SOUTHERN STYLE CANDIED YAMS WITH GINGERSNAP CRUNCH



Southern Style Candied Yams with Gingersnap Crunch image

Just enough sweet and sticky, these candied yams are topped with crunchy and spicy gingersnap cookies.

8 medium yams or sweet potatoes (about 4 pounds), peeled, halved crosswise and cut into 8 wedges
1 tablespoon vegetable oil
Kosher salt and freshly ground pepper
3 tablespoons unsalted butter
1/3 cup light brown sugar, packed
2 tablespoons honey
1/2 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
1/4 teaspoon freshly ground nutmeg
4 ounces gingersnap cookies (about 16)
1/2 cup light brown sugar, packed
4 tablespoons unsalted butter, melted
1/4 cup all-purpose flour

Steps:

  • For the yams: Preheat the oven to 400 degrees F. Toss the yams with the oil in a medium bowl and sprinkle with salt and pepper. 2. Melt 2 tablespoons of the butter in a small saucepan over medium heat. Add the brown sugar, honey, cinnamon, vanilla and nutmeg and cook, stirring, until the mixture comes to a simmer and the sugar dissolves, 4 minutes. Remove from the heat, add to the yams and toss to coat. Spread the yams and all the sauce evenly into a 9-by-13-inch baking dish. Cover tightly with foil and bake until beginning to become tender, 30 minutes.
  • For the crunch: Meanwhile, pulse the gingersnaps in a food processor until they are fine crumbs with a few larger pieces. Transfer to a medium bowl and stir in the sugar, butter and flour to combine. Form crumbles in several sizes using your hands and chill in the refrigerator. Remove the foil from the yams and stir to coat with the sauce. Continue baking uncovered until the potatoes are tender and the sauce has thickened, 20 to 25 minutes. Top with gingersnap crumbles and bake until the yams are very tender and the topping is nicely browned, about 10 minutes longer. Serve.

1/3 cup packed light brown sugar

One 8-ounce package cream cheese, cool but slightly softened
1/2 cup sour cream, at room temperature
1/3 cup granulated sugar
1/4 teaspoon kosher salt
1 teaspoon vanilla extract
2 large eggs, at room temperature
1/2 cup light brown sugar
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon freshly ground nutmeg
1/4 teaspoon kosher salt
2 cups cooked dark orange sweet potatoes, mashed until very smooth or pureed in a food processor (about 12 ounces or 2 large sweet potatoes)
1/4 cup half-and-half
3 tablespoons unsalted butter, at room temperature
2 teaspoons vanilla extract
2 large eggs, at room temperature

Steps:

  • For the crust: Preheat the oven to 350 degrees F. Spray a 9-inch deep dish pie plate with nonstick cooking spray.
  • Mix the cookie crumbs, brown sugar, butter and salt together in a medium bowl until well blended. Press the mixture into the pie plate. Bake until set and the crust feels firm, 7 to 10 minutes. Set aside to cool slightly.
  • To make the cheesecake filling: In a stand mixer or with an electric hand mixer, combine the cream cheese, sour cream, granulated sugar and salt, mixing at low speed until the mixture is smooth with no lumps, 3 to 4 minutes. Beat in the vanilla and eggs.
  • Add the filling to the crust, smooth the top, and chill in the freezer until the filling is sturdy and set up, at least 30 minutes and up to 1 hour.
  • For the sweet potato topping: In a medium bowl, whisk together the brown sugar, cinnamon, ginger, nutmeg and salt. Whisk in the sweet potatoes, half and half, butter, vanilla and eggs until smooth. Pour slowly over the chilled cheesecake filling.
  • Place the pie on a baking sheet and bake for 15 minutes. Reduce the oven temperature to 325 degrees F and bake, covering the edges with foil if it browns too quickly, until set along the outside and the center still has a slight jiggle, 55 to 60 minutes. Let cool to room temperature before refrigerating until ready to serve.

25 gingersnap cookies
7 tablespoons butter, melted and cooled
1 medium sweet potato (8 ounces), peeled and cut into large chunks
2 1/2 tablespoons all-purpose flour
1/2 teaspoon salt
3/4 teaspoon ground ginger
3/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Pinch of ground cloves
1/4 cup sugar
3 large eggs
1 cup condensed milk
Whipped cream (optional)

Steps:

  • Heat oven to 325 degrees. Place cookies in the bowl of food processor; pulse until fairly fine, yielding 1 cup crumbs. Transfer to a medium bowl, and stir in 4 tablespoons melted butter. Press mixture into bottom and sides of a 9-inch pie tin. Bake until set and slightly darkened, 12 to 15 minutes. Do not overbake. Set aside.
  • Turn oven up to 375 degrees. Fill a small saucepan with water. Add potato, bring to a boil, reduce heat, and simmer until potato is very tender, about 12 minutes. Drain.
  • In a bowl, combine flour, salt, ginger, cinnamon, nutmeg, and cloves; set aside.
  • Pass potato through a food mill or potato ricer into the bowl of an electric mixer. Add sugar, eggs, and condensed milk. Mix until combined. Stir in remaining 3 tablespoons butter until combined. Add reserved flour mixture, and combine. Pour filling into cooled crust, and bake until filling is set, 30 to 35 minutes. Serve at room temperature with whipped cream, if desired.

