PAN-SEARED MAHI MAHI
Pan-seared mahi mahi is not only easy and delicoius, it's also a healthy and light dinner recipe with garlic-butter sauce.

- Use paper towels to gently dry the mahi mahi fillets. The drier the filets are, the better seasoned they will be, so be thorough. Use a light hand to avoid damaging the flesh at all.
- Cut the lemon in half and save one half for later. With the remaining half, squeeze lemon juice over each fillet of fish.
- Next, sprinkle the fillets with salt and pepper on both sides. While you can add other dried seasonings at this point if you like, a simple preparation of salt, pepper and lemon makes an elegant dish that lets the delicate flavor of mahi mahi speak for itself on the plate.
- Now that your fish is properly seasoned, it's time to start cooking. Use a large skillet to pan-sear the mahi mahi. Heat the pan over medium-high heat. Wait for a bit until the pan is hot before drizzling in the olive oil. Swirl the oil around the pan so you have an even, thin coating of oil for searing. When the oil is hot but not yet smoking, move onto the next step.
- Carefully Place the mahi mahi fillets into the hot pan. cook until each piece is brown on the bottom, then use a thin fish spatula to carefully flip the fillets and brown the other side. The first side should take 3-5 minutes, depending on the thickness of your fish. The second side will need a bit less time, about 2 to 3 minutes.
- Just before your fish is fully cooked, remove it from the hot skillet and plate it up. The fillets will continue cooking for a few minutes after you remove them from the skillet.
- Reduce the heat to medium-low. Then squeeze the juice from the remaining lemon half into the pan. Add the minced garlic and ¼ teaspoon of salt as well.
- Finally, add the butter. Stir the sauce and cook until the butter is fully melted and well combined with the lemon juice. Taste your sauce and add salt and pepper to taste.
- Plate the fillets and spoon the lemon garlic sauce on top.
PAN SEARED MAHIMAHI WITH POBLANO MASH AND TOMATO RELISH
Steps:
- Season both sides of fish. Heat a large saute pan, and then add the olive oil. When oil is hot, add mahimahi pieces, skin side down. After 3 minutes, turn strips over and cook for another 3 minutes. Place fish over the Poblano Mashed Potatoes and spoon Tomato-Cumin Relish on top to plate.
- Boil potatoes until tender. Rice potatoes and then, with a whisk, incorporate milk and butter. Puree poblano, scallions, cilantro, parsley, spinach and lime juice in a blender. Add mixture to potatoes and combine. Season to taste.
- Combine tomatoes, onion, and scallions. Coat with olive oil. Add cumin. Season, to taste.
SEARED MAHI-MAHI WITH MANGO SAUCE AND FRAGRANT RICE

- For the rice: Combine the rice and water together in a large saucepan. Place the pan over medium heat and bring to a boil. Reduce the heat to low and cover the pot. Cook the rice for 20 minutes.
- For the sauce: Peel the mango and slice the flesh off the pit. Dice the mango flesh.
- In a large bowl, whisk together the vinegar, oil, and lime juice. Season with salt and pepper. Stir in the mango, cilantro, garlic, and ginger. Set aside.
- Heat a large, nonstick saute pan over medium-high heat.
- Rub the fish fillets with the oil, salt, and pepper. Place in the hot pan and sear until golden on 1 side, 3 to 4 minutes.
- Turn the fish over and cook until cooked through, another 3 to 4 minutes. Be careful not to overcook the fish. You'll know the fish is done when the flesh springs back. Remove the fish to a plate.
- When the rice is cooked, fluff it with a fork and gently stir in the cilantro and scallions. Season with salt, to taste.
- Place a mound of rice on each plate. Top with mahi-mahi. Spoon the mango sauce over each fillet and top with chopped scallions. Drizzle the liquid from the mango sauce around the rice.
PAN-SEARED MAHI MAHI WITH GREMOLATA BREAD CRUMBS
Steps:
- Preheat a large saucepan over medium heat for 2 to 3 minutes. Add 2 tablespoons oil, then add panko. Cook and stir until lightly toasted, 2 to 3 minutes. Add garlic and cook until fragrant and panko is golden brown, 1 to 2 minutes.
- Transfer bread crumb mixture to a small bowl and add lemon zest, seafood seasoning, and 1/4 teaspoon salt; mix to combine. Set aside.
- Wipe out the saucepan and pour in remaining oil. Season fish fillets with remaining salt and add to the pan.
- Cook over medium heat until opaque, 2 to 3 minutes per side. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).
- Serve fish topped with bread crumb mixture.

Steps:
- Make the Potato Beds:.
- Peel and cut the potatoes into uniform pieces.
- Boil in water until done.
- Drain and mash.
- Add the eggs and salt and pepper and mix thoroughly.
- Shape the mashed potatoes into 4 "beds" on a parchment paper covered baking sheet.
- You can use a pastry bag or the back of a large spoon.
- Bake for 20 minutes until set and browned.
- Preheat the oven to 350 degrees F.
- Sprinkle the mahi mahi with the black pepper.
- Heat the oil in a large skillet, add the mahi mahi.
- Sear for 3 minutes on one side, then turn the fish and sear the second side for 4 minutes.
- Make the Ginger Shitake Cream:.
- Melt the butter in a large skillet over medium heat.
- Add the scallions, fresh ginger and garlic.
- Saute for 30 seconds.
- Stir in the mushrooms and soy sauce.
- Saute for another 30 seconds.
- Stir in the cream.
- Bring to a boil, reduce the heat and simmer for 3 minutes, until the sauce lightly coats the back of the spoon.
- Stir in the lemon juice.
- To serve:.
- Place one mahi mahi fillet on each potato bed.
- Spoon the sauce over each piece of fish.
- Garnish with lemon wedges.
SESAME CRUSTED MAHI MAHI WITH SOY SHISO GINGER BUTTER SAUCE
Mahi mahi fillets are encrusted with black and white sesame seeds, and pan seared. The sauce is rich and creamy, and flavored with soy, ginger, shallots, and shiso (a Japanese herb related to basil and mint). Use either as a substitute, they work perfectly well.

- In a sauce pan over medium heat, combine shallots, ginger, lemon juice, and sake or white wine. Cook until liquid is reduced to approximately 2 tablespoons. Stir in heavy cream, and bring to light boil. Reduce cream by half; do not burn. Stir in soy sauce, then transfer to blender. Blend on low while slowly adding butter, a few cubes at a time, until all of the butter is emulsified. Roughly chop or tear shiso, add to sauce, and blend for about 10 more seconds. Season to taste with kosher salt and pepper. Keep sauce warm.
- Preheat oven to 425 degrees F (220 degrees C).
- Heat oil in a large saute pan over high heat. Season both sides of the fillets with kosher salt and white pepper. Mix together white and black sesame seeds, and place in a plate or flat dish. Press the TOP side only of each fillet into the mixture, and press seeds into fish so it sticks. Make sure that the crusted sides are evenly crusted with the seeds. When oil is smoking, add fish, sesame seed side down to pan, and be careful of oil splatters. Pan sear fish for about 30 to 45 seconds per side. Place pan into oven, or transfer fish to baking sheet, and cook in oven for about 5 to 6 minutes. Serve sesame crust side up with ginger butter sauce.

- Cover the beans by about 3 inches of water and bring to a boil. Add the smashed garlic and the half onion. Simmer until tender, then add salt to taste. Remove the garlic and onion and discard. Strain the liquid off the beans, but save both the beans and the liquid.
