STEAMED FISH WITH GINGER & SPRING ONION



Steamed fish with ginger & spring onion image

Take an Asian approach to low-fat cooking - steam fish with pak choi, mirin, garlic and soy and serve topped with coriander

100g pak choi
4 x 150g fillets firm white fish
5cm piece ginger , finely shredded
2 garlic cloves , finely sliced
2 tbsp low-salt soy sauce
1 tsp mirin rice wine
1 bunch spring onions , finely shredded
handful coriander , chopped
brown rice , to serve
1 lime , cut into wedges, to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Cut a large rectangle of foil, big enough to make a large envelope. Place the pak choi on the foil, followed by the fish, then the ginger and garlic. Pour over the soy sauce and rice wine, then season.
  • Fold over foil and seal the 3 edges, then put on a baking sheet. Cook for 20 mins, open the parcel and scatter over the spring onions and coriander. Serve with brown rice and squeezed lime juice.

Simple to prep but with pretty special results, this Indian-inspired menu from MasterChef winner Dhruv Baker makes a romantic meal for two

drizzle olive oil , for frying
2 sea bream fillets
1 tsp garlic paste (blend lots of peeled garlic with a little vegetable oil, then freeze in ice cube trays)
1 tsp ginger paste (made as above)
2 green chillies
¼ tsp red chilli powder
½ tsp turmeric
½ tsp garam masala
juice ½ lime
100g unsalted butter

Steps:

  • Mix the tandoori butter ingredients, plus some seasoning, in a small food processor or with a hand-held blender until smooth. Scrape onto cling film, then use the cling film to help you roll it into a cylinder. Twist the ends to seal in the butter and chill until firm. The butter will last in the fridge for a week, or in the freezer for up to 3 months.
  • Heat a heavy-based frying pan with a drizzle of oil until really hot. Season the fish, then place in the pan, skin-side down, and cook for 4-5 mins until crisp and almost cooked through. Carefully turn over, add a good tbsp of tandoori butter to the pan and spoon it over the fish as it melts. Serve straight away with the Crushed saffron potatoes and Green beans with coconut (recipes below), with any pan juices poured over.

GINGER AND SESAME MARINADE

Fresh ginger juice adds a particular zing to a marinade: the fragrant, hot flavour penetrates into meat, poultry, fish and seafood, while helping to tenderise at the same time. The sesame seeds in this recipe add texture, the fish sauce adds saltiness, and the sweet-and-sour blend of sugar and lime juice completes the Asian credentials of this marinade.Can be used to prepare- 4 Beef steaks or 4 Lamb steaks or 4 Pork chops or 6 Chicken breasts or 6 Fish steaks and fillets or 4 Duck breasts or 2lbs of jumbo shrimp. Time does not include marinating.

5 in fresh gingerroot, peeled and grated
4 tablespoons lime juice or 4 tablespoons rice vinegar
3 tablespoons fish sauce or 3 tablespoons soy sauce
1 1/2 tablespoons toasted sesame seeds
1 tablespoon toasted sesame oil
1 tablespoon soft brown sugar

Steps:

  • The marinade- Put the ginger in a fine sieve, or a sieve lined with muslin, and press the juice into a bowl.
  • You need to extract 7 tbs ginger juice - add a little water to the ginger pulp and squeeze again if necessary. Add the remaining ingredients, except the sugar, and stir to mix.
  • Put the meat or seafood in a non-metallic shallow dish and rub the marinade all over. For meat, cover and leave in the fridge for at least 4 hours or overnight. Fish and shrimp only need marinating for up to 30 minutes in the refrigerator.
  • Remember to give the marinated food at least 20 minutes to return to room temperature before cooking.
  • To cook- While cooking the food, season and baste it with the marinade. Before brushing the final few strokes on, add the sugar and stir to dissolve; this helps glaze the food, but if the sugar is added too soon, it will burn and stick.

GILTHEAD SEA BREAM WITH SCALLIONS AND GINGER



Gilthead Sea Bream With Scallions and Ginger image

The seabream, marinated with pepper and chili and broiled or grilled with scallions and ginger and and asiatic dipping sauce. The balance between sweet and sour notes makes this dish. Don't overspice it with too much chili. Let the flavours of the fish take control and you will love it. I use Gilthead Seabream, but you can use any other whitefleshed fish like snapper or other seabreams varities. I would suggest to use smaller whole fish. If you use fillets reduce broiling time. But use always fresh fish for this dish to get the full flavours.

