GINGER AND SESAME MARINADE



Ginger and Sesame Marinade image

Fresh ginger juice adds a particular zing to a marinade: the fragrant, hot flavour penetrates into meat, poultry, fish and seafood, while helping to tenderise at the same time. The sesame seeds in this recipe add texture, the fish sauce adds saltiness, and the sweet-and-sour blend of sugar and lime juice completes the Asian credentials of this marinade.Can be used to prepare- 4 Beef steaks or 4 Lamb steaks or 4 Pork chops or 6 Chicken breasts or 6 Fish steaks and fillets or 4 Duck breasts or 2lbs of jumbo shrimp. Time does not include marinating.

5 in fresh gingerroot, peeled and grated
4 tablespoons lime juice or 4 tablespoons rice vinegar
3 tablespoons fish sauce or 3 tablespoons soy sauce
1 1/2 tablespoons toasted sesame seeds
1 tablespoon toasted sesame oil
1 tablespoon soft brown sugar

Steps:

  • The marinade- Put the ginger in a fine sieve, or a sieve lined with muslin, and press the juice into a bowl.
  • You need to extract 7 tbs ginger juice - add a little water to the ginger pulp and squeeze again if necessary. Add the remaining ingredients, except the sugar, and stir to mix.
  • Put the meat or seafood in a non-metallic shallow dish and rub the marinade all over. For meat, cover and leave in the fridge for at least 4 hours or overnight. Fish and shrimp only need marinating for up to 30 minutes in the refrigerator.
  • Remember to give the marinated food at least 20 minutes to return to room temperature before cooking.
  • To cook- While cooking the food, season and baste it with the marinade. Before brushing the final few strokes on, add the sugar and stir to dissolve; this helps glaze the food, but if the sugar is added too soon, it will burn and stick.

Spicy and sweet tempeh that melts in your mouth, suitable for vegans and those with lactose/wheat/gluten intolerances. Can be served warm or cold. Keeps in fridge for up to 5 days. Can be used as burger/sandwich filling or with greens for optimal food combination. Recipe adapted only slightly from Peter Berley's "The Modern Vegetarian Kitchen". My most requested recipe.

300 g tempeh
1/2 cup olive oil
1/2 cup tamari
1/2 cup apple cider vinegar
1/3 cup maple syrup
2 teaspoons ground cumin
2 teaspoons ground red chili pepper
1 teaspoon paprika

Steps:

  • Preheat oven 230 degrees celcius.
  • Slice tempeh into pieces desired size.
  • Select ovenproof dish that holds the slices in a single snug layer.
  • In a bowl, whisk together remaining ingredients.
  • Pour half of marinade into baking dish and place tempeh on top.
  • Pour over remaining tempeh.
  • Cover baking dish with foil and form a tight seal.
  • Bake for 15 mins then use tongs to turn over tempeh and bake covered for another 15 minutes.
  • Remove foil and continue to bake uncovered for further 10 mins or until browned.

  • In a blender, combine the sauce ingredients: ginger, garlic, sesame oil, rice vinegar, soy sauce, maple syrup, cornstarch, and nut butter. The sauce can also be whisked together in a bowl but I find the blender much easier.
  • In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add in the tempeh and cook for about 8 minutes, flipping every few minutes so that all sides are browned. Turn the heat to low and toss in 2 tablespoons of the sauce and continue to cook until the tempeh is fully coated in the sauce and it has started to caramelize a bit. Remove to a clean plate and return skillet to the heat.
  • Turn the heat back to medium, and add in the remaining tablespoon of olive oil and toss together the green beans and the carrots in the skillet. Cook for about 5 minutes. Add in a few tablespoons of water and place a lid on the skillet to steam the veggies a bit until tender. About another 5 minutes. Remove the lid and take out any excess water.
  • Pour in the remaining sauce as well as the tempeh. Toss to coat everything and continue to cook until sauce thickens and everything is nicely coated in the sauce. Cook about 2-3 more minutes.

  • For each marinade, add all the ingredients into a bowl and stir until combined. Alternatively, add all the ingredients into a air tight jar and shake until combined. You can either store the marinade in the refrigerator or freezer as is or marinade the tempeh (steps below).
  • Add marinade over tempeh in a freezer safe container or bag and toss until tempeh is fully coated in the marinade. Each marinade is enough for 1 8 oz package of tempeh.
  • Immediate Use: Refrigerate and let the tempeh marinade for at least 30 minutes (preferably overnight).
  • Freezing: Transfer the marinated tempeh to the freezer and freeze for up to 3 months. When ready to cook, place the frozen marinated tempeh into the refrigerator overnight or until completely thawed.
