- Place lamb on a greased foil-lined baking sheet. Drape a piece of heavy-duty foil over bones to prevent overbrowning. In a small bowl, combine the honey, preserves, oil and lime juice. Set aside 1/2 cup. Spoon half of the remaining glaze over lamb. , Broil 4-6 in. from the heat for 10-12 minutes or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), basting once with remaining glaze. , Remove lamb from the oven and loosely cover with foil. Let stand for 5 minutes before cutting. Brush with reserved glaze.

- Heat oven to 200C/180C fan/gas 6. Tip the potatoes and onions into a large roasting tin. Scatter over half the ras el hanout, drizzle with 2 tbsp of the oil and toss together until completely coated. Put in the oven for 40 mins to roast, turning everything over once or twice so it cooks evenly.
- Meanwhile, heat 1 tbsp of oil in a frying pan and, one at a time, fry the fat side of the lamb well until dark brown, then remove from the pan. Remove the roasted veg from the oven. Season the lamb fat with the remaining ras el hanout, then drizzle or brush over the molasses. Put the lamb, fat-side up, among the potatoes and return to the oven. Cook for 20 mins for rare, 25 mins for pink and 30 mins for well done. Remove and leave to rest for 10 mins.
- Meanwhile, mix the thyme with the remaining oil and set aside. To serve, either bring the roasting tin to the table, carve the racks into chops and serve the potatoes straight from the pan, or remove the racks, cut them into thick three-boned chops, then spoon some of the potatoes onto each plate and rest a thick chop against them. Drizzle everything with the lemon thyme oil to serve.

- Preheat oven to 350°.
- Dry the lamb with paper towels and place on a rack in a heavy roasting pan.
- In a small bowl, combine all the glaze ingredients; mix well.
- Spoon the glaze evenly over the lamb; pour 2 cups water into the pan.
- Roast the lamb for 1/2 to 1 3/4 hours, or until an instant-read thermometer inserted in the thickest part of the lamb reads 135° for medium-rare (check periodically to make sure there is some liquid in the bottom of the pan and add more water if necessary).
- If you prefer lamb more well don, cook to 140° to 150° for medium.
- Remove the lamb and place on a carving board; let rest for at least 10 minutes.
- Place the roasting pan on top of the stove and add a bit more water; cook over medium heat, stirring to scrape up the browned bits from the bottom of the pan.
- Taste and adjust the seasonings; degrease the pan juices and pour into a gravy boat.
- Care the lamb into thin slices and serve with the juices.

- Place a roasting pan in the oven and preheat to 450 degrees. To make the glaze: combine all ingredients except lemon juice in a small saucepan. Bring to a boil, then simmer for 20 minutes, stirring occasionally. Remove from heat and strain. Stir in the lemon juice.
- To make the lamb: rub the lamb with olive oil and season with salt and pepper. Place in the pan, fatty side down, and roast for 10 minutes. Baste with glaze, turn over and baste the other side. Cook for 10 to 15 minutes, or until a meat thermometer inserted reads 125 degrees. Let stand several minutes before slicing. Serve with extra glaze.

GLAZED ROAST LAMB
My grandmother always makes it for Passover seder. I imagine it would work very well for Easter as well. She clipped the recipe out of some newspaper a decade ago or so. You can used dried herbs if you use 1/3 the amounts of herbs, but it isn't as good.

- Preheat oven to 350°F; oil roasting pan.
- Combine onion, parsley, thyme, rosemary, sage, lemon peel, garlic, and salt. Mix well.
- In a separate bowl, combine honey and lemon juice.
- Place lamb meat side up on a flat surface. Season to taste with salt and pepper. Brush with honey mixture and sprinkle with herb mixture. Roll and tie. Rub roast with honey mixture.
- Place roast on a roasting rack in the oiled pan in the preheated oven, allowing 20 to 25 minutes per pound for medium rare. Brush with honey mixture every 20 minutes. When all the honey mixture is used, brush with the pan drippings.
- Let roast stand for 5 to 10 minutes before carving.
- Add 1/2 cup water and deglaze pan. Thicken if desired and serve with lamb.

- Make red wine sauce:
- Melt 2 tablespoons butter in heavy large pot over medium-high heat. Add onions and carrot and sauté until deep brown, about 12 minutes. Add beef broth and next 4 ingredients; boil 10 minutes to blend flavors.
- Mix flour and 1 tablespoon butter to paste in bowl. Whisk into sauce. Simmer until sauce thickens, whisking occasionally, about 10 minutes. Strain. Set aside.
- Make lamb:
- Preheat oven to 400°F. Whisk honey, soy sauce and mustard in small bowl to blend; add 2 tablespoons glaze to sauce. Sprinkle lamb with salt and pepper. Place on baking sheet. Brush each rack with some of remaining glaze. Roast until thermometer inserted into center of lamb registers 130°F, brushing often with more glaze, about 35 minutes.
- Rewarm sauce. Season with salt and pepper. Cut lamb between bones into chops. Serve chops with sauce.
ROAST LAMB WITH POMEGRANATE GLAZE
This sticky pomegranate glaze roast lamb takes minimal preparation to produce the perfect festive meal and a great alternative to turkey for Christmas dinner!

