Time 1h15m

Yield 24 cookies

Number Of Ingredients 11

2 sticks (1 cup) unsalted butter, at room temperature
1 1/4 cups confectioners' sugar
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour, plus more for dusting
1/2 teaspoon kosher salt
1 tablespoon whole milk
2 tablespoons chopped fresh rosemary
2 large egg whites, for the cookie wash
Dried and fresh edible flowers, for decorating
Fresh thyme sprigs, for decorating
Granulated sugar, for sprinkling

Steps:

  • Add the butter to the bowl of a stand mixer fitted with a paddle attachment and beat until light and fluffy, 3 to 4 minutes. Add the confectioners' sugar and vanilla to the bowl and continue to beat, scraping down the sides of the bowl as needed, until well incorporated, 60 to 90 seconds.
  • Whisk together the flour and salt in a medium bowl. On low speed, add the flour mixture to the butter mixture and beat to combine. Add the milk and mix just a bit more until everything is incorporated. Add the rosemary and mix again to combine.
  • Scoop the dough out onto a sheet of plastic wrap, shape it into a disc and wrap it up. Refrigerate the dough for at least 30 minutes
  • Preheat the oven to 350 degrees F.
  • On a lightly floured surface, roll out the dough to a thickness of 1/4 inch or slightly thinner. Cut out the shortbreads with desired cookie cutters, around 3 inches in size. Using a pastry brush, brush the tops of the cookies generously with the egg whites. Press dried or fresh flowers or fresh thyme sprigs onto the top of each cookie. Sprinkle the cookies with a thin layer of granulated sugar.
  • Bake the cookies until golden on the sides, 12 to 15 minutes. Allow the cookies to cool fully on a cooling rack.

Yield 3 dozen cookies

Number Of Ingredients 12

1 cup almond flour
1 cup brown rice flour
1 cup tapioca flour
1 1/2 teaspoons baking powder
1/2 teaspoon fine salt
1/2 teaspoon xanthan gum
1 stick (4 ounces) unsalted butter, melted
1 1/4 cups light brown sugar
2 tablespoons milk
2 teaspoons pure vanilla extract
2 large eggs, at room temperature
1/2 cup white chocolate chips

Steps:

  • Preheat the oven to 375 degrees F. Line two baking sheets with parchment paper and set aside.
  • Whisk the flours, baking powder, salt and xanthan gum together in a medium bowl and set aside.
  • Put the butter and sugar into a large bowl and beat with an electric mixer on medium speed until smooth, about 1 minute. Add the milk, vanilla and eggs, and beat until blended with the butter. Reduce the speed to low and slowly incorporate the flour mixture until thoroughly combined. Add the chips and stir to combine.
  • Spoon heaping tablespoons (or smaller scoops) of the dough onto the prepared baking sheets, 1 to 1 1/2 inches apart. Bake the cookies in two batches, two sheets at a time, until the cookies are set and just beginning to crack slightly on top, 13 to 14 minutes. Rotate the sheets halfway through for even baking.
  • Remove from the oven and let the cookies cool on the sheets for 2 minutes, and then remove to a rack and cool completely.

WALNUT SHORTBREAD COOKIES

Walnut Shortbread Cookies image

Provided by Food Network

Yield Makes about 42 1 1/4-inch cookies

Number Of Ingredients 7

1/2 cup (2 ounces) walnut pieces
1 3/4 cups (89ounces) flour
1/2 teaspoon kosher salt
1 cup (8 ounces) unsalted butter
3/4 cup (5 1/2 ounces) sugar
1 egg yolk
Maldon sea salt

Steps:

  • Preheat the oven to 350 degrees F. Toast the walnuts until lightly browned, 12 to 15 minutes. Let cool, then finely grind them in a food processor. Sift flour and salt into a bowl and set aside. In the bowl of a stand mixer fitted with a paddle attachment on low speed, beat together the butter and sugar until lightened, about 4 minutes. Add the yolk and mix until fully incorporated. Add the dry ingredients and walnuts and mix just to combine. If the dough is soft, wrap it tightly in plastic and refrigerate for 30 minutes. Otherwise, roll out the dough about 1/2 inch thick on a lightly floured work surface into a 6-by-7-inch rectangle. Using a ruler, square the edges as much as possible. Using a sharp knife, cut the dough into1-inch squares. Place them about 2 inches apart on a parchment-lined baking sheet. Sprinkle lightly with sea salt. Preheat the oven to 350 degrees F. Bake the cookies until they are firm, about 10 to 12 minutes. Remove to a wire rack to cool. Store in airtight containers for up to 2 weeks.

