Number Of Ingredients 10

2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
2 tablespoons caraway seeds
2 cups 4% cottage cheese
1/2 teaspoon baking soda
1/4 cup sugar
2-1/2 teaspoons salt
2 large eggs, beaten
4-1/2 to 5 cups all-purpose flour
1 tablespoon butter, melted

Steps:

  • In a large bowl, dissolve yeast in water. Add caraway seeds. In a small saucepan, heat cottage cheese until lukewarm; add baking soda and mix well. Stir into yeast mixture. Add sugar, salt and eggs; mix well. Gradually stir in enough flour to form a soft dough Cover and let rise in a warm place until doubled, about 1 hour. Stir down. , Turn onto a lightly floured surface. Divide into 24 pieces. Place in well-greased muffin cups. Cover and let rise until doubled, about 35 minutes. , Bake at 350° for 18-20 minutes. Remove to wire racks; brush with melted butter.

Honey Caraway Rolls image

These are so tasty. They are like a zippy cousin to rye bread but with the added sweetness of honey bread. These rolls are terrific with some butter and a pinch of salt hot out of the oven. If you can let them cool before devouring (the struggle is real), use them for anything from ham and cheese sandwiches to hummus and vegetable tartines.

2 1/4 teaspoons active dry yeast
5 tablespoons extra-virgin olive oil
3 cups bread flour
2 teaspoons caraway seeds
3 tablespoons honey
1 tablespoon blackstrap molasses
1 tablespoon kosher salt
1 cup whole-milk cottage cheese
1 large egg

Steps:

  • Prepare the yeast: In a medium bowl, dissolve the yeast in 1/2 cup warm water (between 110 to 120 degrees F). Set aside.
  • Make the dough: Oil a medium bowl with 1 tablespoon of the olive oil. Set aside. In the bowl of a stand mixer fitted with the paddle attachment, combine the bread flour with the caraway, honey, molasses, salt and 2 tablespoons of the olive oil. Mix to blend. Stir in the cottage cheese and the egg. With the mixer on low speed, add the yeast mixture. Transfer the dough to the oiled bowl. (The oil will prevent the dough from sticking to the sides as it rises.) Cover with a towel and put in a warm place to double in volume, 1 1/2 to 2 hours. Then gently push the air out of the dough. Cover and let rise again, 1 more hour.
  • Prepare the dough: Preheat the oven to 400 degrees F. Grease two baking sheets with the remaining 2 tablespoons olive oil. Divide the dough into 8 even balls and place 4 each in a single layer on each baking sheet. Flatten the balls gently with your hand.
  • Bake the bread: Lower the oven temperature to 350 degrees F. Place the trays in the center of the oven and bake, undisturbed, 20 to 25 minutes. The tops should be light to medium brown. Remove from the oven. Cool at least 15 minutes.

1 8-ounce russet potato, peeled, cut into 1" pieces
4 tablespoons (1/2 stick) unsalted butter plus more for bowl and pan
1 cup whole milk
2 tablespoons sugar, divided
1 1/2 teaspoons kosher salt, divided
1 1/4-ounce package (2 1/2 teaspoons) active dry yeast
3 3/4 cups (or more) all-purpose flour, divided, plus more for surface
1 teaspoon toasted caraway seeds, lightly crushed
1 teaspoon pretzel salt or sea salt
1 large egg
2 teaspoons heavy cream
Special Equipment
A 13x9x2" baking pan

Steps:

  • Place the potato in a small saucepan and add water to cover by 1". Bring to a boil; reduce heat to medium and simmer until potato is tender, about 15 minutes. Drain, reserving 1/4 cup cooking liquid in a small microwave-safe bowl.
  • Meanwhile, melt 4 tablespoons butter in another small saucepan. Add milk; stir until warm, about 1 minute, and set aside. Transfer cooked potato to a large bowl.
  • Mash with a fork, then stir in milk mixture, 1 tablespoon sugar, and 1/2 teaspoon salt (mixture will be slightly lumpy).
  • Rewarm potato cooking liquid in microwave (or let cool) until an instant-read thermometer registers 105°F-110°F. Stir in remaining 1 tablespoon sugar, 1 teaspoon salt, and yeast; let stand until foamy, about 10 minutes. Add yeast mixture to potato mixture and stir to combine. Add 3 1/4 cups flour with a wooden spoon and stir until a sticky dough forms.
  • Turn dough onto a floured surface and knead, dusting surface, dough, and your hands often with remaining 1/2 cup flour to keep dough from sticking, until dough is smooth, elastic, and slightly sticky, 7-8 minutes. Form into a ball and transfer to a buttered bowl. Turn to coat dough with butter and cover bowl with plastic wrap. Let dough rise, chilled, overnight.
  • Butter baking pan. Mix caraway seeds and pretzel salt in a small bowl; set aside. Punch down dough (do not knead). Cut dough in half, then roll each piece into a 12"-long log. Cut each log into 12 equal pieces, then roll each piece into a ball (for 24 total). Arrange in pan, evenly spaced, in 6 rows of 4. Cover loosely with plastic wrap. Let rise in a warm, draft-free place until almost doubled in size, about 1 hour.
  • Arrange a rack in middle of oven and preheat to 375°F. Whisk egg and cream in a small bowl; brush tops of rolls with some of egg wash. Sprinkle with caraway salt. Bake, rotating pan once, until rolls are cooked through and deep golden, 25-30 minutes. Transfer to wire rack and let cool in pan for 5 minutes, then run a sharp knife around edges to loosen from pan; do not separate rolls. Transfer to rack and let cool for 10 minutes. DO AHEAD: Can be made 8 hours ahead. Rewarm, wrapped in foil, in a 300°F oven until heated through. Serve warm.

  • Stir in enough remaining flour to form a sticky batter, do not knead.
  • Cover and let rise until doubled, about 1 hour.
  • Stir dough down.
  • Turn onto a lightly floured surface, divide into 24 pieces.
  • Place in well greased muffin cups. Cover and let rise until doubled, about 35 minutes.
  • Bake in a preheated 350 oven for 18-20 minutes or until golden brown.
  • Cool for 1 minute before removing from pans. Cool on wire racks.

6 eggs
175g golden caster sugar , plus extra
175g self-raising flour
1 heaped tsp caraway seed
grated zest 1 lemon (save the juice for the filling)
50g butter , melted
juice 1 lemon
300g lemon curd
250g mascarpone
icing sugar , to serve

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Line a 27 x 40cm Swiss roll tin with non-stick baking parchment. Using electric beaters, whisk the eggs and sugar together until light and fluffy - this can take about 5 mins. Fold in the flour, caraway seeds and zest, then gradually fold in the butter. Tip the mix into the tin and bake for 12-15 mins until pale, but cooked and springy in the middle. Leave to cool a little, then turn out onto a sheet of non-stick baking parchment dusted with sugar, roll up like a Swiss roll and cool.
  • While the sponge is cooling, mix the lemon juice and half the lemon curd with the mascarpone and set aside. When the sponge is completely cool, unravel and spread with the mascarpone mix. Spread the remaining curd over the top, then roll up like a Swiss roll again. Dust heavily with icing sugar and serve in slices.
