Gluten-Free Banana Muffins with Chocolate Chips image

When life blesses you with overripe bananas, make these simple yet scrumptious Gluten-Free Banana Muffins with Chocolate Chips! Freezer-friendly, perfect for meal prep and they make a great addition to lunchboxes for kids and adults. Not only are these muffins gluten-free they can also be made dairy-free, egg-free, and therefore vegan-friendly, too.

Number Of Ingredients 9

1½ cups gluten-free flour such as Bob's Red Mill 1-to-1 Baking Flour (may substitute all-purpose flour if not gluten-free)
¼ cup organic brown sugar (may substitute coconut sugar)
1 teaspoon baking soda
½ teaspoon fine salt
3 medium ripe bananas (bananas with speckled black spots work best), about 1 heaping cup
2 large eggs** (see egg-free sub below)
¼ cup oil (avocado oil or olive oil)
1 teaspoon pure vanilla extract
1/2 cup chocolate chips plus extra for sprinkling on topping

Steps:

  • Preheat the oven to 375°F. Line a muffin tin with paper liners and spray each liner with cooking spray to prevent sticking. A silicone muffin pan works great.
  • In a bowl, combine the flour, sugar, baking soda, and salt. In a second bowl, mash the bananas. Add the eggs, oil, and vanilla; mix well.
  • Stir banana egg mixture into the dry ingredients just until moistened.
  • Fold in chocolate chips.
  • Fill each muffin well 1/2 full with batter.
  • Top each muffin with a few extra chocolate chips.
  • Bake at 375°F for 15-20 minutes or until a toothpick inserted in the center comes out clean. Time will vary depending on the kind of pan used.
  • Allow to cool for 5-10 minutes, then remove muffins from pan to a wire rack to cool completely.
  • Store in an airtight container on the counter for up to 5 days. Alternatively, store in an airtight container in the refrigerator for up to 10 days or freezer for up to 3 months.

1 cup gluten-free quick-cooking oats
¼ cup white sugar
2 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
1 egg
1 cup milk
⅓ cup applesauce
½ teaspoon vanilla extract
1 cup mashed banana

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a 12-cup muffin tin with parchment baking cups.
  • Combine flour, oats, sugar, baking powder, baking soda, and salt in a bowl.
  • Beat egg lightly in a large bowl. Stir in milk, applesauce, and vanilla extract. Add mashed banana and combine thoroughly. Stir flour mixture into the banana mixture until just combined. Divide batter evenly between the prepared muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, 18 to 20 minutes.

2/3 cup sugar
2 eggs
1/4 cup fat-free plain yogurt

1 teaspoon vanilla extract
1/2 cup millet flour
1/2 cup sorghum flour
1/2 cup tapioca flour
1 tablespoon ground flaxseed
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon xanthan gum
1/3 cup chopped walnuts

Steps:

  • In a large bowl, beat the first six ingredients until well blended. In a large bowl, combine the flours, flax, baking powder, baking soda and xanthan gum; gradually beat into banana mixture until blended. Stir in walnuts., Coat muffin cups with cooking spray or use paper liners; fill three-fourths full with batter. Bake at 350° for 18-22 minutes or until a toothpick inserted in the center comes out clean., Cool for 5 minutes before removing from pan to a wire rack.

75 grams (approximately 1/2 cup) buckwheat flour
75 grams (approximately 3/4 cup) almond powder (also known as almond flour)
140 grams (approximately 1 cup) whole grain or all-purpose gluten free flour mix
32 grams (approximately 6 tablespoons) dark cocoa powder
10 grams (2 teaspoons) baking powder
5 grams (1 teaspoon) baking soda
3 1/2 grams (rounded 1/2 teaspoon) salt
100 grams (approximately 1/2 cup) raw brown sugar or packed light brown sugar
2 eggs
75 grams (1/3 cup) canola or grape seed oil
120 grams (1/2 cup) plain low-fat yogurt or buttermilk
5 grams (1 teaspoon) vanilla extract
330 grams ripe bananas (peeled weight), about 3 medium, mashed (1 1/4 cups)
115 grams (about 2/3 cup) semi-sweet or bittersweet chocolate chips or chopped bittersweet chocolate

Steps:

  • Preheat the oven to 350 degrees. Oil or butter muffin tins. Sift the dry ingredients into a large bowl. Pour in any bits that remain in the sifter.
  • In another large bowl or in the bowl of a standing mixer fitted with the whip attachment beat together the oil and sugar until creamy. Beat in the eggs and beat until incorporated, then beat in the yogurt or buttermilk, the vanilla and the mashed bananas. Add the dry ingredients and mix at low speed or whisk gently until combined. If using a mixer, scrape down the sides of the bowl and the beaters. Fold in the chocolate chips.
  • Using a spoon or ice cream scoop, fill muffin cups to the top. Place in the oven and bake 30 minutes, until a muffin springs back lightly when touched. Remove from the heat and if the muffins come out of the tins easily, remove from the tins and place on a rack. I like these best served warm, but if they don't release easily allow them to cool, then remove from the tins.

1 1/4 cups whole wheat pastry flour
1/4 oat bran
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1/4 cup oats
1/4 cup buttermilk
1 1/2 cups mashed bananas (use very ripe fruit)
1 egg
1/4 cup vegetable oil
1/3 cup sugar
1 teaspoon vanilla
2 teaspoons cinnamon
1/4 teaspoon nutmeg

Steps:

  • Preheat the oven to 350 degrees.
  • Combine the oats and buttermilk in a small bowl; let these sit while you prepare the other ingredients.
  • Mix the dry ingredients (including the cinnamon and nutmeg) together in a medium mixing bowl.
  • Mash the banana until it's nearly smooth--measure once the fruit is mashed, of course.
  • Add the egg, oil, sugar, and vanilla.
  • After stirring those together, add in the oat-buttermilk mixture.
  • Add the wet ingredients into the dry, stirring just until the dry ingredients are absorbed and no large lumps remain.
  • Refrain from over-mixing.
  • Grease twelve muffin cups.
  • Spoon the batter in, filling the cups evenly to about 2/3 or 3/4 full.
  • Bake 25-30 minutes, until the top is slightly springy when gently pushed with a finger.
