SAUSAGE, EGG AND KALE CASSEROLE

Sausage, Egg and Kale Casserole image

Finding a brunch dish that feeds a crowd can be a challenge, but this large-scale frittata does just that by layering sausage, kale and fontina with cream-thickened eggs. Use any fresh sausage you like (chorizo, merguez, or hot pork sausage work well), and swap in mild Swiss chard or peppery mustard greens in place of the kale. You can prepare this dish the night before serving by cooking through Step 5 and layering the sausage, vegetables and cheese in the baking dish. Let it warm up slightly at room temperature before adding the eggs, then bake as directed. Baking times will vary depending on how cold or warm the dish is, as well as its depth and ingredients, so keep an eye on the eggs; they should be just set in the center.

Time 1h

Yield 10 to 12 servings

Number Of Ingredients 12

Softened butter, for greasing the dish
6 teaspoons olive oil
3/4 pound fresh hot sausage, like Italian, chorizo or merguez, casings removed
1 large red onion (about 12 ounces), halved, then sliced lengthwise into 1/4-inch-thick wedges
Kosher salt and black pepper
4 cups torn kale leaves (about 3 ounces)
10 ounces grape tomatoes, halved crosswise
3/4 cup diced fontina (about 3 ounces)
12 large eggs
3/4 cup heavy cream or milk
1/2 cup grated Parmesan (about 1 ounce)
Aleppo pepper, for finishing (optional)

Steps:

  • Heat oven to 325 degrees. Generously butter a large 2 1/2-quart baking dish.
  • Heat 2 teaspoons olive oil in a large nonstick skillet over medium. Add sausage and cook, stirring to break it up, until lightly browned, 6 to 8 minutes. Transfer to the baking dish, spreading it in an even layer.
  • Add 2 teaspoons oil to the skillet and increase heat to medium-high. Add red onion, salt it lightly and cook, stirring frequently, until it starts to take on color, about 8 minutes. Reduce heat to medium-low and continue cooking until softened, 3 to 4 minutes. Transfer to the baking dish and arrange evenly on top of the sausage.
  • Add the remaining 2 teaspoons oil to the skillet and heat over medium. Add kale, season it lightly with salt and pepper, cover and cook, occasionally tossing with tongs until wilted, 2 to 3 minutes. Transfer to the baking dish and arrange evenly on top of the onions. Top with the grape tomatoes and fontina.
  • Whisk together the eggs and cream in a large bowl and season generously with salt and pepper. (If making ahead of time, wrap the baking dish and egg mixture separately and refrigerate until needed.)
  • Pour the egg mixture over the ingredients in the baking dish, and sprinkle with Parmesan. Bake until the eggs are just set in the middle, 25 to 30 minutes. (Increase the baking time by about 15 minutes if the components were refrigerated ahead of time.).
  • Broil until the top is lightly browned, 2 to 3 minutes. Sprinkle with Aleppo, if using.

CHEESY KALE AND MUSHROOM STRATA

Cheesy Kale and Mushroom Strata image

Don't have a cast-iron skillet? Cook the kale mixture in a stainless-steel one, then bake the strata in a 13x9" baking dish.

Yield 8 servings

Number Of Ingredients 14

13 oz. sourdough or country-style bread, cut into 1 1/2" pieces (about 7 cups)
2 Tbsp. extra-virgin olive oil
8 oz. crimini mushrooms, sliced 1/4" thick
2 garlic cloves, thinly sliced
1 tsp. kosher salt, plus more
1/2 tsp. freshly ground black pepper, plus more
2 Tbsp. unsalted butter, divided
3 leeks, white and pale green parts only, halved lengthwise, sliced crosswise 1/4" thick
1 bunch curly kale, ribs and stems removed, leaves torn into 2" pieces
8 large eggs
2 Tbsp. whole grain Dijon mustard
2 1/2 cups whole milk
5 1/2 oz. Gruyère or Comté cheese, coarsely grated, divided
2 oz. Parmesan, finely grated, divided

Steps:

