pound non-stick bread tin using either a little dairy-free spread or oil, base line the tin with a piece of baking paper (cut to size) and then gently coat the sides of the tin with a light dusting of brown rice flour/buckwheat flour/sorghum flour (put a teaspoon of flour in the tin and gently turn from side to side until coated. Tip out any excess).
- In a large bowl, lightly beat together the oil, maple/agave syrup and lemon juice to combine.
- Weigh and mix the milk with the boiling water in a jug. It should be hand hot (if you are unsure about temperature, use a cooking thermometer which should read about 40 C).
- Add the milk liquid to the bowl with the other wet ingredients and briefly whisk through to combine.
- Add the yeast to the flour blend and mix.
- Whilst the liquid is still warm, add the dry ingredients to the bowl and using either a mixer with a dough hook, or by hand with a silicone/wooden spoon, beat until well blended, thick and the dough holds its shape if moulded into a ball (this will require about 5 minutes of solid beating).
- Transfer the batter to the baking tin and push down so that it is evenly distributed.
- Use the back of a spoon (dipped in cold water) to smooth the top.
- Place the dough in a warm place to rise for about 40 to 60 minutes (or until about doubled in size) - I place the tin on a folded tea towel in the oven at 65 to 70C for a perfect prove (the bread should rise about 2 to 3 cm above the tin with a gently rounded top).
- Pre-heat the oven to 180 C/350 F/Gas 4. Place a small pyrex bowl or tray with hot water (a couple of centimetres deep) at the bottom of the oven to create steam during the baking process. (This is more important when baking rolls or a moulded 'boule' shaped loaf). For 'boule' or loaf not baked in a tin, see NOTES below
- When the dough has risen, bake for about 20 to 25 minutes (1 pound loaf) until nicely browned (this will be increased to approx 35 to 40 mins for a 2 pound loaf).
- Remove from the oven and take out of the tin (you may need to gently release the sides using a spatula or flat knife). Leave to cool on a wire rack.
- As with all bread, this loaf is easiest to cut when left to cool completely. Can be eaten fresh and warm, but texture improves if not steaming hot.
- Wrap in clingfilm or put in a sealable bag to store and keep fresh. Store at room temperature.

- Preheat the oven to 350ºF. Liberally grease a 8X4" loaf pan using non-stick cooking spray. Set aside.
- Make the oat flour by placing 2 ½ cups rolled oats in a high-powered blender or a food processor. Blend the oats until it turns into a fine, powdery flour, about 30 seconds - 1 minute.
- To the oat flour add the psyllium husk powder, baking powder, baking soda, salt, yogurt, milk, eggs, oil, and honey. Blend well, scraping down the sides halfway through. The batter will be thin.
- Add the remaining 1 cup oats to the blender. Pulse 2-3 times, until just combined but not finely ground.
- Pour the batter into the prepared loaf pan. If desired, sprinkle additional oats on top before baking.
- Bake for 50-55 minutes, rotating pan and loosely tenting foil over the top halfway through. For best results, insert an instant read thermometer in the bread to make sure the temperature is 200ºF. If you don't have a thermometer, use a long wooden skewer, making sure it comes out without wet dough.

GLUTEN-FREE OAT FLOUR BREAD
well i tried multiple kinds of over-priced bread from the store, and a few mediocre recipes. all in all i decided to make one up myself and this is what i came up with. it is pretty delicious, my husband will actually eat bread again, and the kids like it too. its best fresh, but still pretty good the day after, and it freezes well if freshly frozen.

Steps:
- mix yeast with 60 g of warm water and 1 tsp sugar. let sit until bubbly, about 10 minute.
- mix eggs, remaining 100g water, olive oil and cider vinegar with mixer.
- add yeast mixture.
- add dry ingredients and mix well, for about 2 minutes.
- pour into a bread (or loaf) pan, cover and allow to rise in a warm place until double in size (may take an hour or so, if warmer, may not take that long).
- preheat oven to 350.
- Bake at 350 for 50 minutes.
- ENJOY!

GLUTEN FREE OATMEAL BREAD
This is a very simple yeast bread recipe from Allergy Cooking With Ease, with no other flours than oat flour (grind oats in your blender). It turned out a little like a sponge bread in texture, but had a nice flavor and did not crumble when slicing. Has a bit of a sweet flavor (I used honey). I have tried a few gluten free breads, and this one turned out great on the first try. Didn't rise as much as I liked, but I'm wondering if that's because I used regular yeast, not quick-rise.

- Mix together the warm water, sugar or honey and yeast and let themixture stand for abotu 10 minutes or until foamy.
- Stir together the dry ingredients in a large stand mixer bowl; Add the yeast mixture and oil and beat the dough for 3 minutes at medium speed.
- Scrape the dough from the beaters and sides into the bottom of the bowl and cover the bowl with a towel.
- Let rise in a warm place for 1 to 1 1/2 hours.
- Beat the dough again for 3 minutes.
- Oil an 8x4-inch loaf pan and coat the inside with oatmeal. Put dough in the pan and allow to rise in a warm place for about 20 minutes, or unitl it barely doubles.
- Preheat oven to 350° F and bake the loaf for about 75 minutes, loosely covering with foil after the first 15 minutes to prevent excessive browning.

- Preheat oven to 375° Fahrenheit. Grease a loaf pan, or line with parchment paper, and set aside.
- In a large bowl, combine the dry ingredients: oat flour, rice or buckwheat flour, psyllium husk, baking powder, baking soda and sea salt. Stir briefly to mix.
- Pre-measure the liquid ingredients, so they're all ready (or combine them in a small bowl). Add the wet ingredients to dry ingredients: water, fat of choice, sweetener and vinegar. Scoop into prepared loaf pan and shape to be slightly mounded in the center.
