- Combine chipotle powder, garlic powder, cinnamon, and onion powder in a small bowl.
- Pat pineapple rings dry.
- Heat 1 teaspoon olive oil in a large, nonstick saucepan over medium-high heat. Add pineapple rings and red onion; sprinkle with 3 tablespoons reserved pineapple juice and brown sugar. Cook until pineapple is lightly browned, about 3 minutes per side. Transfer pineapple-onion mixture to a plate.
- Pat pork chops dry and lightly season both sides with salt and pepper.
- Heat remaining 2 teaspoons oil in the same saucepan over medium-high heat; swirl to coat pan. Add chops; cook until bottom is browned, about 3 minutes. Flip and sprinkle the chipotle mixture on top. Cook until other side is browned, about 3 minutes. Continue flipping and cooking until no longer pink in the center, 3 to 5 minutes more. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).
- Transfer chops onto a plate and top with the pineapple-onion mixture. Sprinkle goat cheese on top.

- Preheat oven to 400F (200C).
- In a large measuring cup or bowl, whisk together pineapple juice, honey, brown sugar, vinegar, a pinch of salt, and a pinch of pepper.
- Season pork chops with salt and pepper on both sides.
- Heat about 2 teaspoons of olive oil in a large oven-proof skillet over medium-high heat for 1-2 minutes. Swirl to coat the pan. Add garlic and cook, stirring constantly, for about 1 more minute.
- Add chops to the skillet and sear on both sides until brown (about 2-3 minutes per side). Remove chops to a plate and set aside.
- Pour off fat from the pan. Add pineapple juice mixture to the pan and simmer over high heat for about 6-10 minutes, or until the glaze is reduced to about 1 cup. I like to use a wooden spoon to scrape up the bits from the bottom of the pan as I occasionally stir, which gives the glaze so much great flavor!
- Add pork chops back to the skillet with the glaze, toss to coat, and place entire skillet in the oven. Bake chops for approximately 6-10 minutes (depending on the thickness of the chops) or until meat is cooked through (reaching an internal temperature of 145 degrees).
- Allow the meat to rest for about 3-5 minutes and then garnish with fresh parsley just before serving.

Steps:
- Mix together the drained pineapple juice, brown sugar, soy sauce, and garlic powder together in a large plastic zipper bag, and smush the bag a few times with your hands to mix the marinade and dissolve the sugar. Place the pork chops into the marinade, squeeze out any air in the bag, seal it, and refrigerate overnight. Reserve the pineapple rings.
- Preheat an outdoor grill for medium heat, and lightly oil the grate.
- Remove the chops from the marinade, shaking off excess, and grill until browned, the meat is no longer pink inside, and the meat shows good grill marks, 5 to 8 minutes per side. Brush several times with marinade and let the marinade cook onto the surface of the meat. Discard excess marinade. CHERRY GLAZED PORK CHOPS WITH SMASHED POTATOES

- Position an oven rack 5 to 6 inches below the heat source and preheat the broiler to high.
- Pierce the potatoes all over with a fork. Put the potatoes on a microwave-safe plate with 2 tablespoons water and cover tightly with plastic wrap. Microwave until tender, about 10 minutes. Let cool 5 minutes.
- Carefully uncover, drain the potatoes and transfer them to a baking sheet. Top with 2 tablespoons olive oil and half the chopped thyme. Sprinkle with salt and pepper and toss to coat. Smash each potato by pressing down with a metal spatula until it flattens. Set aside.
- Heat 2 tablespoons olive oil in a large ovenproof nonstick skillet over medium-high heat. Pat the pork chops dry with paper towels and sprinkle both sides with salt and pepper. Sear until golden brown on one side, about 2 minutes, then flip and cook until golden brown on the second side, about 2 minutes more (the pork chops will not be cooked through at this point). Transfer to a plate.
- Reduce the heat to medium. Add the shallot, dried cherries and the remaining thyme and cook until softened, about 3 minutes. Add 1/4 cup balsamic vinegar and 1/4 cup water and simmer until slightly thickened, about 3 minutes. Stir in the cherry jam and season to taste with salt and pepper. Remove from the heat.
- Transfer 2 tablespoons of the glaze and the remaining 2 tablespoons balsamic vinegar to a large bowl and whisk to combine. Slowly whisk in the remaining 3 tablespoons olive oil to make a vinaigrette. Set aside.
- Broil the potatoes until warm and golden, about 5 minutes. Set aside.
- Stir 2 tablespoons water into the remaining glaze in the skillet and bring to a simmer over high heat. Add the pork chops and any juices that have accumulated on the plate and turn over several times to coat with glaze. Return the pan to the oven and broil until the glaze is bubbly and thick and the pork chops are cooked through, about 2 minutes. (The pork chops should reach an internal temperature of 145 degrees F when measured with an instant-read thermometer.)
- Meanwhile, add the salad greens to the bowl with the dressing and toss to coat. Transfer the pork chops to a serving dish and pour the remaining glaze on top. Serve with the smashed potatoes and salad.

