STICKY SESAME-GLAZED CARROTS
Kids will love these sweet carrots, and they can be prepared in one pot for extra ease too

- Heat oven to 200C/180C fan/gas 6. Toss the carrots in a baking tray with the oil. Roast for 40 mins, stirring in the honey halfway through cooking, and sprinkling over the seeds for the final 10 mins.

BEST GLAZED CARROTS
I had to get this recipe from my mother in law as it was the only way my husband would eat carrots. It was then that I discovered why and now it's the only way either of us will eat them!

Steps:
- Place carrots in a saucepan and pour in just enough water to cover.
- Bring to a boil and simmer until carrots are tender (about 10 minutes).
- Drain water from pan.
- Add butter and brown sugar to the carrots and stir to dissolve.
- Simmer for approximately another ten minutes over medium-high heat until the carrots look glazed (keep up the occasional stirring).
- I like to sprinkle with a little salt when serving.

MAPLE GLAZED CARROTS

Steps:
- Place carrots into a pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes. Drain and transfer carrots to a serving bowl.
- Melt butter in a saucepan over medium-low heat. Stir maple syrup into melted butter and cook until warmed, 1 to 2 more minutes. Pour butter-maple syrup over carrots and toss to coat; season with salt and pepper.

GLAZED BABY CARROTS WITH BOURBON AND MAPLE SYRUP

- Bring a medium pot of water to a boil over medium heat. Add the baby carrots along with some salt and cook until just tender, about 5 minutes. Drain and set aside.
- In a small saute pan, add the butter, whisky and maple syrup and bring to a boil over medium heat. Lower the heat to a strong simmer and let the mixture reduce until thick and syrupy, about 6 to 8 minutes. Add the carrots and saute them until well glazed and just starting to color, about 4 to 5 minutes. Transfer the carrots to a serving bowl and sprinkle with the salt and pepper, to taste. Serve immediately.
MAPLE-MUSTARD GLAZED CARROTS

- Peel and cut the carrots into batons. (You can do this up to 24 hours ahead and keep them in a polythene bag in the fridge.) Tip them into a pan, pour in enough boiling water just to cover, bring back to the boil, then put a lid on the pan and cook for 4-5 minutes until the carrots are just tender.
- Meanwhile, put the butter and maple syrup in a small pan. Heat until the butter is melted then stir in the mustard. Take off the heat. Drain the carrots and tip into a warmed serving dish.
- Pour the warm maple glaze over the carrots. Taste and adjust seasoning to suit.

GLAZED CARROTS WITH MAPLE SYRUP AND SESAME SEEDS
Wanting a quick carrot dish last night, I turned to one of my favourite books, "Linda McCartneys World Of Vegetarian Cooking". As usual she didn't let me down, this was an easy and deliciously tasty offering of carrots in a sweet glaze. The original recipe calls for honey or Maple syrup, I chose to use Maple Syrup, I had NO leftovers! I used the butter option.

Steps:
- Put the carrots into a medium pan with half the butter or margarine (25 gr), and half the honey or maple syrup(1 tbsp), and a pinch of salt, then add the water.
- Bring to the boil, uncovered, and cook rapidly until the water has all but evaporated, and the carrots are tender, about 8 minutes.
- Add the remaining butter or margarine, and the rest of the honey or maple syrup, and cook until a thick syrup forms to coat the carrots, 3 - 4 minutes longer.
- Serve sprinkled with the sesame seeds.
