Here's an easy and attractive way to spruce up sweet potatoes for your Thanksgiving dinner. Field editor Billie Moss of El Sobrante, California coats the sweet potato wedges with a ginger, cinnamon and brown sugar sauce that's both sweet and spicy.

2 tablespoons butter
2 tablespoons olive oil
1/3 cup packed brown sugar
1 tablespoon honey
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon pepper
1 medium sweet potato, peeled and cut into wedges

Steps:

  • In a small skillet, melt butter with oil over medium heat. Stir in the brown sugar, honey, cinnamon, salt, ginger and pepper. Add the sweet potato wedges; toss to coat. Cover and cook over low heat for 20-30 minutes or until potatoes are tender, stirring occasionally.

3 large sweet potatoes, peeled and cut into 1 inch pieces
2 tablespoons frozen orange juice concentrate, thawed
2 tablespoons packed brown sugar
2 teaspoons fresh ginger, minced
1/2 teaspoon butter or 1/2 teaspoon margarine
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon mace
1/4 teaspoon salt

Steps:

  • Place sweet potatoes in a large sauce pan and add water to cover.
  • Bring to a boil over medium heat.
  • Cook until tender, or about 15 minutes.
  • Drain and rinse with cool water.
  • Transfer to a blender or food processor and add remaining ingredients. Process until smooth.
  • To freeze: pack cooled puree into a freezer container or freezer bag and label; thaw overnight in the fridge; heat on stove or in microwave until heated through.

For filling
2 pounds sweet potatoes (about 4 medium)
3/4 cup milk
1/2 cup heavy cream
1/3 cup sugar
2 large eggs
1/4 teaspoon salt
1/4 teaspoon freshly grated nutmeg
a pinch of ground cloves
1/4 cup crystallized ginger* (about 2 ounces)
pastry dough
pie weights or raw rice for weighting shell
For meringue
1 cup sugar
2 teaspoons cinnamon
5 large egg whites
*available at some supermarkets and specialty foods shops

Steps:

  • Make filling:
  • Preheat oven to 400°F. and line a baking sheet with foil.
  • Prick sweet potatoes in several places with a fork and on baking sheet bake in middle of oven until very soft, 1 to 1 1/4 hours. When potatoes are cool enough to handle, halve and scoop out enough flesh to measure 2 cups, reserving remainder for another use. In a food processor purée flesh with all remaining filling ingredients except ginger until smooth. Finely chop ginger and stir into filling. Filling may be made 1 day ahead and chilled, covered. Bring filling to room temperature before proceeding.
  • On a lightly floured surface with a floured rolling pin roll out dough into a 14-inch round (about 1/8 inch thick) and fit into a 9-inch (1-quart) glass pie plate. Trim dough, leaving a 1/2-inch overhang, and crimp edge decoratively. With a fork prick bottom and side of shell all over. Chill shell 30 minutes, or until firm.
  • Preheat oven to 375°F.
  • Line shell with foil and fill with pie weights or raw rice. Bake shell in middle of oven 25 minutes and carefully remove foil and weights or rice. Bake shell until just pale golden, about 10 minutes more. Pour filling into shell and bake pie in middle of oven 40 minutes.
  • Make meringue after pie has baked 30 minutes:
  • In a large metal bowl stir together sugar and cinnamon until combined well. Set bowl over a saucepan of simmering water and add whites, stirring until sugar is dissolved. Remove bowl from heat and with an electric mixer beat whites until they hold stiff, glossy peaks.
  • Mound meringue in center of hot filling and spread almost to edge of pie. Bake pie in middle of oven until meringue is golden brown, 12 to 15 minutes more. Serve pie warm or at room temperature.

A pureed vegetable soup can be an impressive, easy and affordable first course for an elegant dinner, or even a light dinner on its own with salad and bread.

