SWEET ENGLISH PEAS



Sweet English Peas image

A traditional English recipe. Use either new, small peas, or small frozen peas. This is wonderful served as part of an English Sunday roast dinner! Another gem from Great British Cooking.

1 lb tiny peas
2 ounces butter
1 tablespoon chopped of fresh mint or 1 teaspoon dried mint
1 teaspoon sugar
salt and pepper, to taste

Steps:

  • Cook peas in a small amount of boiling, salted water, until tender (if using frozen peas, follow package instructions).
  • Drain, and set aside.
  • In another saucepan, heat the butter, and add the peas, mint and sugar.
  • Cook over low heat for 2 minutes, tossing to mix.
  • Add salt and pepper to taste, and serve.

1 spring onion, sliced
2 tablespoons olive oil
2 cups English peas, shelled (about 12 ounces)
6 mint leaves, torn
Salt
Water

Steps:

  • Sauté the spring onion in two tablespoons olive oil over medium-high heat. Add the shelled peas, a pinch of salt, and enough water to barely cover. Cook over high heat for 2 minutes, then add the torn mint leaves. Continue cooking until the peas are tender, a few more minutes. Check for seasoning, and add more salt if needed.

Peas & Pearls are a lovely accompaniment to Sunday roast chicken, or to traditional ham or lamb dishes! You may use fresh seasonal petite baby peas and white pearl onions, when available.

16 ounces frozen baby peas
8 ounces frozen white pearl onions
2/3 cup cream
1 teaspoon sugar
1/4 teaspoon salt
1/8 teaspoon pepper
1 dash garlic powder
1/4 teaspoon crushed dried tarragon
2 tablespoons flour
2 tablespoons sweet butter, slightly softened
1 tablespoon fresh finely snipped parsley (or fresh mint)

Steps:

  • Cook peas and onions (according to package directions) until done; drain. Set aside and keep warm.
  • In a medium saucepan, whisk together the cream, sugar, salt & pepper, garlic, tarragon, and flour until smooth.
  • Bring to a boil over medium-high heat; reduce heat to medium and continue to cook, stirring constantly, for three minutes more.
  • Reduce heat to low and add the cooked peas and onions to the cream sauce; stir gently to combine and heat through briefly.
  • Serve immediately with a garnish of sweet cream butter and fresh snipped parsley (or mint).

2 cups shelled fresh peas (3 pounds unshelled)
1 tablespoon finely chopped of fresh mint
4 cups thinly sliced boston lettuce (about 1 small head)
1/4 teaspoon salt
fresh ground pepper

Steps:

  • Heat oil in a large nonstick skillet over medium-low heat.
  • Add peas and stir to coat with oil.
  • Cover and cook, stirring once or twice, until beginning to brown, about 4 minutes.
  • Stir in mint and cook for 30 seconds.
  • Add lettuce, cover and cook, stirring once or twice, until wilted, 1 to 2 minutes.
  • Remove from the heat and season with salt and pepper.

  • Dissolve the baking soda in boiling water. Place the dried marrowfat peas in a bowl and pour the boiling water over them so their covered by at least 3 inches of water. Give the peas a stir then leave them to soak for at least 12 hours.
  • Drain and rinse the peas and place them in a pot with about 3 cups of water. Bring to a boil, cover, reduce the heat to medium-low, and simmer for about 30 minutes, stirring occasionally, or until the desired consistency is reached. Once the peas have fully broken down add the salt. Note: How long you have to simmer the peas will depend on the particular crop and the age of the peas.
  • If the peas are too watery, continue to simmer with the lid off until it thickens to your liking. If the peas are too thick, add a little water. Taste again and add more salt if needed.Once the peas are done they will start to thicken the longer they sit. If reheating them later or the next day, add a little more water.
