1/2 cup ketchup
1/4 cup packed brown sugar
1/4 cup white vinegar
1/4 cup orange juice
1/4 cup Worcestershire sauce
2 garlic cloves, minced
1/2 teaspoon dried rosemary, crushed
8 bone-in pork loin chops (3/4 inch thick and 7 ounces each)

Steps:

  • In a small bowl, mix the first seven ingredients. Pour 3/4 cup marinade into a large bowl. Add pork chops; turn to coat. Cover and refrigerate 8 hours or overnight. Cover and refrigerate remaining marinade., Drain pork, discarding marinade in bowl. Lightly grease the grill rack. , Grill pork, covered, over medium heat or broil 4 in. from heat until a thermometer reads 145°, 4-6 minutes on each side; brush generously with remaining marinade during the last 3 minutes. Let stand 5 minutes before serving.

6 tablespoons maple syrup
6 tablespoons balsamic vinegar
3/4 teaspoon salt
3/4 teaspoon coarsely ground pepper
4 boneless pork loin chops (1-1/2 inch thick and 12 ounces each)

Steps:

  • In a small bowl, whisk syrup, vinegar, salt and pepper until blended. Pour 1/2 cup marinade into a shallow bowl. Add pork chops; turn to coat. Cover and refrigerate 1 hour. 1/4 cup honey
1 tablespoon vegetable oil, plus extra for grill
1 lime, juiced
1 teaspoon red pepper flakes
8 thinly cut (about 1/2-inch thick) smoked pork chops

Steps:

  • Preheat a grill pan to medium-high.
  • In a plastic resealable bag, big enough to fit the chops, mix together the sugar, honey, oil, lime juice, and red pepper flakes. Add the pork chops and let marinate for at least 20 minutes.
  • Remove the pork from the marinade. Lightly brush the grill with oil. Put the chops on the grill and cook until grill marks form, about 2 minutes. 2 tablespoons dark brown sugar, or to taste
1 cup ketchup
1 cup mayonnaise
½ cup prepared yellow mustard
¼ cup Worcestershire sauce
1 teaspoon chili powder
⅛ teaspoon ground cayenne pepper
6 (3/4 inch thick) pork chops

Steps:

  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Place the brown sugar, ketchup, mayonnaise, yellow mustard, Worcestershire sauce, chili powder, and cayenne pepper into a bowl, and stir until blended.
  • Place the pork chops on the preheated grill, and cook the chops until the surface is seared but the meat is just barely pink in the middle, about 5 minutes. Brush the chops with the glaze mixture, and flip to cook the glaze onto the meat. When the glazed side shows good grill marks, flip again, brush glaze onto the pork chops, flip, and grill until the other side shows nice brown grill marks. An instant-read thermometer inserted into the center of a chop should read 145 degrees F (63 degrees C).

1/3 cup olive oil
2 (12 to 16-ounce) bone-in pork loin chops
Salt and freshly ground pepper
2 pinches crushed red pepper flakes
1 cup maple syrup

Steps:

  • Preheat oven to 500 degrees F.
  • In a large oven-safe saute pan over high heat, heat the olive oil until oil ripples. Season pork chops on both sides with salt and pepper and crushed red pepper flakes. Sear the chops, presentation side down, until browned. Then flip and cook until the other side is browned. If the chops are more than 2 inches thick, sear them on the sides as well, using tongs to hold them.
  • Once a uniform sear is achieved, remove the pan from the heat and pour the syrup over the chops. Cook in the oven for 20 to 25 minutes or until firm to the touch. A meat thermometer should register 150 degrees F.
  • When fully cooked, remove the pan from oven and place it over a burner on high heat for a minute to thicken the glaze. Flip the chops so they are evenly coated and serve immediately.

1 cup peach preserves (can use any other drupe-type fruit preserves)
1/4 cup red wine vinegar
1/2 teaspoon fresh thyme, minced or 1/4 teaspoon dried thyme, rubbed
1/8 teaspoon cayenne pepper, ground or 1/8 teaspoon dried pepper, any type ground
1 (16 ounce) bag frozen sliced peaches (or same type of drupe fruit as preserves above)
1 teaspoon Dijon mustard
4 pork rib chops or 4 center-cut pork chops
salt and pepper

Steps:

  • Simmer preserves, vinegar, thyme, and cayenne in saucepan over medium heat until reduced to 1 cup, about 3 (three) minutes. Reserve 1/4 cup mixture as glaze for chops. Add peaches to saucepan with remaining mixture and simmer over low heat until peaches are soft and mixture is slightly thickened, about 10 (ten) minutes. Remove from heat, stir in mustard. Cover and keep warm.
  • Season pork with salt and pepper and grill over hot fire approximately 6 (six) minutes per side. Brush with reserved glaze and cook 1 (one) minute longer, per side. Transfer to platter and let rest 5 (five) minutes, to allow internal juices to redistribute. Pour sliced peach mixture over chops and serve.

