1/4 package (12-oz size) soft silken tofu
1/4 cup vanilla soymilk
1 1/2 teaspoons honey
3/4 teaspoon ground cinnamon
3/4 teaspoon lemon juice
1/2 teaspoon vanilla
1/8 teaspoon salt
1 cup red grapes
1 cup green grapes
1 cup fresh blueberries
1 large apple or pear, cut up
1 banana, sliced
1/4 cup sliced almonds

Steps:

  • In blender or food processor, place tofu, soymilk, honey, cinnamon, lemon juice, vanilla and salt. Cover; blend on medium-high speed until smooth and creamy.
  • In large salad bowl, mix all remaining ingredients; toss with dressing. Store covered in refrigerator.

2 small firm yellow squash or 2 small firm zucchini, sliced
2 tablespoons olive oil
2 tablespoons unsalted butter
2 tablespoons fresh lemon juice
3 garlic cloves, sliced
1 tablespoon minced fresh oregano
salt
black pepper
shaved parmesan cheese

Steps:

  • Steam vegetables for 8-10 minutes or until crisp-tender.
  • Heat olive oil, butter, lemon juice, garlic, and oregano until fragrant.
  • Toss steamed veggies with butter mix, seasoning with salt and pepper to taste as well.
  • Garnish with shaved parmesan cheese if desired.

1 teaspoon chicken bouillon granules
1/4 cup water
1 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1 teaspoon plus 1 tablespoon olive oil, divided
2 cups fresh broccoli florets
2 medium carrots thinly sliced
1 large onion, sliced and quartered
1 cup sliced celery
2 medium zucchini, halved lengthwise and thinly sliced
1 medium sweet red pepper, thinly sliced
1 cup sliced fresh mushrooms
2 cups thinly sliced cabbage

Steps:

  • In a small saucepan, heat bouillon and water for 1 minute; stir well. Stir in the salt, garlic powder, pepper and 1 teaspoon oil., In a large nonstick skillet or wok, stir-fry the broccoli, carrots, onion and celery in remaining oil for 2-3 minutes. Add the bouillon mixture; cook and stir for 3 minutes. Add zucchini and red pepper; stir-fry for 3 minutes. Add mushrooms and cabbage; stir-fry 1-2 minutes longer or until crisp-tender.

2 (12 ounce) bags frozen broccoli cuts (I plan to use fresh or cooked broccoli)
2 cups cubed peeled butternut squash (1/2 inch, 1 1/2 lb)
1/2 cup orange juice
1 tablespoon margarine or 1 tablespoon butter, melted
1/2 cup dried sweetened cranberries
1/4 cup finely chopped pecans, toasted
1 tablespoon grated orange peel
1 teaspoon salt

Steps:

  • Cook and drain broccoli as directed on bag. Meanwhile, in 12-inch skillet, cook squash in orange juice over medium-low heat 8 to 10 minutes, stirring frequently, until tender but firm.
  • Stir in butter, broccoli, cranberries, pecans, orange peel and salt; toss to coat. Serve immediately.

This is an old family recipe. We cooked it without measuring ingredients so I had to stop and weigh and measure in order to post it! Not hot spicy, but a different and flavorful way to cook summer produce and it is even better the next day (if it lasts that long).

2 tablespoons vegetable oil
1 1/2-2 lbs crookneck yellow squash or 1 1/2-2 lbs pattypan squash, chopped into 2 inch chunks
1 onion, chopped
3 garlic cloves, minced
1 jalapeno, chopped (optional)
1 (14 1/2 ounce) can diced tomatoes, undrained (or equivalent of fresh)
1 (14 ounce) can corn, undrained (or equivalent of fresh kernels)
1 teaspoon chili powder
salt and pepper
1 cup shredded cheddar cheese (may use pepper jack or monterey jack)

Steps:

  • Heat oil in large lidded skillet.
  • Add squash, onion and garlic and saute until tender crisp.
  • Add jalepeno (if using), tomatoes, corn, chili powder, salt and pepper.
  • Cover pan, reduce heat and simmer until it all cooks down (about 25 minutes, more or less to your taste). Stir occasionally.
  • Uncover pan, sprinkle cheese on top. Serve after cheese melts.
  • This lends itself nicely to whatever else you have around. Chopped bell peppers are a nice addition.

1 clove garlic, finely chopped
1/2 lb Brussels sprout, cut in half

1 small butternut squash, peeled,seeded and cut into 1 inch pieces

Steps:

  • Heat oven to 375ºF.
  • Melt butter in 1-quart saucepan over medium heat; stir in sage and garlic.
  • Place remaining ingredients in ungreased rectangular pan, 13x9x2 inches.
  • Pour butter mixture over vegetables; stir to coat.
  • Cover and bake 25 to 30 minutes, stirring occasionally, until vegetables are crisp-tender.

Steps:

  • Preheat oven to 325°.
  • Cook squash, onion, and butter in water until tender.
  • Add hominy, half grated cheese, jalapeños, sour cream and salt to cooked squash and mix.
  • Pour into greased casserole and top with remaining cheese and tortilla chips.
  • Bake 1 hour.
