ASPARAGUS-SHRIMP DUMPLINGS

Steps:

  • Puree 8 ounces shrimp (peeled and deveined) in a food processor with 2 teaspoons each cornstarch, minced ginger, sesame oil and dry vermouth and 1 teaspoon soy sauce until mostly smooth. Transfer to a bowl and stir in 1/2 cup thinly sliced trimmed asparagus, 3 tablespoons chopped chives, 1/2 teaspoon kosher salt and 1/4 teaspoon sugar. Spoon about 2 teaspoons filling onto a dumpling wrapper. Dampen the edges and fold into a half moon; crimp the edges with your fingers. Repeat to make 18 to 24 dumplings. Cook in a steamer basket set over simmering water until cooked through, 6 minutes. Serve with soy sauce for dipping.

1 lb asparagus
2 tablespoons teriyaki sauce or 2 tablespoons hoisin sauce
1/2 teaspoon bottled chopped ginger or 1/4 teaspoon grated fresh ginger
1/4 teaspoon hot chili-garlic sauce
2 teaspoons toasted sesame seeds

Steps:

  • Snap tough ends from asparagus and discard.
  • Boil water over high heat in a large frying pan.
  • Add Asparagus to boiling water (or alternatively, you can steam the asparagus, which I prefer to do as it stays crunchy).
  • Boil for 3 minutes, drain immediately and set aside.
  • While asparagus cooks or steams, stir teriyaki with ginger and chili-garlic sauce in a small bowl.
  • Return pan with asparagus to burner and reduce heat to medium.
  • Add teriyaki mixture.
  • Stir often until asparagus is tender-crisp and evenly coated with sauce, 1 to 3 minutes.
  • Sprinkle with sesame seeds.

1 lb lean sirloin steaks, sliced into thin strips
2 teaspoons cornstarch
4 tablespoons peanut oil, divided
1 teaspoon sesame oil
1 lb thin asparagus, tough ends snapped off and cut on the diagonal into 1 1/2 inch pieces
1 bunch green onion, thinly, diagonally sliced
1 1/2 tablespoons peeled minced fresh ginger
2/3 cup beef broth
1 tablespoon fish sauce (nam pla)
1 teaspoon sugar

Steps:

  • Combine beef and cornstarch in a large bowl; using your hands, rub to coat well.
  • Heat 2 tablespoons peanut oil in a large skillet over high heat; working in batches, add beef in a single layer and cook, undisturbed, until meat begins to blacken on the bottom, about 1 1/2 minutes; turn over and cook until second side browns, about 1 minute; transfer beef to a large plate.
  • Heat remaining 2 tablespoons peanut oil and 1 tsp sesame oil in same skillet over medium-high heat; add asparagus, green onions and ginger; saute until vegetables are tinged brown and crisp-tender, about 2 minutes; add broth, fish sauce and sugar; bring to a boil; return beef to skillet and cook until sauce is slightly thickened, about 1 minute.
  • Transfer to a platter and serve.

4 teaspoons olive oil
1 1/2 teaspoons sesame oil
2 lbs asparagus, trimmed
1/4 cup reduced sodium soy sauce
2 teaspoons seasoned rice vinegar
1 large green onion, chopped
1 lb large shrimp, peeled and deveined
1/8 teaspoon crushed red pepper flakes
2 cups prepared jasmine rice, keep warm

Steps:

  • Preheat oven to 450 degrees F.
  • Combine salt, 2 teaspoons olive oil, and 1 teaspoon sesame oil in a small cup or bowl. In a jelly-roll type pan (10 1/2 x 15), toss asparagus with oil mixture; roast 10 to 12 minutes, until tender.
  • While asparagus is roasting, in a small bowl whisk together soy sauce, rice vinegar, green onion, and remaining 1/2 teaspoon sesame oil; set aside.
  • In a nonstick 12-inch skillet, heat 2 teaspoons olive oil over medium-high heat until very hot.
  • Add shrimp; sprinkle with red pepper and cook 3 minutes, stirring frequently.
  • Arrange shrimp, asparagus, and rice on 2-4 plates; drizzle with desired amount of dressing.

