Ham dressed in pineapple rings and maraschino cherries is a holiday classic, burnished with a glossy glaze made with pineapple juice, honey and brown sugar. If you like sweet and salty, you'll love this show-stopping centerpiece!

One 9- to 10-pound bone-in fully-cooked smoked ham (butt or shank half)
1 tablespoon whole cloves, optional
Two 20-ounce cans sliced pineapple
20 maraschino cherries
2 cups honey
2 cups light brown sugar

Steps:

  • Let the ham sit at room temperature for about 30 minutes.
  • Preheat the oven to 325 degrees F.
  • Trim off any skin from the ham. Use a sharp paring knife to score through the fat in a diagonal crosshatch pattern without cutting through to the meat. Push the cloves into the ham, if using, placing them at the intersections of the cuts. Put the ham, flat-side down, on a rack in a roasting pan.
  • Drain the pineapples, reserving the juice. Arrange the sliced pineapple all over the ham, securing with toothpicks. Add a maraschino cherry to the center of each pineapple slice and secure with a toothpick.
  • Pour 1/4 inch water in the bottom of the pan and tent the ham with foil.
  • Roast until an instant-read thermometer inserted in the thickest part of the ham (avoiding bone) registers 130 degrees F, about 2 hours 30 minutes (or about 15 minutes per pound).
  • Meanwhile, combine the honey, brown sugar and reserved pineapple juice in a large saucepan set over medium heat. Simmer, stirring occasionally, until thickened, syrupy and reduced to about 3 cups, 25 to 30 minutes. Set aside.
  • Increase the oven temperature to 425 degrees F.
  • Uncover the pan and carefully brush a third of the glaze all over the ham. If the water in the roasting pan has evaporated, add more. Bake the ham for 15 minutes more. Brush with another third of the glaze and bake for 15 minutes more. Brush the remaining glaze over the ham and cook until the glaze is shiny and the skin is dark golden brown and crispy, about 15 minutes more. Let rest for 15 minutes.

GLAZE/SAUCE:
2 tablespoons cornstarch
1/4 cup cold water
2-1/2 cups packed dark brown sugar, divided

1/4 cup lemon juice
2 tablespoons Dijon mustard
1/4 teaspoon salt
1 cup packed light brown sugar

  • Preheat oven to 325°. Place ham on a rack in a shallow roasting pan. Using a sharp knife, score surface of ham with 1/4-in.-deep cuts in a diamond pattern; insert a clove in each diamond. Cover and bake 2 to 2-1/2 hours or until a thermometer reaches 130°., Meanwhile, in a large saucepan, dissolve cornstarch in water; stir in 2 cups dark brown sugar, pineapple, lemon juice, mustard and salt. Bring to a boil over medium-high heat; cook and stir 1-2 minutes or until slightly thickened. Reserve 2 cups for sauce; keep warm., Remove ham from oven. Increase oven setting to 425°. You can use a 14-pound bone-in ham also, and you can use more pineapple rings and maraschino cherries if desired to cover ham. A bone-in ham has just about the same amount of meat on it as a 7-8 boneless pound ham, as the bone accounts for about 4 pounds of the weight. This recipe can be made with both a bone-in or boneless ham. Stay close to the oven as this ham must be basted every 20 minutes. The cooking time is estimated depending on the size of ham, and also depends if you are cooking a bone-in or boneless ham, always check the weight on the package wrap and adjust the cooking time to that weight. The pineapple basting sauce can be made a day ahead and reheated before adding it into the roasting pan.

4 cups pineapple juice
fresh ginger (cut into about a 1-inch piece and sliced)
5 garlic cloves, coarsley chopped
15 -20 whole cloves (use as many as you need)
1/4 cup Dijon mustard (Dijon mustard only for this!)
1 1/4 cups light brown sugar
10 pineapple rings
10 maraschino cherries

Steps:

  • In a saucepan combine the pineapple juice, ginger slices and garlic; bring to a boil, reduce heat to medium-low and simmer for 30 minutes (reducing the liquid to about 2 cups).
  • Strain and reserve all liquid through a fine strainer.
  • Set oven to 350 degrees F.
  • Trim the thick rind with fat, but leave about 1/4-inch fat from the surface of the ham.
  • With a very sharp knife, "score" a diamond pattern all over the ham, then insert the whole cloves at the crossed points of the diamonds.
  • Set the ham in a shallow baking pan.
  • Brush the mustard all over the top.
  • Pat the sugar into the top of the mustard, pushing it in with a spoon or your hands.
  • Starting at the butt end, and working towards the bone, decoratively arrange the pineapple rings securing with whole cherrries and toothpicks in the centers.
  • Pour the reserved pineapple juice into the bottom of the pan and place in the oven.
  • Bake for about 1-1/2 hours, basting about every 15-20 minutes (the cooking time might take longer depending on the weight of the ham).
  • When ham is cooked, place it on a fancy serving platter and let it rest for 10-15 minutes.
  • Carve into thin slices, preferably with an electric knife, beginning with the butt end.
  • Serve warm with the sauce from the pan in a serving cup.
  • Remove the pineapple slices and cherries as you slice the ham.
  • Delicious!

