1 tablespoon olive oil
2 cloves garlic, minced
1 whole shallot, minced
1/2 tablespoon fresh ginger root, minced
1/4 cup sake
1 tablespoon sugar
Salt to taste
1 tablespoon Asian chile sauce
1 cup tomatoes, crushed

Steps:

  • Heat oil over medium heat in a saucepan. Add garlic, shallots and ginger. Saute for 30 seconds and add crushed tomatoes, sake, sugar and chile sauce. Simmer for 15 minutes. Remove sauce from heat and set aside. When cool, puree in blender until smooth. Reheat to serve.

GINGER FLANK STEAK WITH SAKE-GLAZED VEGETABLES



Ginger Flank Steak with Sake-Glazed Vegetables image

Number Of Ingredients 13

1/2 cup soy sauce
1/2 cup sake
1/4 cup (packed) dark brown sugar
3 tablespoons minced peeled fresh ginger
1 tablespoon balsamic vinegar
4 garlic cloves, crushed
1 2-pound flank steak
1 pound asparagus, trimmed, cut into 1 1/2-inch lengths
3 tablespoons peanut oil
2 red bell peppers, cut into 1-inch-wide strips
1 1/2 pounds crimini mushrooms, halved, each half cut crosswise into 1/4-inch-thick slices
4 green onions, cut into 1-inch lengths
2 teaspoons cornstarch

Steps:

  • Combine first 6 ingredients in 13x9x2-inch glass baking dish. Add meat. Cover and refrigerate at least 2 hours and up to 1 day. Let stand at room temperature 1 hour before continuing.
  • Cook asparagus in large pot of boiling salted water until crisp-tender, about 4 minutes. Drain. Rinse under cold water to cool. Drain again.
  • Heat 2 tablespoons peanut oil in heavy large skillet over medium-high heat. Add red bell pepper strips and sauté 3 minutes. Add crimini mushrooms and sauté until mushrooms are soft, about 5 minutes. Add green onions and asparagus and sauté until vegetables are tender, about 2 minutes longer. Transfer vegetables to serving platter. Tent with foil to keep warm.
  • Heat remaining 1 tablespoon peanut oil in same skillet over high heat. Remove steak from marinade; reserve marinade. Add steak to skillet and cook to desired doneness, about 4 minutes per side for medium-rare. Transfer to cutting board. Tent with foil and let stand 5 minutes.
  • Meanwhile, place reserved marinade in small saucepan. Whisk in cornstarch. Whisk over high heat until sauce thickens and boils, about 3 minutes. Remove sauce from heat. Season sauce to taste with salt and pepper.
  • Cut steak across grain on diagonal into 1/2-inch-thick slices. Arrange steak slices atop vegetables on platter. Spoon some of sauce over meat and vegetables. Serve, passing remaining sauce separately.

1 clove garlic, finely grated
1 tablespoon finely grated fresh ginger
3 tablespoons soy sauce
3 tablespoons sake
1 tablespoon mirin
⅛ teaspoon sesame oil
¼ teaspoon ground black pepper
1 pinch cayenne pepper
½ teaspoon white sugar
¼ teaspoon kosher salt
1 ¼ pounds boneless, skinless chicken thighs, cut into 2-inch pieces
1 cup potato starch
1 quart canola oil, or as needed

Steps:

  • Mix garlic, ginger, soy sauce, sake, mirin, sesame oil, black pepper, cayenne, sugar, and salt in a medium bowl.
  • Place chicken in the marinade and mix until thoroughly and evenly coated. Cover and refrigerate for 1 to 10 hours.
  • Set up your dredging station: Place a wire rack over a foil-lined baking sheet. Add potato starch to a wide, shallow bowl.
  • Remove chicken from the refrigerator. Stir to coat with marinade. Toss 2 or 3 pieces at a time in the potato starch until evenly coated. Shake off any excess starch and place chicken on the wire rack. Repeat to dredge remaining pieces.
  • Tap the rack on the baking sheet to remove any loose chunks of starch, then transfer the baking sheet and rack of chicken to the refrigerator for 15 to 30 minutes.
  • Heat oil in a deep fryer to 350 degrees F (175 degrees C).
  • Without crowding, lower chicken carefully into the hot oil in batches. Fry, tossing occasionally, until cooked through and the outside is crunchy and browned, 3 to 4 minutes. Transfer to a paper towel-lined plate to drain. Repeat with remaining chicken.

  • Whisk ingredients together.
  • Add meat of your choice and refrigerate.
  • Tastes best with chicken marinating for 4-6 hours and flank steak about 8 hours or more.

1/4 cup reduced sodium soy sauce
1 tablespoon fresh ginger, grated
1 tablespoon dark sesame oil
2 tablespoons rice vinegar

4 (6 ounce) fresh tuna steaks, about 1 inch thick, rinsed and patted dry

Steps:

  • In a small bowl, combine all ingredients except tuna.
  • Place tuna steaks in a plastic ziploc type bag. Add Marinade to bag and seal. Set bag in a shallow pan.
  • Refrigerate for 30 minutes, turning bag occasionally to coat.
  • Lightly coat the grill rack with nonstick cooking spray.
  • Drain tuna and discard marinade.
  • Grill fish for 10 ro 12 minutes or until fish flakes with a fork (about 145 degrees F), turning once.