- Heat the oil in a large, non-stick frying pan over medium-high heat. Add the pork chops and sear for 4-5 minutes, or until golden on one side.

- Flip the chops over then pour the pineapple sauce into the pan. - In a large plastic Ziploc bag mix together the drained pineapple juice, brown sugar, soy sauce, garlic powder, ginger powder and black pepper. Smush the bag with your hands to dissolve the sugar. Reserve 1/2 c. marinade and set aside for basting.
- Place the pork chops into the marinade. Squeeze out any air in bag, seal and place in refrigerator overnight or at least 4 hours. Reserve the pineapple rings.
- Preheat grill to 350 degree F. Rub grates with oil.
- Remove pork chops from marinade. Shake off excess. Place on grill and grill 5-8 minute per side. Brush with reserved marinated several times while grilling.
- While pork is grilling place pineapple rings onto the grill and allow to cook until hot and the slices show grill marks then remove from grill.
- Remove pork chops from grill when internal temperature reaches 145 degrees F. Cover with tinfoil and let rest 10-15 minutes. Then top with pineapple slices and serve.

- Drain pineapple and reserve juice. Add water to reserved juice to make 1 cup.
- Salt and pepper pork chops to taste.
- In a small sauce pan combine pineapple juice mixed with water, brown sugar and mustard, bring to a light boil.
- Combine cornstarch with 1/4 cup water until smooth.
- Reduce heat and stir in lemon juice, Worcestershire sauce and cornstarch mixture. Simmer for 3 minutes until thick, stirring constantly.
- Brush sauce on pork chops (or chicken breasts if desired) and place on a prepared grill or in a hot grill pan.
- Brown pork chops for 4 minutes on each side, brush on more sauce and top with pineapple rings.

- In a medium sized bowl combine pineapple juice, soy sauce, olive or vegetable oil, rice vinegar, ginger, and brown sugar. Set aside.
- Wash and cut slices into the side of each pork chop with the fat and silver skin along the edge. This stops the pork chops from curling. Make cuts every 1 1/2 to 2 inches along that edge. The cuts should be no more than 1/2 an inch deep.
- Dry pork chops with paper towels and sprinkle both sides with salt and pepper.
- Heat about 2 tablespoons of oil in a large skillet over medium to medium-high heat until shimmering or a drop of water flicked in it dances.
- Add pork chops and cook until well browned on the first side, between 6 and 8 minutes, and then flip.
- Add pineapple mixture.
- Turn heat down to medium low and cook for about another 8 minutes, it may be more, cooking time will depend on the thickness of your pork chops. Your pork chops should be 145 degrees before they are cooked.
- Once they are that temperature remove them from your skillet and place them on a plate. Tent or cover loosely with foil.
- Simmer the glaze that remains in the pan until it thickens, almost the consistency of syrup.
- When this happens remove from heat, turn your element off and add sesame oil.
- Return pork chops back into your skillet, with any accumulated juices, and adjust to coat.
- Serve immediately and enjoy!
