GLAZED BACON MAPLE SYRUP MUFFINS



Glazed Bacon Maple Syrup Muffins image

Number Of Ingredients 16

2 cups all purpose flour
2 teaspoons baking powder
1/2` teaspoon salt
1 teaspoon ground cinnamon
1/2 cup unsalted butter (melted)
1/2 cup milk (room temperature)
2 large eggs (room temperature)
3/4 cup pure maple syrup
1 teaspoon maple extract (optional)
1 cup confectioner's sugar
1 Tablespoon pure maple syrup
1/2 teaspoon maple extract (optional)
1/4 teaspoon buttery sweet dough bakery emulsion (optional)
1 pinch salt
1 1/2 Tablespoons milk (more or less as needed)
3 strips brown sugar maple glazed bacon, chopped (see notes for recipe)

Steps:

  • Preheat oven to 350 degrees F. Line a 12 cup muffin pan with paper liners. Set aside.
  • In a large bowl, whisk together the flour, baking powder, salt and cinnamon.
  • In a separate bowl whisk together the melted butter, milk, eggs, maple syrup and maple extract. Add to dry ingredients and stir just until combined. Take care not to over mix. The batter need not be smooth. Lumps are fine.
  • Using a muffin scoop, evenly distribute batter in the prepared muffin pan. Bake for 16-19 minutes or until a toothpick inserted in center comes out clean or with just a few moist crumbs attached.
  • Allow muffins to cool in pan for about 10 minutes, then loosen them and tilt them in the pan to allow steam to escape while they finish cooling. Or, remove to a cooling rack to finish cooling.
  • In a small mixing bowl, whisk all icing ingredients except for milk. Then, add milk, a half Tablespoon at a time until you reach a thick, spreadable consistency. Spread icing evenly over each muffin. Arrange pieces of bacon on top of icing, quickly, before icing sets.
  • Store leftover muffins covered, in refrigerator. I like to heat them up in the microwave for a few seconds before serving, taking care not to let the icing melt.

  • Fill greased or paper-lined muffin cups two-thirds full. Bake at 400F for 20-25 minutes or until a toothpick comes out clean.
  • Cool for 5 minutes before removing from pan to a wire rack.

1/4 cup maple syrup
1 teaspoon Dijon mustard
1 -2 teaspoon brown sugar

Steps:

  • Cook the bacon in a large skillet over medium-high heat until browned, but NOT crispy; drain on paper towels; set aside.
  • In a small bowl whisk together the maple syrup, Dijon mustard and brown sugar; set aside.
  • Return the bacon back to the skillet and brush with glaze, then turn the bacon over.
  • Cook the glazed side down for 2 minutes over low heat.
  • Glaze then turn and cook for another 2 minutes over low heat.
  • Repeat until all the glaze is used up.

250g plain flour
1 ½ tsp baking powder
1 tsp bicarbonate of soda
140g granulated sugar
100g unsalted butter , melted
50g buttermilk
2 large eggs
50g maple syrup , plus 11/2 tbsp for the topping
1 tsp vanilla extract
175g blueberries , plus extra for the top
3 tbsp icing sugar

Steps:

  • Heat oven to 180C/160C fan/gas 4. Place the muffin cases in a muffin tray. In a large bowl, combine the flour, baking powder, bicarb, sugar and 1/2 tsp salt. Whisk the butter, buttermilk, eggs, maple syrup and vanilla extract in a jug. Pour the wet ingredients into the dry and add most of the blueberries. Stir briefly to just combine, but don't overmix or the muffins will be heavy.
  • Divide the mixture between the muffin cases (use an ice cream scoop if you have one) and bake for 22-25 mins until well risen and a skewer inserted into the centre comes out clean. Transfer to a wire rack.
  • Mix the remaining maple syrup and the icing sugar together with a pinch of salt until smooth. Brush the icing over each muffin while they are still warm. Dot a few blueberries on top of each one. Best eaten within a day or two.