8 ounces thin asparagus, sliced on the diagonal into 2 inch pieces
2 tablespoons hoisin sauce
1 1/2 teaspoons rice wine
1 teaspoon sesame oil
1 tablespoon peanut oil
1 teaspoon sesame seeds
2 teaspoons minced fresh peeled ginger
1 garlic clove, minced
1/2 teaspoon coarse salt

Steps:

  • Bring a pot of water to boil, add salt and asparagus and cook for 1 minute.
  • Remove and rinse asparagus in cold water, drain well on paper towels.
  • In a small bowl whisk together hoisin, rice wine and sesame oil.
  • Heat peanut oil in a large skillet.
  • Add sesame seeds to center of the pan and cook until the seeds are browned, about 5 minutes.
  • Add ginger and garlic and cook 1 minute.
  • Add hoisin mixture, asparagus and salt.
  • Stir often until asparagus is coated and heated through, 1 minute.

2 lbs jumbo shrimp
1 tablespoon ginger paste
1 tablespoon garlic paste
2 tablespoons sesame oil
2 tablespoons soy sauce
cooking spray

Steps:

  • Whisk together ginger, garlic, oil, and soy sauce.
  • Pour mixture into a large zip top bag. Add shrimp and toss to coat. Marinate shrimp no longer than 15-20 mintues.
  • While shrimp is marinating, preheat grill to medium high heat.
  • Coat grill grid or grill wok with cooking spray.
  • Place shrimp on grill grill and discard unused marinade.
  • cook shrimp several minutes on each side or until pink. Do not overcook.

1 1/2 lbs asparagus, thin, trimmed on the bottom and cut diagonally into 2 inch pieces
1 tablespoon canola oil
1 tablespoon fresh ginger, chopped and peeled
1 tablespoon reduced sodium soy sauce
1/4 tablespoon crushed red pepper flakes
1 teaspoon sesame seeds
1 teaspoon sesame oil
ice water

Steps:

  • In a skillet, heat 1 cup water to boiling over high heat.
  • Add asparagus, heat to boiling.
  • Reduce heat to medium once it boils.
  • Cover and cook for 4-5 minutes or until asparagus is tender-crisp.
  • Drain the asparagus in a colander, the nimmediately plunge into a large bowl of ice water to stop it from cooking. Drain the asparagus from the ice water.
  • Carely wipe skillet dry with paper towels. Add canola oil, heat it over high heat until hot. Add the asparagus, ginger, soy sauce and crushed red pepper and cook for 1-2 minutes or just until asparagus is heated through.
  • Remove the skillet from the heat and stir in sesame seeds and sesame oil. Coat thoroughly.
  • Serve immediately.

  • Toss shrimp, cornstarch, red pepper flakes, a pinch of salt, and 1 Tbsp. soy sauce in a medium bowl. Stir vinegar, wine, and remaining 2 Tbsp. soy sauce in a small bowl. Have all your other ingredients prepped and ready to go (once you start cooking, there isn’t a stopping point and you’ll need them handy).
  • Heat 1 Tbsp. oil in a large skillet (not nonstick) over high. When oil is shimmering and slides quickly across surface of pan, add scallions and ginger and cook, tossing, until scallions are browned and softened, about 2 minutes. Add asparagus and a pinch of salt and cook, tossing often, until asparagus is bright green and crisp-tender, about 4 minutes. Transfer asparagus mixture to another medium bowl.
  • Heat remaining 1 Tbsp. oil in same skillet over high. When oil is shimmering again, add shrimp mixture and arrange in a single layer in skillet. Cook, undisturbed, until shrimp are pink around the edges and first side is golden, about 1 minute. Toss and continue to cook until shrimp are opaque all the way through, about a minute or two longer.
