CHOCOLATE-COVERED BANANAS



Chocolate-Covered Bananas image

This dessert treat combines the healthy benefits of bananas and chocolate.

8 ounces semisweet chocolate, chopped
6 popsicle sticks or wooden skewers
2 bananas, peeled and cut crosswise into thirds
1/3 cup coarsely chopped salted peanuts

Steps:

  • Place chocolate in a heatproof bowl set over (not in) a pan of gently simmering water. Stir just until melted.
  • Line a baking sheet with waxed paper. Insert a popsicle stick in one end of each banana piece. Dip banana, one piece at a time, in chocolate, spooning on additional chocolate to cover.
  • Sprinkle each banana with peanuts, and set on prepared baking sheet. Refrigerate until chocolate is firm, 20 minutes, or up to 3 days.

4 medium ripe but firm bananas
8 wooden craft sticks
3 tablespoons finely chopped lightly salted peanuts
6 ounces good quality dark chocolate (60 to 70 percent cocoa solids), chopped

Steps:

  • Peel, then cut each banana in half crosswise and insert a craft stick into each half. Place on a tray, cover with plastic wrap and place in the freezer until frozen, about 3 hours.
  • Place the peanuts in a shallow dish or on a plate. Melt the chocolate in the top of a double boiler over slightly simmering water, over the lowest possible heat, stirring frequently. Make sure the water is not touching the bottom of the top pan. Pour the melted chocolate into a tall glass. Dip each frozen banana into the chocolate, turning it to coat, and immediately roll in the peanuts. Place on a tray covered in waxed paper. Serve immediately or wrap individually in plastic wrap or waxed paper and freeze for up to 2 weeks.

1 tub (7 oz.) BAKER'S Milk Chocolate Dipping Chocolate
6 small bananas, peeled, cut crosswise in half
2 cups cocoa sweetened rice cereal

Steps:

  • Melt chocolate as directed on package. Meanwhile, insert a wooden pop stick into cut end of each banana piece.
  • Dip bananas in chocolate, or brush chocolate onto banana pieces with pastry brush. Roll bananas in cereal, completely coating all sides.
  • Freeze bananas 4 hours or until firm. Store in airtight container in freezer.

I first had these down at the beach on a hot summer day. It was the perfect treat to help cool down.

Yield 6 chocolate covered bananas, 6 serving(s)

Number Of Ingredients 8

3 large firm bananas
10 ounces chocolate chips
1 tablespoon vegetable shortening
6 wooden popsicle sticks
chopped peanuts
toasted coconut
miniature M&M baking bits
chopped walnuts

Steps:

  • Cut each Banana in half, so that you are left with 6 short pieces.
  • Place the popsicle stick 2/3 of the way in to the banana.
  • Freeze for 3 hours or overnight (if your in a rush freeze until they are at least firm).
  • In a heat proof bowl combine chocolate and vegetable shortening.
  • Heat a pan of water until it is boiling turn off, place heat bowl on top of pan (double boiler). Stir until chocolate is melted.
  • Working quickly, dip bananas in chocolate, then roll in topping of choice (peanuts are the best).
  • Place bananas back in freezer for at least 30 minutes to firm up again. Serve and enjoy.