2 cups water
1 tablespoons salt
2 tablespoons apricot jam
1 teaspoon balsamic vinegar
1 teaspoon olive oil

Steps:

  • Start with a brine of 2 cups cold water and one tablespoon salt. You can add other things to the brine if you want. Add pork chops and refrigerate for 1-2 hours.
  • Preheat grill to a surface temperature of 450°. Just above medium usually. Clean and oil well.
  • Mix glaze of two tablespoons apricot jam, one teaspoon good quality balsamic vinegar, and one teaspoon olive oil.
  • Remove pork from brine, rinse under running water, and pat dry. Give them a light sprinkle of pepper, then brush lightly with the glaze. Also, a sprinkle of salt if you skipped the brine.
  • Place over direct heat for 5 minutes, then flip and brush with glaze. Flip again in 5 minutes and brush with glaze. Continue to flip every 5 minutes and brush with glaze until internal temperature of 140°-145°. About 15-20 minutes. 18 for me.
  • Remove from grill, tent lightly with foil, and allow to rest 5 minutes before serving.

2 cup orange juice
1/2 cup packed brown sugar
1/2 cup kosher salt
8 garlic cloves (pressed)
1 bunch fresh thyme
3 bay leaves
2 tbs peppercorns
1 cinnamon stick
2 tbs canola oil
3/4 cup molasses
1/4 cup apple cider vinegar
1 rosemary sprig
4 tbs cut-up unsalted butter
1/4 cup bourbon
Kosher salt and black pepper

Steps:

  • Bring orange juice, brown sugar, salt, garlic, thyme, bay leaves, peppercorns, cinnamon, and 6 cups water to a simmer in a large pot. Remove from heat. Cool to room temperature. Add pork and brine 12 hours.
  • Remove pork from brine and rinse under cold water. Pat pork dry with paper towels.
  • Preheat oven to 350F/180C. Heat oil in a large skillet over medium-high heat. Cook pork, in batches, turning once, until golden brown, 4 to 6 minutes. Transfer to a rimmed baking sheet. Bake until the internal temperature reaches 160F/70C 4 to 6 minutes. Let rest 5 minutes. Serve drizzled with glaze.
  • Make the Glaze:
  • Combine molasses, apple cider vinegar, and rosemary in a small saucepan. Cook over medium heat until reduced to 2/3 cup, 12 to 15 minutes.
  • Whisk in unsalted butter and bourbon; continue to cook until thickened, 1 to 2 minutes.
  • Season with kosher salt and black pepper.

4-6 thick-cut pork chops (bone-in or boneless)
3 cup baby arugula
2 packages Maple Marinade (I used Watkins)
½ cup cooking oil
¼ cup organic honey
4 tbsp water
3 tbsp white vinegar

Steps:

  • In a small mixing bowl, whisk together all marinade ingredients. Divide equally and set aside half the mixture at room temperature.
  • Place pork chops in a zip-top bag and cover with the remaining half of the marinade. Remove as much air as possible from the bag, massage marinade into meat, and place on a plate to prevent leaks. Place chops in refrigerator for 30 minutes or up to 4 hours.
  • Light your grill and set up for two-zone cooking. Establish grill temperature between 225° and 250° F.
  • Remove pork chops from the bag, and discard any marinade that has touched the pork. Place chops on your preheated grill over indirect heat. Close lid and allow pork chops to cook until internal temperature reaches 130° F. Remove pork from grill and stoke coals to create high direct heat.
  • Place pork chops over high direct heat, flipping every 20-30 seconds in order to create a perfect crust. Remove pork chops from the grill when they are five degrees less than desired eating temperature.
  • Brush hot pork chops with warm marinade that was set aside, and allow them to rest for 5 minutes.
  • Plate pork chops on a bed of arugula and drizzle with remaining marinade as desired for serving.

  • For spice rub:
  • Mix all ingredients in small bowl.
  • For glaze:

3 tsp. Diamond Crystal or 1½ tsp. Morton kosher salt, divided, plus more

½ tsp. garlic powder
½ tsp. onion powder
½ tsp. smoked paprika
1 tsp. cumin seeds, divided
½ cup honey
2 ripe peaches or nectarines, cut into 1" pieces
½ small red onion, finely chopped
1 jalapeño, finely chopped
Juice of 2 limes

Vegetable oil (for grill)

Steps:

  • Trim excess fat from pork chops. Pat dry and season both sides with salt. Set aside.
  • Mix red pepper flakes, garlic powder, onion powder, paprika, ½ tsp. cumin seeds, and 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt in a small bowl to combine.   • Prepare a grill for 2-zone heat (for a charcoal grill, bank two thirds of coals on one side of grill and scatter remaining coals on other side; for a gas grill, set one burner to high heat and remaining burners to medium-low); oil grate. Grill reserved chops on hotter side of grill, moving to cooler side as needed to control flare-ups, until lightly charred on both sides, about 3 minutes per side. Move pork chops to cooler side of grill, cover, and grill, turning often and basting with reserved spiced honey, until an instant-read thermometer inserted into the thickest part of pork chops registers 145°, about 5 minutes longer.