2 tablespoons olive oil
1 ½ pounds peeled raw sweet potatoes, cut into 1-inch chunks
1 large onion, cut into large dice
1 tablespoon butter
1 pinch sugar
3 large garlic cloves, thickly sliced
1 ½ teaspoons ground ginger
½ teaspoon ground nutmeg
⅛ teaspoon cayenne pepper
3 cups chicken broth, homemade or from a carton or can
1 ½ cups half-and-half (or whole milk)
Salt and freshly ground pepper, to taste
Garnish: chopped honey-roasted peanuts

Steps:

  • Heat oil over medium-high heat in a large, deep saute pan until shimmering.
  • Add sweet potatoes, then onion; saute, stirring very little at first, then more frequently, until vegetables start to turn golden brown, 7 to 8 minutes.
  • Reduce heat to low and add butter, sugar and garlic; continue cooking until all vegetables are a rich spotty caramel color, about 10 minutes longer.
  • Add ginger, nutmeg and cayenne pepper; continue to saute until fragrant, 30 seconds to 1 minute longer.
  • Add broth; bring to a simmer over medium-high heat. Reduce heat to low and simmer, partially covered, until sweet potatoes are tender, about 10 minutes.
  • Using an immersion blender or traditional blender, puree until very smooth, 30 seconds to 1 minute. (If using a traditional blender, vent it either by removing the lid's pop-out center or by lifting one edge of the lid. Drape the blender canister with a kitchen towel. To 'clean' the canister, pour in a little half-and-half, blend briefly, then add to the soup.)
  • Return to pan (or a soup pot); add enough half-and-half so the mixture is souplike, yet thick enough to float garnish. Taste, and add salt and pepper if needed. Heat through, ladle into bowls, garnish and serve.

Part of my Thanksgiving dinner, this dish is a nice change from the more original sweet potatoe casserole. It is not as sweet as the ones that people usually compare to as a dessert.

3 lbs sweet potatoes
6 tablespoons unsalted butter (room temperature)
6 tablespoons dark brown sugar (packed)
1/2 teaspoon salt
1/2 teaspoon ground coriander
1/2 teaspoon ground cinnamon
1 teaspoon finely chopped fresh ginger
1 teaspoon finely chopped lemon peel (no white attached)
1/4 cup fresh orange juice

Steps:

  • Preheat the oven to 350°F.
  • Line a baking sheet with foil.
  • Grease a 1- to 1-1/2-quart ovenproof serving dish or spray with nonstick spray.
  • Wash and dry the sweet potatoes. Stick them with a knife several times each to allow steam to escape. Put them baking sheet and bake until soft. (1-1/2 to 2 hours, depending on size).
  • Peel potatoes as soon as they are cool enough to handle.
  • Beat with an electric mixer.
  • Beat in 4 tablespoons of the butter. Add 4 tablespoons of the brown sugar and the salt, coriander, cinnamon, ginger, and lemon peel. Mix well.
  • Beat in the orange juice.
  • Place the potatoes in the prepared baking dish.
  • Sprinkle top lightly with remaining 2 tablespoons of brown sugar and dot with remaining 2 tablespoons butter.
  • Bake for 30 minutes until heated through.
  • To make ahead- After you put it together, and before baking, cover it tightly with foil and freeze. When ready to use, defrost the casserole and bake in a 350°F oven for 30 minutes.

This is a recreation of a soup I was served at a wonderful restaurant in downtown Greensboro, NC. The sweetness of the sweet potatoes combined with the fragrant ginger, earthy cumin, and spicy cayenne give this soup a deep flavor with multiple levels of warmth. If an immersion blender is not available, soup maybe be blended in a regular blender in small batches.

3 tablespoons extra-virgin olive oil
1 cup diced onion
1 tablespoon minced garlic
1 quart vegetable broth
2 ½ pounds sweet potatoes, peeled and cubed
10 slices nickel-sized slices fresh ginger
1 tablespoon finely chopped cilantro
½ teaspoon ground cumin
½ teaspoon cayenne pepper
salt and ground black pepper to taste
½ cup sour cream

Steps:

  • Heat oil in a heavy stock pot over medium-high heat. Add onions and saute until soft, about 5 minutes. Add garlic and saute until garlic begins to brown, 2 to 3 minutes. Stir vegetable broth, sweet potatoes, ginger, cilantro, cumin, cayenne pepper, salt, and ground black pepper into onion mixture; bring to a boil. Reduce heat and simmer until potatoes are soft, about 30 minutes.
  • Remove stock pot from heat and blend soup with an immersion blender until smooth. Season with salt and ground black pepper as necessary. Serve with a dollop of sour cream.
