My grandmother used this recipe to get us little vegetable haters to eat our beets! Her special dish made beets taste nearly as good as candy. With the tart-sweet scent of Glazed Beets in the air, it never took us long to jump down from the climbing tree out back when we were called to dinner.

1 can (16 ounces) sliced or diced beets
2 tablespoons sugar
1 tablespoon cornstarch
1/4 teaspoon salt
3 to 4 tablespoons white vinegar
2 tablespoons butter

Steps:

  • Drain beets, reserving 1/3 cup juice. In a saucepan, combine the sugar, cornstarch and salt. Stir in beet juice and vinegar; cook and stir over medium-high heat until thickened and bubbly. Cook and stir 2 minutes more. Add beets and butter; heat through.

Steps:

  • In a large saute pan, add the beets and the apricot juice. Cover and cook on medium high for 10 minutes. Add the vinegar and honey and cook for another 10 minutes. Pull off of the heat and keep covered for an additional 5 minutes.

1/2 stick (1/4 cup) unsalted butter
3 tablespoons bottled horseradish (not drained)
2 1/2 tablespoons maple syrup (preferably dark amber or Grade B)
2 1/2 tablespoons cider vinegar
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Put oven rack in middle position and preheat oven to 400°F.
  • Wrap beets in foil and roast until tender, about 1 hour. When cool enough to handle, peel beets and cut into eighths, then transfer to a bowl.
  • Melt butter with horseradish, syrup, vinegar, salt, and pepper in a 12-inch heavy skillet over moderate heat. Stir in beets and boil, stirring occasionally, until liquid in skillet is reduced to about 1/4 cup and beets are coated, 4 to 5 minutes.

2 medium sized yellow beets (with greens attached)
2 to 3 tablespoons extra virgin olive oil + more when serving
Salt and freshly ground pepper to taste
Balsamic glaze
Serve with fresh greens

Steps:

  • Place rack in middle of oven and preheat oven to 375° F.
  • Rinse and dry your beets and trim off the leafy tops. Place each beet on a sheet of foil and drizzle with the extra virgin olive oil, then wrap each beet in the aluminum foil and place on a baking sheet. Roast until tender, for about 1 hour.
  • Remove from the oven and let cool. When cool enough to handle, using a spoon, gently scrape the skin off and cut them crosswise into thin slices. Place on a platter, season with salt and pepper, drizzle some more extra virgin olive oil and the balsamic glaze. Serve with fresh greens.

1 1/2 lbs beets, peeled and quartered (about 4 cups)
3 tablespoons margarine, divided
2 tablespoons maple syrup
1 lemon, zested and juiced

Steps:

  • Heat the oven to 400 degrees F.
  • Place the beets in a roasting pan.
  • Dot with 1 tablespoon of margarine, and roast the beets, covered, for about 30 minutes.
  • Melt the other 2 tablespoons of margarine in the microwave.
  • Stir in the maple syrup and 1 tablespoon of the lemon juice.
  • Pour this mixture over the beets.
  • Bake, covered, for another 30 minutes, or until the beets are tender and the sauce is thick.
  • Sprinkle with the lemon zest and serve.

3 tablespoons balsamic vinegar
2 tablespoons pure maple syrup or honey
1 tablespoon olive oil
1 1/2 teaspoons minced fresh thyme leaves

Steps:

  • In a large saucepan cover beets with salted water by 1 inch. Simmer beets, covered, 35 to 45 minutes, or until tender, and drain in a colander. Cool beets until they can be handled and slip off skins and stems. Cut beets lengthwise into wedges. Beets may be prepared up to this point 2 days ahead and chilled, covered. Bring beets to room temperature before proceeding.
  • In a large skillet stir together vinegar, syrup or honey, and oil and add beets. Cook beet mixture with salt and pepper to taste over moderate heat, stirring, until heated through and coated well. Sprinkle about half of thyme over beets and toss gently.
  • Serve beets sprinkled with remaining thyme.