- Place the lamb in an oven-proof roasting dish. Using a small sharp knife, score the fat of the lamb in a diamond pattern to help the glaze stick to it. Rub the chopped garlic into the meat and fat.
- Mix the cumin, cinnamon, salt and pepper well and use it to season the meat, then mix 2 Tbsp of the pomegranate molasses and water and pour over the meat. Cover with foil and refrigerate for 24 hours.
- Remove the meat from the fridge 1 hour before cooking. Pre-heat the oven to 160C (150C with fan). Chop the onions and scatter in the base of the roasting dish with the lamb, tucking some under the meat as well. Pour over the pomegranate juice.
- Cover the meat tightly with foil and roast for 3 hours, then remove the foil and carefully pour the meaty pomegranate juices from the tin into a large saucepan and add the other 2 Tbsp pomegranate molasses. Increase oven to 220C (200C fan), cover the lamb with foil again and continue cooking for 30 mins while you reduce the glaze.
- Add the other 2 Tbsp of pomegranate molasses to the cooking juices in the saucepan and boil over high heat until the liquid reduces and starts to get sryupy, which could take up to 30 minutes.
- Remove the lamb from the oven and remove the foil. Pour the syrupy pomegranate glaze over the lamb and onions and return to the oven for another 30 mins, uncovered, until the glaze is bubbling and just starting to char.
- Sprinkle 2/3 of the pomegranate arils over the cooked meat and serve with a herby side salad of mint, flat leaf parsley, watercress and the rest of the pomegranate arils.
POMEGRANATE GLAZED LAMB LOLLIPOPS WITH FETA TZATZIKI

- Whisk the pomegranate juice and cornstarch in a small saucepan. Add the sugar, honey and mustard and whisk to combine. Bring to a simmer over medium heat. Simmer until thickened to the consistency of barbecue sauce, 6 to 8 minutes. Season to taste. Let cool for 30 minutes. The glaze can be made ahead of time and stored in the fridge for up to 2 weeks.
- Place the lamb chops in a large zipper-top bag. Pour half of the glaze into the bag and let the lamb marinate at room temperature for 1 hour. Reserve the remaining glaze to coat the lamb chops on the grill.
- Preheat a grill or grill pan over medium-high heat and liberally oil the grates.
- Take the chops out of the bag and place them on a paper towel-lined tray or plate to wipe off any excess marinade to ensure a nice crust. Season the chops with salt and pepper on both sides. Place the chops on the grill until charred in spots, 3 to 4 minutes. Flip, baste liberally with the glaze and grill for another 3 or 4 minutes or until the internal temperature hits 135 degrees F on a meat thermometer.
- Baste the chops with the glaze again, then remove them from the grill. Coat one side in the chopped pistachios for an added crunch. Serve with a nice schmear of the feta tzatziki and garnish with some fresh mint.
- Grate the cucumber on the large holes of a box grater and place in a fine-mesh strainer or piece of cheesecloth fitted over a bowl. Salt the cucumber and let sit for 10 minutes. Then squeeze out any excess moisture. Put the strained cucumber into a bowl. Add the yogurt, feta, lemon juice, mint, honey and garlic. Season to taste with salt and pepper.
MAPLE & CHILLI-GLAZED LEG OF LAMB

- Lay the butterflied lamb leg on a board and use a sharp knife to prick about 20 holes all over the skin side. Press the rosemary sprigs deep into the holes, then season all over.
- To make the glaze, tip all of the ingredients into a small saucepan, reserving a few sliced chillies, and bring to the boil. Stir to combine, then remove from the heat and set aside. Light the barbecue. It's ready when the coals are ashen and you can hold your hand 5cm above the grill for at least 5 seconds.
- Lay the lamb skin-side down on the grill and cook for 10 mins. Turn over using tongs and cook for 10 mins more. Repeat this two more times for 5 mins on each side so the lamb cooks for a total of 30 mins. Baste with the glaze, turn the lamb again and keep basting for another 10 mins until deep brown and sticky. Remove to a board, cover loosely and leave to rest for 20 mins. Carve into thin slices to serve, then scatter over the reserved sliced chillies.

- First make the Cumberland glaze. Pare the rind off the orange and lemon with a potato peeler, leaving behind the white pith. Stack the strips and slice diagonally into thin slivers about 2cm long. In a medium pan of boiling water, cook the zest and shallot for 2 minutes. Drain.
- Halve and juice the orange and lemon, and pour into the saucepan, adding the remaining ingredients and the blanched zest and shallot. Bring to the boil, stirring well, then bubble, uncovered, for 15-20 minutes until syrupy. Transfer to a bowl, cover and leave to cool. The sauce will thicken as it cools but will still be a pourable consistency.
- Preheat the oven to 220°C, fan 200°C, gas 7. Calculate the cooking time of your joint at 33 minutes per kg, plus 15 minutes – so about 1 hour for a joint this size. Make cuts all over the top of the lamb using a sharp knife and push a sliver of garlic into each one. Arrange the onion in the centre of a roasting tin that will hold the lamb snugly, and drizzle over a little oil. Season the lamb all over and put it, fat-side up, on top of the onion, so the onion is tucked underneath and hidden from view.
- Pour 1cm of water into the pan. Drizzle a little oil over the lamb and roast for the appropriate time. Baste every 30 minutes, adding more water as necessary; at no time should the pan dry out. This is to stop the onions burning, and to provide the basis of the gravy. By the end you should have plenty of golden juices to call on.