2 cans pineapple slices in heavy syrup
1 1/2 package s dark brown sugar

Steps:

  • 1. Open and remove ham from package and rinse. Put in large zipper sealed gallon plastic bag.
  • 2. In large bowl combine syrup from pineapples (reserve pineapple slices for baking) and brown sugar. Mix should be very thick. Add mix to bag with ham and marinate in fridge overnight.
  • 3. To Bake: Preheat oven to 350 degrees F. Place ham and mix into a large baking pan with deep sides to avoid spillage in oven. Place pineapple slices on ham so they overlap each other and pile on top what's left.
  • 4. Cover with aluminum foil and bake for 1 hour. Take off foil and bake an additional 20 minutes. Remove pineapples and serve separately. Very tasty. Slice ham for serving.

1 cup brown sugar
1 (10 ounce) can crushed pineapple
2 tablespoons lemon juice
1 tablespoon dry mustard or 1 tablespoon prepared mustard
1 tablespoon cornstarch
1/4 teaspoon salt

Steps:

  • Place all ingredients in a small saucepan including the juice/syrup from the pineapple.
  • Turn heat on to medium and stir constantly to prevent burning.
  • Continue to heat until mixture thickens and comes to a boil.
  • Allow mixture to boil for approximately 1 minute.
  • If mixture refuses to thicken, add more cornstarch- a little at a time.
  • (Be sure to mix your cornstarch with a little cold water in a cup to make a smooth liquidified mixture before adding it to the hot sauce.) Pour finished sauce into a serving bowl, complete with a ladle, and let your guests pour it over baked sliced ham.

2 onions, quartered
3 qt pineapple juice
2 teaspoons dijon mustard
½ cup pineapple juice
½ cup maple syrup
25 cloves

Steps:

  • Place the gammon joint in a large pot and add the onions and pineapple juice. Bring to a boil over high heat.
  • Once boiling, reduce the heat to medium, cover, and simmer for 70 minutes. (Gammon joints need to cook for 40 minutes per kilo (2 ¼ lbs), so if you are using a smaller or large gammon joint, adjust the cooking time accordingly.)
  • Once cooked, carefully remove the gammon joint from the pan and place on a baking sheet to cool slightly.
  • Preheat the oven to 375°F (190°C).
  • Make the glaze: in a small pan over a medium heat, combine the Dijon mustard, pineapple juice, and maple syrup and bring to a boil. Cook for 10 minutes, or until slightly reduced and glossy.
  • Carefully remove the skin from the gammon joint, using a small paring knife to help ease the fat away from the skin. Be sure to leave a small layer of fat on top of the gammon.
  • Score the fat in a diamond pattern and push a clove into each cross section.
  • Liberally brush the gammon joint with the glaze, making sure to reserve at least half of the glaze.
  • Roast the gammon joint for 40 minutes, glazing again halfway through.
  • Carve and serve.

1 fresh pineapple
2 (6 ounce) cans pineapple juice
1 cup brown sugar

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Place the ham, cut side down, into a roasting pan.
  • Cut the skin off the pineapple with a sharp knife and cut out any brown spots of skin left behind. Slice the pineapple into 1/2-inch slices and cut the cores out of the slices. Pin the slices onto the ham with toothpicks.

1/2 pineapple, peeled, sliced into rings
1 large orange, sliced into thick rounds
1 (10-lb.) cured smoked bone-in ham or 6-lb. cured boneless ham
3 cups pineapple juice
1/2 cup apple cider vinegar
1/2 cup (packed) light brown sugar
1/4 cup hot sauce
Maraschino cherries (for serving)

Steps:

  • Preheat oven to 300°F. Stack 2-3 sheets of foil ample enough to cover ham on a work surface and arrange pineapple and orange slices on top in a single layer. Set ham on fruit (if using a bone-in ham and it has a fat cap, score very lightly, making cuts about 3/4" apart) and wrap up tightly. Transfer to a wire rack set inside a large rimmed baking sheet and bake until an instant-read thermometer inserted into the thickest part of ham registers 115°F, 3-3 1/2 hours for boneless, 3 1/2-4 hours for bone-in.
  • Meanwhile, bring pineapple juice, vinegar, brown sugar, and hot sauce to a boil in a large saucepan. Reduce heat; simmer, swirling occasionally, until thick enough to coat a spoon. Keep warm.
  • Remove ham from oven and increase oven temperature to 425°F. Unwrap ham, peeling back the foil so it covers the baking sheet (this will make for easy cleanup). Once oven is at 425°F, baste ham with warm glaze and return to oven. Bake, brushing with more glaze every 3 minutes or so, until glaze is deeply browned and thermometer registers 125°F, 12-15 minutes. Carefully transfer ham to a cutting board and let rest 30-60 minutes before slicing.
  • While ham is resting, roast fruit, spooning juices over from time to time, until deeply browned, 20-25 minutes.
  • Serve ham with roasted fruit and cherries alongside.
