1/4 package (12-oz size) soft silken tofu
1/4 cup vanilla soymilk
1 1/2 teaspoons honey
3/4 teaspoon ground cinnamon
3/4 teaspoon lemon juice
1/2 teaspoon vanilla
1/8 teaspoon salt
1 cup red grapes
1 cup green grapes
1 cup fresh blueberries
1 large apple or pear, cut up
1 banana, sliced
1/4 cup sliced almonds

Steps:

  • In blender or food processor, place tofu, soymilk, honey, cinnamon, lemon juice, vanilla and salt. Cover; blend on medium-high speed until smooth and creamy.
  • In large salad bowl, mix all remaining ingredients; toss with dressing. Store covered in refrigerator.

1 bunch broccoli, cut into florets
1 head cauliflower, cut into florets
1/2 pound snow peas
1 pint cherry tomatoes
1/2 cup butter (1 stick) melted
Garlic powder to taste
Salt and pepper

Steps:

  • In a large pot fitted with a steamer basket, bring water to a boil and add vegetables successively starting with broccoli and cauliflower, about 3 minutes, then snow peas about 3 more minutes, then cherry tomatoes, until all vegetables are fork tender (a fork can easily be poked through). Transfer vegetables to a large mixing bowl and season with garlic powder and salt and pepper, to taste, and toss with melted butter.

The lime, honey and ginger marinade is perfect for this grapefruit, pear and grape salad. The chia seeds not only contribute to the nutritional value of the dish; they also act as a natural thickener for the marinade.

1/4 cup fresh lime juice
2 tablespoons mild honey or agave nectar
2 teaspoons finely minced or grated fresh ginger
2 pink grapefruit
2 ripe but firm pears
1/2 pound red grapes, cut in half
6 dates, pitted and halved or quartered
Seeds from 1 small pomegranate
1 tablespoon chia seeds (more to taste)
2 to 3 tablespoons finely grated coconut (to taste)

Steps:

  • Whisk together the lime juice, honey or agave nectar and ginger in a small bowl.
  • Cut away the peel and white pith from the grapefruit. The easiest way to do this is to cut the ends off, then stand on one end and cut away strips of skin and pith at the same time. Hold the grapefruit over your serving bowl and cut the sections away from the membranes that separate them. Place in the bowl.
  • Peel, core and dice the pears. Add to the grapefruit. Add the grapes, dates, pomegranate seeds and chia seeds. Stir the lime-ginger marinade and toss with the fruit. Chill for 30 minutes or longer and toss again.
  • Sprinkle the coconut over the top and serve.

1 (8 ounce) can pineapple chunks, undrained
1/2 cup walnut halves
2 tablespoons orange juice
1/4 teaspoon ground ginger
3 cups fresh strawberries (or frozen)
1 cup fresh blueberries (or frozen)
1/4 cup coconut

Steps:

  • In a large bowl combine the pineapple chunks with juice, walnut halves, orange juice and ground ginger, mix well.
  • Add the strawberry halves, blueberries and coconut.
  • Toss gently to coat the fruit with juice.
  • Place mixture in an airtight container, leaving room for mixture to expand as it freezes.
  • Store up to one month in freezer.
  • Thaw at room temperature.
  • The fruit mixture will thaw but remain frosty.

These are great to have in the freezer. They make a fruity, crunchy snack, kind of like a sherbet pop when eaten frozen, or thaw slightly and serve as a salad or dessert.

1 (17 ounce) can apricots or 1 (17 ounce) can peaches
1 (20 ounce) can unsweetend crushed pineapple
1 cup juice or 1 cup syrup, drained from canned fruit
1/2 cup sugar
2 cups strawberries (or 16 oz pkg whole frozen unsweetened berries paritally thawed and separated)
3 bananas, sliced
1 (6 ounce) can frozen orange juice concentrate
2 tablespoons lemon juice

Steps:

  • Drain canned fruits, reserving 1 cup combined syrup.
  • Cook syrup and sugar over medium heat about 5 minutes, stirring until sugar dissolves.
  • In a large bowl, mix all ingredients including syrup together.
  • Using about 2 cups at a time, place mixture in blender.
  • Cover and puree until smooth but slightly chunky.
  • Pour into another large bowl.
  • Repeat until all fruit is processed.
  • When all is blended, stir together in the large bowl.
  • Line 30 muffin cups with paper liners.
  • Ladle fruit into paper cups.
  • Freeze until solid.
  • When frozen, turn over muffin tins and punch out cups with your thumbs.
  • Place cups in freezer bags and store in freezer.
  • Remove from freezer 20 minutes before serving to use as a salad or dessert, or eat frozen.

2 cups green seedless grapes
2 cups red seedless grapes
1 (20 ounce) can pineapple chunks, drained,reserve the juice
1 (11 ounce) can mandarin orange segments, drained,reserve the juice
2 medium bananas, sliced 1/2 inch
1/2 cup sugar
3/4 cup of the reserved fruit juice
1 egg
1 tablespoon all-purpose flour
1 teaspoon lemon juice

Steps:

  • Place fruit in a large bowl.
  • In 1-qt saucepan stir together all dressing ingredients.
  • Cook over medium heat, stirring occasionally, until dressing is thickened (3 to 5 min.).
  • Let stand 5 minutes.
  • Pour dressing over fruit; toss to coat.
  • Chill 15 minutes.