  • Preheat oven to 350°F. Toast bread in a single layer on a rimmed baking sheet until beginning to dry out but not yet browned, 8-10 minutes.
  • Meanwhile, heat oil in a 12" cast-iron skillet over medium-high. Arrange mushrooms in a single layer and cook, undisturbed, until lightly browned, about 3 minutes. Add garlic, season generously with salt and pepper, and cook, tossing and reducing heat if needed, until mushrooms are golden brown all over, about 2 minutes. Push to one side and melt 1 Tbsp. butter in center of skillet. Add leeks and season with salt and pepper. Cook, stirring often and mixing into mushrooms, until softened, about 5 minutes. Add kale by the handful, tossing to wilt slightly after each addition, and cook, tossing often, until all of the kale is mostly wilted, about 4 minutes. Transfer kale mixture to a medium bowl. Let skillet cool slightly, then wipe out and coat with remaining 1 Tbsp. butter.
  • Whisk eggs, mustard, 1 tsp. salt, and 1/2 tsp. pepper in a large bowl until no streaks remain, then whisk in milk. Arrange half of bread in skillet. Cover with half of kale mixture, then top with half of Gruyère and half of Parmesan. Top with remaining bread and kale mixture; pour egg mixture over. Press down on strata with a spatula to help bread absorb egg mixture. Scatter remaining Gruyère and Parmesan over.
  • Bake strata until golden brown and no liquid seeps out when a knife is inserted into the center, 35-40 minutes. Let cool slightly before serving.
  • Do Ahead
  • Strata can be baked 3 days ahead. Let cool completely; cover and chill.

HOLIDAY SAUSAGE STRATA

Holiday Sausage Strata image

Provided by Jeff Mauro, host of Sandwich King

Time 9h15m

Yield 12 servings

Number Of Ingredients 10

1 pound breakfast or Italian sausage, removed from casing
4 tablespoons salted butter, at room temperature
14 to 16 slices (1/2-inch thick) French/Italian bread, left out overnight or toasted
12 ounces Gruyere, shredded
2 cups half-and-half
12 large eggs
1 tablespoon kosher salt
Cracked black pepper
3 cups broccoli florets with about 1 1/2 inches of stalk remaining
1 cup grated Parmesan

Steps:

  • In a skillet, cook the sausage over medium-high heat, crumbling it with a spoon, until mostly brown but still a little pink, about 5 minutes. Drain on a paper towel; reserve the sausage fat separately.
  • Butter both sides of the bread with the butter. Arrange half of the bread in 1 layer in a 9-by-13-inch baking dish. Top with half the sausage, followed by half the Gruyere. Repeat with another layer of the remaining bread, sausage and cheese.
  • In a bowl, whisk together the half-and-half, eggs, 2 teaspoons of the salt and some pepper. Pour the mixture over the layers of bread, sausage and cheese. Cover in plastic wrap and weigh down the strata with a couple sacks of rice/beans in a zipper top bag to compress it. Refrigerate overnight.
  • The morning of baking, remove the plastic wrap and weights. Preheat the oven to 325 degrees F.
  • Toss the broccoli with the reserved sausage fat, remaining 1 teaspoon salt and some pepper. Dot the top of the strata with the broccoli florets so the broccoli tops are still visible (to look like trees) but the stalks are submerged in the custard. Bake until the edges pull away from the dish and the center is puffed, about 45 minutes. Let rest for 5 minutes. Right before serving, sprinkle with the Parmesan to mimic snow on trees.

Time 9h40m

Yield 12 servings

Number Of Ingredients 12

16 ounces white mushrooms, halved
Olive oil, for drizzling and frying
Salt and freshly ground black pepper
2 cups whole milk
1/2 cup half-and-half
1/4 cup minced fresh oregano
12 large eggs
2 pounds breakfast sausage patties
1 large bunch regular kale, torn into pieces
Butter, for greasing the lasagna pan
1 loaf crusty French bread or ciabatta, cut into cubes
2 1/2 cups freshly grated Monterey Jack cheese

Steps:

  • Preheat the oven to 425 degrees F.
  • Put the mushrooms on a baking sheet, drizzle with olive oil and sprinkle with salt and pepper. Roast until golden brown, 15 to 20 minutes. Set aside.
  • Mix together the milk, half-and-half, oregano, eggs and some salt and pepper in a large pitcher or bowl. Set aside.
  • Set a large skillet over medium heat and add the sausage patties. Cook until golden brown, 4 to 5 minutes per side. Set aside to cool, then chop into cubes.
  • In the same skillet from the sausage, heat some olive oil over medium-high heat. Throw in the kale and cook until slightly wilted, 2 minutes.
  • Grease a lasagna pan with some butter. Layer half the bread, half the kale, half the mushrooms, half the sausage and half the cheese in the prepared pan. Repeat with the other half of the same ingredients, ending with the cheese. Slowly pour the egg mixture all over the top. Cover with plastic wrap and refrigerate overnight.
  • Twenty to thirty minutes before baking, remove the lasagna pan from the fridge. Preheat the oven to 350 degrees F.
  • Replace the plastic wrap on top of the strata with aluminum foil. Bake for 30 to 40 minutes, then remove the foil and continue to bake until the top is golden brown and slightly crisp, 10 to 15 minutes more (keep a close eye on it).
