I actually adapted this recipe from Gluten Free Girl's Gluten Free French Bread Recipe. I am ellergic to yeast and I preferred the bread with brown rice flour. I also make it in a bread loaf pan instead of two small skinny loaves. I LOVE this recipe!!! I also used it to make bread pudding and it was perfect. I hope you all enjoy it too.

1 cup rice flour
1 cup brown rice flour
1 cup tapioca flour
3 teaspoons xanthan gum
1 1/2 teaspoons salt
2 tablespoons sugar
1 1/2 cups water
2 tablespoons melted butter (I use a light butter spread)
3 egg whites, beaten slightly
1 teaspoon vinegar
melted butter, for brushing (optional)

Steps:

  • In a bowl, place flours, xanthan gum, salt and sugar. Blend with mixer on low or by hand.
  • Add the butter, egg whites, and vinegar.Beat on high or stir in by hand until well mixed.
  • Pour batter into a buttered bread pan.
  • If desired, brush with melted butter. (I spray with spray butter to reduce calories and fat.).
  • Preheat oven to 400 degrees. Bake for 40 to 45 minutes.
  • Remove from pan to cool.

This is an adaptation of recipe #320392. I'm still in the search for a great pizza (I can't eat wheat or yeast) and this recipe appealed to me. I've scaled it down and used it tonight for a pizza -- it was pretty good -- still not quite the same. I can't wait to use it for sandwiches.

3/4 cup gluten-free flour (I used Gluten Free Pantry's favorite sandwich bread mix)
3/4 teaspoon salt
1/2 teaspoon baking powder
1/4 teaspoon dried rosemary
1/4 teaspoon garlic powder
3/4 tablespoon oil (I used grapeseed oil)
1/4 cup ice water

Steps:

  • Sift together all dry ingredients into a small bowl.
  • Make a well and add oil and water.
  • Slowly mix the flour and liquid together until it forms a dough.
  • Add more water (1 T at a time) until the dough is easy to handle.
  • Knead on a flour dusted surface until the dough is smooth.
  • Cut into two pieces.
  • Roll out to about a 6" circle. Dust with flour as necessary.
  • Heat a large skillet on high heat, when hot reduce heat, brush with oil and place flat bread in skillet.
  • Prick bread with a fork.
  • Turn over and brush with more oil and cook other side.
  • Bread cooks very quickly.
  • Repeat with remaining piece of dough.

  • Ingredients. for 1 loaf: 3 dl. (1 1/4 c.) lukewarm water. 2 tsp. active dry yeast. 1 1/2 tsp. sea salt. 1 Tbsp. sugar. 2 Tbsp. oil. 200 g. (1 1/3 c.) white rice flour.
  • Mix Water and Yeast... Add the yeast, salt, sugar, and oil to the water, and stir till it is dissolved.
  • Add Flour... Add the rice flour, potato starch, and psyllium to the liquid, and stir till no lumps remain.
  • Rise First Time... Cover the bowl with cling wrap or a towel, and let the dough rise in a warm (not hot!) place about 1/2 hour till it is puffy but not quite doubled in size.
  • Shape... Punch down the dough, and knead it a couple of times till it is uniform. Shape the dough into a log, and place it on a parchment-covered baking sheet.
  • Rise Second Time... Cover the dough, and let it rise a second time till it has doubled in size, about 1/2 hour.
  • Bake... Optionally, brush the bread with water and cut diagonal slits in the top with a sharp knife. Bake the bread in a convection oven at 200 degrees C (400 degrees F) for 30 min.
  • Enjoy! This bread is best the same day it is baked, as it is most crusty and chewy then, but it keeps in a plastic bag a couple of days at room temperature, even though it gets drier with time.