1 (1 1/2 lb) sea bream (gut and scales removed)
1 tablespoon fresh ginger (about 1 inch long)
2 tablespoons sunflower oil
1 garlic clove
2 scallions
1 piece red chili pepper (1 inch long)
1 teaspoon sugar
1/2 teaspoon peppercorn
1/2 teaspoon red chili pepper (seeded and chopped)
1 1/2 teaspoons fish sauce
1 pinch salt
1 tablespoon lemon juice
1 tablespoon lime juice
1 tablespoon fish sauce
1/2 tablespoon sugar
1/2 teaspoon red chili pepper, diced
1 garlic clove, diced

Steps:

  • Make dipping sauce first. Mix all ingredients and set aside.
  • Preheat oven for broiling (480 F, 250 C).
  • For the marinade crush pepper corns in mortar and add chili pepper, salt and fish sauce. Crush and mash until well combined.
  • Clean fish and pat dry. With a sharp knife cut 2 or 3 into the flesh slightly on the thickest part.
  • Smear the marinade onto the fish on both sides and into the cavity. Set aside for 30 minutes.
  • Meanwhile cut scallions first into 1 inch long pieces and then into very fine stripes. Do the same with ginger and chili pepper. Cut garlic into very fine slices.
  • Oil a grilling pan with sunflower oil and put fish on it. Put fish into the oven and broil for about 8 minutes on each side.
  • Watch carefully and brush from time to time with oil. For broiling you should need about 1 tablespoon of oil.
  • While fish is broiling heat the remaining tablespoon oil in samll pan over medium hight heat. Add scallions and cook for about 1 to 2 minutes.
  • Add ginger, garlic, red chili pepper and sugra and cook for another 3 to 5 minutes. Stir frequently. Remove from heat and keep warm.
  • Take fish out of the oven and serve with scallions and ginger on top of it. Serve the dipping sauce in a seperate small bowl.

6 x sea bass fillets, about 140g/5oz each, skin on and scaled
about 3 tbsp sunflower oil
large knob of ginger, peeled and shredded into matchsticks
3 garlic cloves, thinly sliced
3 fat, fresh red chillies deseeded and thinly shredded
bunch spring onion, shredded long-ways
1 tbsp soy sauce

Steps:

  • Season 6 sea bass fillets with salt and pepper, then slash the skin 3 times.
  • Heat a heavy-based frying pan and add 1 tbsp sunflower oil.
  • Once hot, fry the sea bass fillets, skin-side down, for 5 mins or until the skin is very crisp and golden. The fish will be almost cooked through.
  • Turn over, cook for another 30 seconds - 1 minute, then transfer to a serving plate and keep warm. You'll need to fry the sea bass fillets in 2 batches.
  • Heat 2 tbsp sunflower oil, then fry the large knob of peeled ginger, cut into matchsticks, 3 thinly sliced garlic cloves and 3 thinly shredded red chillies for about 2 mins until golden.
  • Take off the heat and toss in the bunch of shredded spring onions. Splash the fish with 1 tbsp soy sauce and spoon over the contents of the pan.

100ml shaohsing rice wine or dry sherry
100ml light soy sauce
1 small bunch of spring onions , finely sliced
2 garlic cloves , finely chopped
thumb-sized piece fresh ginger , finely chopped
4 sea bass fillets, scaled (about 100g each)
3 pak choi , each quartered
1 large carrot , shredded into fine strips
2 red chillies , 4 spring onions, and thumb-sized piece ginger, cut into fine strips, to serve

Steps:

  • In a jug, mix together the wine or sherry with the soy, spring onions, garlic and ginger, then set aside. Lightly score the skin of each sea bass fillet a couple of times.
  • Lay a square of foil on your work surface with a square of baking parchment the same size on top. Put 3 pak choi quarters just off centre of the paper and top with a quarter of the shredded carrot followed by a sea bass fillet, skin-side up. Spoon over a quarter of the ginger, onion and garlic mixture (don't add the rice wine and soy mixture yet). Fold over the parcel so it becomes a triangle, then, from left to right, begin to seal it by scrunching the edges together. Continue all the way around until there is just a little hole at the end. Pour a quarter of the soy mix through the hole. Scrunch the remaining bit to seal and place on a baking tray. Repeat until all the fish are wrapped, sauced and sealed. Can be prepared a day ahead and chilled.
  • Heat oven to 200C/180C fan/gas 6 and cook the fish on the tray for 15 mins. Remove from the oven and divide the parcels between four warmed plates. Let your guests open them up themselves so they get a hit of aromatic steam before they tuck in. Pass around some chilli, spring onion and ginger strips to sprinkle over.