SHORTBREAD COOKIES

Bake Ina Garten's chocolate-dipped Shortbread Cookies for the perfect bite with tea, from Barefoot Contessa on Food Network.

Provided by Ina Garten

Categories     dessert

Time 1h15m

Yield 20 cookies

Number Of Ingredients 6

3/4 pound unsalted butter, at room temperature
1 cup sugar, plus extra for sprinkling
1 teaspoon pure vanilla extract
3 1/2 cups all-purpose flour
1/4 teaspoon salt
6 to 7 ounces very good semisweet chocolate, finely chopped

Steps:

  • Preheat the oven to 350 degrees F.
  • In the bowl of an electric mixer fitted with a paddle attachment, mix together the butter and 1 cup of sugar until they are just combined. Add the vanilla. In a medium bowl, sift together the flour and salt, then add them to the butter-and-sugar mixture. Mix on low speed until the dough starts to come together. Dump onto a surface dusted with flour and shape into a flat disk. Wrap in plastic and chill for 30 minutes.
  • Roll the dough 1/2-inch thick and cut with a 3 by 1-inch finger-shaped cutter. Place the cookies on an ungreased baking sheet and sprinkle with sugar. Bake for 20 to 25 minutes, until the edges begin to brown. Allow to cool to room temperature.
  • When the cookies are cool, place them on a baking sheet lined with parchment paper. Put 3 ounces of the chocolate in a glass bowl and microwave on high power for 30 seconds. (Don't trust your microwave timer; time it with your watch.) Stir with a wooden spoon. Continue to heat and stir in 30-second increments until the chocolate is just melted. Add the remaining chocolate and allow it to sit at room temperature, stirring often, until it's completely smooth. Stir vigorously until the chocolate is smooth and slightly cooled; stirring makes it glossier.
  • Drizzle 1/2 of each cookie with just enough chocolate to coat it.

ALMOND SHORTBREAD COOKIES

Serve these cookies with a cold glass of milk or crumbled over chocolate or vanilla ice cream.

Provided by Food Network

Categories     dessert

Time 1h25m

Yield 30 cookies

Number Of Ingredients 7

1 stick (8 tablespoons) unsalted butter
3/4 cup sugar
1 egg, beaten
1 drop almond extract
1 1/4 cup sifted all-purpose flour, plus extra to dust
3/4 cup ground almonds
Zest of 1 lemon

Steps:

  • In a large bowl, cream together the butter and sugar until light and fluffy. Stir in the beaten egg and extract. Add the flour, ground almonds and lemon zest and mix until the dough comes together.
  • Turn the dough out onto a floured surface and knead into a ball. Divide the dough in half and then roll each half into a log, about 1 1/2 inches in diameter. Wrap each log in plastic wrap and refrigerate for 1 hour (the dough can be frozen at this point for a later use).
  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
  • Remove the dough from the plastic wrap and slice into 1/4-inch-thick rounds. Place the cookies onto the prepared baking sheets and bake until golden brown at the edges, about 15 minutes. Let cool on the baking sheets for 3 or 4 minutes before transferring to wire cooling racks to cool completely, or just eat warm from the oven.

  • In the bowl of a stand mixer, combine the gluten-free flour, confectioners sugar and salt. Mix on low for 1-2 minutes to combine.
  • Add the vanilla and butter and mix on medium-low speed. Increase the speed to medium and mix for 3-5 minutes. (The dough will look powdery at first but will start to look more dough-like as it mixes. The dough is ready when it is smooth and starts to pull away from the sides of the bowl.)
  • Lightly flour a piece of parchment paper with gluten-free flour. Roll the dough out until it is 1/3-inch thick. Cut into squares or rectangles, using a cookie cutter, pizza cutter or knife. I like to make 3 by 1-inch rectangles.
  • Transfer to an ungreased baking sheets spacing 1-inch apart. You can dust of excess flour from scrapes, compress together and re-roll.
