Bacon-Wrapped Meatloaf with Brown Sugar-Ketchup Glaze image

1/4 cup ketchup or chili sauce
2 tablespoons light or dark brown sugar
2 teaspoons cider or white vinegar
2 teaspoons vegetable oil
1 medium onion, chopped
2 garlic cloves, minced
2 large eggs
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon ground black paper
2 teaspoons Dijon mustard
2 teaspoons Worchestershire sauce
1/4 teaspoon hot red pepper sauce
1/2 up milk, buttermilk or low-fat plain yogurt
2 pounds meat-loaf mix (2 parts ground chuck, 1 part ground veal, 1 part ground pork)
2/3 cups crushed saltine crackers (about 16) or quick oatmeal or 1 1/3 cups fresh bread crumbs
1/3 cup minced parsley
6 ounces thin-sliced bacon

Steps:

  • For the glaze: Mix all ingredients in a small bowl; set aside.
  • For the meatloaf: Preheat oven to 350 degrees. Heat oil in a medium skillet. Add onion and garlic, saute until softened, about 5 minutes; set aside to cool.
  • Mix eggs with thyme, salt, pepper, mustard, Worchestershire, pepper sauce, and milk or yogurt. Add egg mixture to meat in a large bowl, along with crackers, oatmeal or bread crumbs, parsley and cook onions and garlic; mix with a fork until evenly blended and meat mixture does not stick to bowl. (If mixture does stick, add additional milk, a couple tablespoons at a time, and continue stirring until mixture stops sticking.)
  • Turn meat mixture onto a work surface. With wet hands, pat mixture into a loaf approximately 9 by 5 inches.
  • Cover a wire rack with foil; prick foil in several places with a fork. Place a rack on a shallow roasting pan lined with foil for easy cleanup.
  • Set formed loaf on rack. Brush loaf with all of glaze, then arrange bacon slices, crosswise, over loaf, overlapping them slightly and tucking them under to prevent curling.
  • Bake loaf until bacon is crisp and loaf registers 160 degrees, about 1 hour. Cool for at least 20 minutes. Slice and serve

5 slices bacon
1 stalk celery, diced
1 cup fine bread crumbs
1 cup milk
3 eggs
1 teaspoon Worcestershire sauce
1 teaspoon ground black pepper
½ teaspoon onion powder
1 pound ground beef
1 pound ground pork
⅓ cup ketchup
3 tablespoons brown sugar
1 tablespoon dry mustard
½ teaspoon Worcestershire sauce

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels.
  • Heat remaining bacon grease over medium-high heat. Saute celery in hot grease until soft but not browned, about 5 minutes. Set aside.
  • Combine bread crumbs, milk, eggs, 1 teaspoon Worcestershire sauce, black pepper, onion powder, and sauteed celery in a large bowl. Mix well.
  • Crumble beef and pork into egg mixture and mix together using your hands, making sure not to overmix. Form into a loaf and place into the prepared loaf pan. Place the bacon slices along the top of the loaf long-ways.
  • Bake in the preheated oven on the middle rack for 30 minutes.
  • While the meat is cooking, combine ketchup, brown sugar, dry mustard, and Worcestershire for glaze in a small bowl; mix well.
  • Remove loaf from the oven and drain any fat bubbling around edges and on top. Return to the oven and continue to bake for 25 minutes more. Remove once more, drain fat again, and spoon or brush glaze mixture evenly over the top. Increase oven temperature to 400 degrees F (200 degrees C).
  • Return loaf to the preheated oven and continue to bake until no longer pink in the center, about 20 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Let sit for at least 10 minutes before cutting and serving.

3/4 cup clover honey
2 tablespoons ancho chile powder
3/4 cup sorghum syrup
3/4 cup packed light brown sugar
1/3 cup finely chopped pecans

Steps:

  • Preheat the oven to 400 degrees F.
  • For the red chile-honey glaze: Lay the bacon in a single layer on a sheet pan, keeping space in between each slice. Place bacon in pan and bake until lightly browned and crisp, 15 to 20 minutes. While the bacon is cooking, whisk together the clover honey and ancho chile powder in a medium bowl until smooth. Remove the bacon from the oven, using mitts, and carefully drain the fat, tipping the pan, into a medium bowl. Blot the top of the bacon with a few paper towels. Place the sheet pan with the bacon on it on a cooling rack and immediately brush each slice with the glaze.
  • For the sorghum glaze: Lay the bacon in a single layer on a sheet pan, keeping space in between each slice. Place bacon in pan and bake until lightly browned and crisp, 15 to 20 minutes. Remove the bacon from the oven, using mitts, and carefully drain the fat, tipping the pan, into a medium bowl. Blot the top of the bacon with a few paper towels. Remove from the oven and sprinkle with the finely chopped pecans, return to the oven and continue baking until pecans are toasted and bacon is crispy, about 3 minutes longer.
  • Let sit at room temperature for 10 minutes.

