GLUTEN FREE PEANUT BUTTER COOKIES (KISSES FROM HEAVEN)



Gluten Free Peanut Butter Cookies (Kisses from Heaven) image

I found this GF peanut butter cookie recipe on a few sites, but I made a few modifications and added some extra goodies to make these similar to my mother's Peanut Butter Kisses cookies she made at Christmas time.

Number Of Ingredients 7

1/2 cup light brown sugar
1/2 cup sugar
1 tablespoon vanilla
1 egg
1 cup peanut butter (about, usually a bit less)
chocolate chips (optional, but so good!) (optional)
cinnamon-sugar mixture, to be used later (I just eyeball this part, need enough to roll in the dough)

Steps:

  • - Preheat oven to 350 degrees.
  • - Grease a baking sheet.
  • - Mix both sugars, vanilla, egg and peanut butter in a large bowl (using a large wooden spoon works, some recipes call for a hand mixer).
  • - Once smooth roll into small balls (about the size of a dollar coin)
  • - Roll the balls in the cinnamon/sugar mixture and place on the cookie sheet leaving space for them to expand.
  • - Place the completed cookie sheet in the oven for 8-11 minutes.
  • - Take the cookie sheet out and promptly place a few chocolate chips (morsels or whatever you have) in the center of the cookie while they are still hot and soft.
  • - Let the cookies cool on the cookie sheet for another 2-3 minutes and then remove.

1 cup kinnikinnick all-purpose gluten flour (or other GF flour)
1 cup peanut butter
1 cup packed brown sugar
1/2 cup butter
1 pinch salt
1 egg
1 teaspoon vanilla extract
1 teaspoon baking powder

Steps:

  • Mix together all the dry ingredients.
  • Mix together all the wet ingredients.
  • Combine the wet and dry ingredients.
  • Roll into 2-inch balls.
  • Place on cookie sheet about 1 inch apart.
  • Flatten slightly.
  • Bake in preheated 350°F oven for about 12 minutes.

1 1/2 cups teff flour (we use Bob's Red Mill Teff Flour)
1/2 teaspoon sea salt (or plain salt even)
1/2 cup maple syrup (which can be replaced by agave nectar, if you can't eat syrup)
1/2 cup canola oil (or any vegetable based)
1 teaspoon vanilla (Frontier makes gluten free vanilla)
1 cup peanut butter

Steps:

  • Preheat oven to 350.
  • In a large bowl combine dry ingredients, set aside.
  • In a food processor blend syrup, oil, vanilla and peanut butter.
  • Add the wet ingredients to the dry, blend well.
  • Shape dough into walnut sized balls.
  • Place on a slightly greased cookie sheet and flatten gently with the tines of a fork.
  • Bake about 13-15 minutes.
  • Cool on wire rack.

Steps:

  • Add peanut butter, 1 cup sugar, egg & vanilla until well blended. Roll the mixture into 1 inch balls & roll into remaining sugar. Place on cookie sheet, flatten with a fork. Bake at 350 degrees for 11 minutes. Cool and enjoy!
  • These would be easy to make egg free just use any egg substuite.

Not just for the celiacs! I was skeptical, since the last recipe I tried was gritty, heavy and nasty. These are light, rich and absolutely perfect. I actually like these better than "regular" peanut butter cookies, and from a big fat Momma, that's saying something! Adapted from Catherine's recipe.

1/2 cup gluten-free margarine
1/2 cup brown sugar
1/2 cup white sugar
1 egg
1/2 cup salted natural-style peanut butter
1/2 teaspoon baking soda
1 cup garbanzo flour (chickpea)
1/4 cup potato starch
1/4 cup tapioca flour

Steps:

  • Preheat oven to 375.
  • Make sure you have beaters that can handle thick batter.
  • In a medium bowl, cream margarine and sugars.
  • Beat in egg and peanut butter.
  • In a separate bowl, mix flours and baking soda evenly.
  • Add in two parts to wet ingredients, beating on med-high speed until thoroughly blended.
  • Roll dough into 1-inch balls, and place 2 inches apart onto ungreased baking sheet.
  • You can press them with a fork if desired, but not necessary.
  • Bake 8-10 minutes.
  • Let cool 5 minutes before removing from baking sheet.

Whenever I need a Peanut Butter fix this is the recipe I turn to. It is so easy to make and so delicious. It is Gluten free and Dairy free!!!

2 cups natural-style peanut butter
1 1/3 cups white sugar
2 eggs
2 teaspoons baking soda
1 pinch salt
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Line cookie sheets with parchment paper or use a Silpat liner for best results.
  • In a medium bowl, stir peanut butter and sugar together until smooth.
  • Beat in the eggs, one at a time.
  • Stir in the baking soda, salt, and vanilla.
  • Roll dough into 1 inch balls and place them 2 inches apart onto the prepared cookie sheets.
  • Press a criss-cross into the top using the back of a fork.
  • Bake for 8 to 10 minutes in the preheated oven.
  • Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
  • Store in an airtight container.
  • They will get chewier with time, if they last that long!