¼ cup molasses
1 egg
1 teaspoon baking soda

2 Tbsp lemon juice
2 Tbsp butter
1 c brown sugar, packed
12 ginger snaps
1 tsp baking powder
1/2 tsp salt

Steps:

  • 1. Drain syrup off yams and put aside. Place yams in a casserole dish and dot with butter. Add lemon juice and brown sugar. Roll ginger snaps to small crumbs and add to the syrup. Add baking powder and salt. Stir well and pour over yams. Cover and bake for 30 minutes at 350 degrees.

1 3/4 cups gingersnap crumbs, from about 1/2 batch Gingersnaps
1/4 cup packed dark-brown sugar
1 tablespoon unbleached all-purpose flour
1/2 teaspoon coarse salt
4 tablespoons (1/2 stick) unsalted butter, melted

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl, whisk together gingersnap crumbs, brown sugar, flour, and salt. Add butter and stir until mixture is well combined. Press some of the mixture against the side of the bowl with your fingers. If the crumbs do not hold together, add cold water, a little at a time, up to 1 tablespoon, and stir to combine.
  • Press crumb mixture into a 9-inch pie plate, evenly covering the bottom and sides. Transfer to freezer and chill for 10 minutes. Place pie plate on a baking sheet and bake until crust is fragrant and set, about 10 minutes. Transfer pie to a wire rack; let cool completely.

  • Make crust:
  • Preheat oven to 350°F. Blend gingersnap crumbs, walnuts, sugar and salt in processor until walnuts are finely chopped. Add butter and process until mixture forms moist crumbs. Press crust onto bottom and up sides of 9-inch-diameter metal pie pan.
  • Make filling:
  • Purée yams in processor. Add 1/2 cup plus 2 tablespoons cream, brown sugar, egg and yolk, rum, pumpkin pie spice and salt; blend until smooth. Pour into crust. Smooth top. Place walnut halves around edges.
  • Bake until filling is set in center, about 40 minutes. Cool pie on rack. Chill until cold. (Can be prepared 1 day ahead. Keep refrigerated.) Pipe or spoon sweetened whipped cream on top of pie between walnuts, if desired.

40 ounces canned yams (2 lb 8oz can drained)
29 ounces canned yams (1 lb 13oz can drained)
3 large eggs
1 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon allspice
1/4 cup sugar
1 orange, rind of, grated
1 cup half-and-half
1 cup orange juice
2 tablespoons lemon juice
2 tablespoons butter, room temp

Steps:

  • Preheat oven to 325°F Grease or spray a 9x13 inch glass baking dish.
  • Crush the gingersnaps in the food processor until fine. Reserve 1/2 a cup of crumbs for topping.
  • Press the remaining crumbs over the bottom of the dish. They won't pack because there is no butter mixed with them.
  • Mix all the yams in a lg bowl with an electric mixer at med speed until fluffy, 2-3 minutes.
  • Add the eggs one at a time mixing well after each.
  • Mix in the salt, spices, sugar and orange peel.
  • Reduce the speed of the mixer to low and slowly add the liquids, mixing till incorporated.
  • Pour the mixture over the crumbs, smoothing the top.
  • Sprinkle with remaining 1/2 cup of crumbs and dot with butter.
  • Bake, uncovered, in center of oven for one hour or until it is puffed and golden. A knife inserted into the center should come out clean. Let pudding rest for 20 minutes Cut into squares to serve.

6 tablespoons butter
6 garlic cloves, peeled
2 tablespoons finely chopped fresh ginger
1 1/2 cups heavy cream
4 medium yams or 4 medium sweet potatoes, peeled and roughly chopped
salt & freshly ground black pepper

Steps:

  • Heat a small saucepan over medium heat.
  • Add 1 tablespoon of the butter and swirl to coat the bottom of the pan.
  • Add the garlic and ginger and sauté, stirring occasionally until the garlic is brown, 3 to 4 minutes.
  • Add the cream and reduce by one-third over low heat, about 10 minutes.
  • Keep warm.
  • Meanwhile, combine the yams in a large saucepan with enough water to cover them completely.
  • Bring to the boil over high heat and cook until the yams can be pierced easily with the tip of a knife, 20 to 30 minutes.
  • Drain and transfer to a food processor.
  • Add the cream and process until well blended. Add the remaining butter, season with salt and pepper, and puree until smooth.
  • Transfer the potatoes to a bowl, correct the seasonings, and serve.
