PERFECT POTATOES AU GRATIN

- Preheat the oven to 400 degrees F. Butter a large baking dish with the butter.
- Slice the potatoes into sticks, and then cut the sticks to create a dice.
- Combine the cream and milk in a bowl. Add the flour, salt and some pepper. Whisk it together well so that the flour is incorporated into the milk/cream mixture. Add the diced potatoes to the prepared baking dish and pour the creamy mixture all over the top.
- Cover the dish with foil and bake for 20 to 30 minutes. Remove the foil and bake 15 to 20 minutes more. Just before serving, sprinkle on the grated cheese and return it to the oven until the cheese is melted and bubbly, 3 to 5 minutes. Sprinkle on the green onions and serve it hot. Creamy, dreamy and divine.
POTATOES AU GRATIN
This is one of the first dishes I made in Home Economics class, but it wasn't until after I graduated that I learned about adding Parmesan and Gruyere for a more sophisticated version.

- Preheat the oven to 350 degrees F.
- Butter a 1 1/2 quart baking dish with about 1 tablespoon of the softened butter.
- Arrange a layer of potatoes in the baking dish, and sprinkle some of the cheeses over them. Continue layering potatoes and cheeses until you've used them all, ending with a layer of potatoes.
- In a small bowl, whisk the cream with the salt and pepper; pour this over the potatoes. Dot the remaining butter over the top and sprinkle with the paprika. Bake for 1 to 1 1/4 hours, or until the potatoes are tender and golden brown on top. Let stand for 5 minutes before serving.
NEW MEXICAN POTATOES AU GRATIN

- In a saucepan, melt butter over medium high heat.
- Add flour and let cook and brown slightly, forming a thick roux.
- Stir in sour cream, chilies, salt and pepper, letting sauce thicken to the consistency of thick gravy. (Add milk 1 T. at a time if you need to thin it a bit).
- Remove from heat and add most of the cheese; set aside.
- Slice unpeeled potatoes into 1/4 inch thick slices. Place one layer in small casserole, and pour half the cheese sauce over. Layer and and pour again.
- Bake at 350°F for 45 minutes-1 hour. Top with rest of cheese and bake an additional 15 minutes.

- Preheat the oven to 400 degrees F.
- Add the cream and milk to a large saucepan over medium-low heat and bring to a gentle simmer. Add the nutmeg, a big pinch of salt and some pepper. Meanwhile, slice the potatoes on a mandoline to 1/8-inch thick. Place the potatoes in the warm cream mixture and simmer gently until the potatoes are two-thirds of the way cooked and the cream has thickened, about 15 minutes.
- Place a 9-by-12-inch flameproof gratin dish on the stove over low heat. Brush the bottom and the sides with the melted butter. Spread the garlic around the bottom of the dish. Cook just long enough to toast the garlic in the butter, 3 to 4 minutes. Add a layer of the potato mixture. Combine the Gruyere and Parmesan in a bowl, then sprinkle a third of the cheese over the potatoes. Repeat the layering 2 more times, finishing with the remaining cheese. Pick the thyme leaves and sprinkle over the top, mixing with last layer of cheese. Place the gratin dish on a rimmed baking sheet and bake until bubbly and golden, 45 to 50 minutes (see Cook's Note).
ARAGONESE POTATOES AU GRATIN (PATATAS GRATINADAS DE ARAGON)
A recipe untried by me but I am posting for ZWT - Spain. I found this recipe on "About.com" and here is what was stated: This potatoes and cheese recipe is from the region Aragon, in northeast Spain. It is easy, and uses ingredients that are probably in your pantry - potatoes, eggs, milk, cheese and bacon. Moist, not runny, this dish has solid consistency - a bit like a layered Spanish potato omelet with bacon. Note: If sheep cheese is unavailable, use another sharp cheese, such as aged Monterey Jack.

- If sheep cheese is unavailable, use another sharp cheese, such as aged Monterey Jack.
- Heat the oven to 360F (180C) degrees.
- Peel and cut the potatoes in thin slices (1/8-inch thick). Peel and thinly slice the onion.
- Cut the bacon lengthwise in strips and lightly fry them in a pan. Remove and allow to drain on a paper towel.
- Oil bottom and sides of a 9-inch by 12-inch glass baking dish. Place a layer of potatoes on the bottom. Lay julienned onions and a couple strips of bacon on top to create another layer. Repeat this process until all potatoes, onions and bacon have been used.
- Beat the eggs and milk together, and pour over the potato mixture.
- Cover the baking dish with aluminum foil and place in hot oven for 60 minutes. Remove from oven and sprinkle the grated cheese over the top. Return to oven uncovered for another 5-10 minutes.
- When cheese has melted, remove from oven and decorate with thyme if desired. Cut into squares and serve.

- Mix potatoes, jalepeno and onions and put in a buttered baking dish.
- Mix cream, garlic, salt, black pepper and thyme leaves.

- Spray a 13 x 9 pan with oil.
- Peel and cut garlic cloves in half or thirds.
- Rub sides and bottom of dish with cut side of garlic cloves.
- Leave garlic pieces in bottom of pan.
- Layer half of potatoes in bottom of pan.
- Salt and pepper.
- Sprinkle with half the cheese.
- Pour half the cream over potatoes.

- Start by preheating your oven to 350 degrees Fahrenheit.
- Llightly butter a 13x9 inch pan so the potatoes won't stick.
- Cut your potatoes into very thin slices (width wise).
- Organize half of the potatoes in the pan.
- Sprinkle salt and pepper on potatoes to taste (I use about 3/4 teaspoon of pepper and 1/2 teaspoon salt).
- Add a layer of cheese (1 cup ).
- Peel 3 cloves of garlic (but leave them whole).
- In a small sauté pan add 1 pint of heavy whipping cream, the 3 whole garlic cloves, and 1 teaspoon of chicken flavor bouillon (the bouillon is optional but I always add it.).
- Evenly add the second layer of potatoes.
- Add salt and pepper (same amount).
- Add the rest of the cheese (1 cup).
- Once the heavy whipping cream mixture comes to a boil REMOVE the 3 garlic cloves; pour mixture evenly over the potatoes.
- Bake for approximately 1 hour and 20 minutes.
