What is it? Fry sauce is commonly found in Utah, southern Idaho, and rural Oregon...I am trying to spread the word! This is an amazing recipe and after tasting this you will NEVER again settle for plain ketchup with fries.

1 cup mayonnaise
2 tablespoons mayonnaise
¼ cup white sugar
½ teaspoon salt
⅛ teaspoon paprika
¼ teaspoon ground mustard
½ teaspoon onion powder
½ cup ketchup
2 tablespoons red wine vinegar
1 ½ teaspoons Worcestershire sauce

Steps:

  • Whisk together 1 cup mayonnaise plus 2 tablespoons mayonnaise, sugar, salt, paprika, ground mustard, and onion powder until smooth. Stir in the ketchup, vinegar, and Worcestershire sauce until well blended. Cover and refrigerate until chilled, about 30 minutes. Store covered in refrigerator.

1 lb small baking potato
2 teaspoons extra virgin olive oil
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/4 teaspoon salt
1/8 teaspoon fresh ground black pepper

Steps:

  • Preheat the oven to 425°F Coat a heavy baking sheet with cooking spray.
  • Cut each potato in half crosswise. Place the halves cut side down on the cutting board and cut each into 4 wedges. Place the potatoes in a mound on the prepared baking sheet.
  • In a cup, mix the oil, thyme, rosemary, salt, and pepper. Pour over the potato wedges and toss to mix well. Spread the potatoes out on the sheet.
  • Bake, stirring 2 or 3 times, until tender and lightly browned, about 35 minutes. Serve hot.

1 idaho potato
2 -3 tablespoons olive oil
1 -2 tablespoon chopped fresh rosemary
salt, sprinkled

Steps:

  • Preheat oven to 375°.
  • Peel potatoes and slice thick fries.
  • Blot slices dry with paper towels.
  • Toss slices with the olive oil, rosemary and salt.
  • Roast fries on a baking sheet with sides.
  • Stir occasionally until cooked through and browned lightly, 30-35 minutes.

4 idaho potatoes, scrubbed
1 tablespoon olive oil or 1 tablespoon vegetable oil
1/4 teaspoon salt
1 teaspoon fresh ground pepper
2 tablespoons malt vinegar or 2 tablespoons white vinegar

Steps:

  • Adjust the oven rack to the lowest position in the oven.
  • Preheat the oven to 450.
  • Cut the potatoes lengthwise into eighths to form wedges.
  • Toss the potatoes with the oil on a heavy baking sheet or jelly roll pan, and arrange them in a flat single layer.
  • Bake the potatoes without turning, until the bottoms are deep golden, and crisp, 20 minutes, turn the potatoes to the opposite cut side.
  • Bake 10 minutes more until crisp.
  • Remove from oven sprinkle with salt and pepper, then the vinegar.
  • You can serve the vinegar in a bowl like a dip.