Betty Groff, the home cook turned proprietor of Groff's Farm Restaurant, once said that there were only two authentic American cuisines: Pennsylvania Dutch and Creole. Her brown-sugar-glazed bacon represents the former, and she occasionally served it as an hors d'oeuvre at her restaurant, which she started in her family's 1756 Pennsylvania Dutch farmhouse in Mount Joy in the late 1950s. The restaurant became a place of pilgrimage for food lovers, among them Craig Claiborne, who wrote an article about it in The New York Times in 1965. This recipe, which Ms. Groff said "will amaze every guest," serves six, but she noted that you can easily scale it up to serve 30, or possibly more.

  • Heat oven to 350 degrees. Line a baking pan with foil; it should be large enough to hold the bacon in a single layer. Place bacon in pan and bake until lightly browned and crisp, 15 to 20 minutes. While bacon cooks, mix remaining ingredients together.

3 slices white bread, crust trimmed and then torn into small pieces
12 ounces bacon, chopped into half-inch pieces
1 cup celery, finely chopped
1 cup parsley, finely chopped
1/2 cup onion, finely chopped
1/3 cup no-salt-added ketchup
4 cloves garlic, minced
3 tablespoons low-sodium worcestershire sauce
1/4 teaspoon Dijon mustard
1/8 teaspoon dried basil
1/8 teaspoon dried thyme
1 pinch nutmeg
salt and fresh pepper, to taste
24 ounces lean ground beef
2 fluid ounces no-added-salt tomato paste
1 tablespoon olive oil
1/4 teaspoon sugar

Steps:

  • In a large bowl, beat together the eggs and milk.
  • Add the torn bread and let it absorb the liquid for about 15 minutes.
  • Meanwhile, cook the bacon until most but not all of the fat is rendered.
  • Drain the bacon and set it aside to cool.
  • Stir the bread mixture with a fork to blend.

I found this recipe in a site promoting the other white meat. Balsamic vinegar combines with a touch of brown sugar to make a delectable glaze for this pork.. A quick browning gives the pork color and seals in the juices for a more tender dish. This recipe is simple and very tasty both hot or cold.I made 2 so I can have leftovers. Add baby potatoes to your pan and you will get these great roasted potatoes.

1 1/2 lbs pork tenderloin
1 teaspoon olive oil
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1/3 cup balsamic vinegar
1/2 teaspoon crushed garlic

Steps:

  • Preheat oven to 375°F.
  • Rinse pork under cool running water. Trim excess fat. Season with salt and pepper.
  • Heat a large skillet over medium-high heat; place pork in skillet. Sear each side to brown entire surface. Remove meat from pan; set aside on a warm plate.

I came home to the aromas of this delicious meatloaf filling the air. DH spotted the recipe and made it for dinner. He substituted shallots for the leek and although he scaled back the oregano & thyme, we will scale back further next time. The glaze is amazing! I would suggest using the chili sauce. Prep & cooking time does not include 15 minute. resting time before slicing. Use the tip of a sharp knife to start your slicing. 1 tablespoon Dijon mustard

Steps:

  • Heat oven to 350 degrees.
  • Soak mushrooms in wine until tender, about 15 minutes. Strain wine into a large bowl; finely chop mushrooms; add to the bowl.
  • Cook bacon in a large skillet over medium heat until it starts to soften, about 5 minutes. Stir in celery and leek. Cook until tender, about 6 minutes. Stir mixture into mushrooms. Cool.
  • Stir in eggs, breadcrumbs, mustard, salt, thyme, pepper and oregano. Mix well. Add the meat; use clean hands to gently incorporate the seasonings into the meat. Gently pack the mixture into a 9-by-5-inch loaf pan, pressing down a bit to remove any air pockets.
  • Bake for 1 hour. Remove from oven to top with glaze.
  • For the glaze: mix the chili sauce and mustard.
  • Generously coat the loaf with the glaze; Return to oven and continue baking until the internal temperature registers 150 degrees on an instant read thermometer, about 20 minutes more.
  • Let rest 15 minutes before slicing.
  • Serve with mashed potatoes and brown gravy. I made a packet of Knoors Brown gravy mix.
