2 medium onions
1/4 cup fine-grain gluten-free cornflour
1/4 cup plain gluten-free breadcrumbs
1/4 cup skim milk
1/4 cup egg substitute
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon italian seasoning
1/4 teaspoon cajun seasoning
1/4 teaspoon pepper

Steps:

  • Preheat oven to 350°F and line a large baking sheet with foil.
  • Cut onion cross-wise into 1/2-inch rings.
  • Add spices to cornflour and mix well.
  • One at a time, dip onion rings into milk, cornflour, egg substitute and bread crumbs, in that order. Make sure the onion is well coated in crumbs.
  • Arrange rings in single layer on baking sheet, and drizzle with olive oil.
  • Bake 25-30 minutes, or until golden brown.

Gluten-Free Dairy-Free Onion Rings image

For all that haven't had onion rings forever because of food restrictions, I have made a crunchy, crispy onion ring recipe!

2 -3 large sweet onions
1/2 cup cornstarch, plus more for coating the rings
1 1/2 cups rice flour
1/4 cup cornmeal
2 teaspoons paprika
1 teaspoon onion powder
1 teaspoon salt, plus more for sprinkling when rings come out of the oven
1 teaspoon garlic powder
1 teaspoon sugar or 1 teaspoon sugar substitute
1 teaspoon baking powder
1/2 cup almond milk (or milk substitute of your choice)
1 1/2 teaspoons vinegar (the milk and vinegar make a substitute for buttermilk)
1 egg
3 cups oil (for frying)
3/4 cup club soda, ginger ale or 3/4 cup gluten-free beer

Steps:

  • Take a cookie sheet and line it with parchment paper or paper towels put a drying rack on top.
  • Cut onions into rings of the size you desire add to a bag and add corn starch to the bag. ( I used about 1/4 C) shake to cover rings.
  • Whisk wet ingredients, egg, milk with vinegar, tonic, in a bowl.
  • Mix dry ingredients rice flour, cornstarch, cornmeal, paprika, onion powder, garlic powder, salt, sugar (optional), in a bowl.
  • Add dry ingredients to wet ingredients a little at a time starting until you have a thick batter.
  • Heat oil in a skillet or deep pan to 350 degrees using a thermometer if you have one.
  • Remove rings from the bag and shake excess cornstarch and dip into batter and fry in batches (do not crowd) adding to sheet in the oven as they are done (sprinkle each batch with salt while hot).
  • NOTE.
  • Be careful frying. If it seems to be getting too hot keep decreasing the temp on your stove. The oil will start evaporating as you go. I ended up turning the burner down to a 5. If you need to add more oil, just remember that you need to wait to let it come up to frying temperature before frying your next batch or you will end up having oily greasy rings.

  • Dip each onion ring into gluten-free flour first. Then dip in eggs and lastly dip into panko seasoned with nutritional yeast, paprika and sea salt.
  • Arrange onion rings side by side in sheet pan. Do not stack them or they won’t crisp up. Bake for 12-13 minutes on the bottom rack, turning once half way through.
