1/4 cup plus 1 tablespoon olive oil, plus more for drizzling
4 anchovy fillets packed in oil, drained (optional)
4 chiles de árbol or 1 teaspoon crushed red pepper flakes
4 garlic cloves, thinly sliced
1 large onion, thinly sliced
4 celery stalks, finely chopped
1 sprig rosemary
Kosher salt, freshly ground pepper
1 Parmesan rind (optional), plus shaved Parmesan for serving
1 pound dried white beans or chickpeas, soaked overnight, drained
1 bunch kale or mustard greens, ribs and stems removed, leaves coarsely chopped
1 large bunch flat-leaf spinach, trimmed, coarsely chopped
4 cups trimmed arugula or watercress, divided
2 teaspoons fresh lemon juice

Steps:

  • Heat 1/4 cup oil in a large Dutch oven over medium heat. Cook anchovies, if using, chiles, and garlic, stirring occasionally, until garlic is soft and anchovies are dissolved, about 4 minutes. Add onion, celery, and rosemary; season with salt and pepper. Increase heat to medium-high and cook, stirring occasionally, until onion is very soft and golden brown, 8-10 minutes.
  • Add Parmesan rind, if using, beans, and 10 cups water. Bring to a boil, reduce heat, and simmer, stirring occasionally and adding more water as needed, until beans are beginning to fall apart, 3-4 hours.
  • Lightly crush some beans to give stew a creamy consistency. Mix in kale, spinach, and half of arugula; season with salt and pepper. Cook until greens are wilted, 5-8 minutes.
  • Toss remaining arugula with lemon juice and 1 tablespoon oil; season with salt and pepper. Divide stew among bowls; top with arugula, shaved Parmesan, and a drizzle of oil.
  • DO AHEAD: Stew can be made 3 days ahead. Let cool; cover and chill.

1 tablespoon salted butter
1 1/2 pounds green beans, trimmed
1 red bell pepper, finely chopped
1 teaspoon red pepper flakes
Kosher salt

Steps:

  • Add the oil and butter to a skillet over medium-high heat. When the butter is melted and hot, add the green beans and bell pepper and toss to coat. Add the red pepper flakes and some salt and toss again. Cook, stirring frequently, until the beans are crisp-tender, about 5 minutes.

1 lb green beans, trimmed
1 cup red wine vinegar
1/2 cup cider vinegar
1/4 cup balsamic vinegar
2 tablespoons mustard seeds
1 tablespoon black peppercorns
2 tablespoons salt
1 tablespoon sugar
2 teaspoons fennel seeds
2 teaspoons red pepper flakes, crushed
8 garlic cloves, chopped
8 fresh dill sprigs, chopped
4 bay leaves

Steps:

  • Cook the beans in a large saucepan of boiling water until crisp-tender, about 3 minutes. Drain and cool in a bowl of ice water. Strain and set aside in a shallow baking dish.
  • In a medium saucepan, combine the vinegars, mustard seeds, peppercorns, salt, sugar, fennel seeds, pepper flakes, garlic, dill and bay leaves over high heat. Bring to a boil, and cook for 1 minute to dissolve the sugar and salt.
  • Pour the vinegar solution over the beans to cover completely. Marinate, refrigerated for at least 24 hours. The beans will keep refrigerated for 3 to 4 weeks.

¾ pound fresh green beans, trimmed
2 tablespoons soy sauce
1 clove garlic, minced
1 teaspoon garlic chili sauce
1 teaspoon honey
2 teaspoons canola oil

Steps:

  • Arrange a steamer basket in a pot over boiling water, and steam the green beans 3 to 4 minutes.
  • In a bowl, mix the soy sauce, garlic, garlic chili sauce, and honey.
  • Heat the canola oil in a skillet over medium heat. Add the green beans, and fry for 3 to 5 minutes. Pour in the soy sauce mixture. Continue cooking and stirring 2 minutes, or until the liquid is nearly evaporated. Serve immediately.

3 tablespoons olive oil
1 onion, sliced
1/4 lb cremini mushroom, trimmed and quartered (about 14 mushrooms)
1 1/2 lbs green beans, trimmed and slice into 1-inch pieces
2 teaspoons salt
1/2 teaspoon fresh ground black pepper
1/4 cup white wine
1/2 teaspoon red pepper flakes
1 bunch kale, rinsed, stemmed, and roughly chopped (1/2 pound)
2 tablespoons lemon juice (about 1/2 a lemon)
3 tablespoons finely grated parmesan cheese

Steps:

  • Warm the olive oil in a large, heavy saute pan over medium-high heat.
  • Add the onions and cook until translucent, about 4 minutes.
  • Add the mushrooms, green beans, salt, and pepper and cook for 2 minutes.
  • Add the wine and continue cooking until the green beans are almost tender, about 5 minutes.
  • Add the red pepper flakes and the kale and continue cooking until the kale has wilted, about 4 to 5 minutes.
  • Add the lemon juice and the Parmesan cheese.
  • Toss to coat and serve immediately.

2 tablespoons soy sauce
1 tablespoon rice wine vinegar
2 teaspoons sugar
1/2 teaspoon red pepper flakes
2 tablespoons peanut oil
3/4 lb green beans, cut on bias into 1 . 5-inch pieces
4 scallions, cut into 1 . 5-inch pieces
1 teaspoon peanut oil
3 garlic cloves, mashed

Steps:

  • Mix soy sauce, vinegar, sugar, pepper flakes and 1 tablespoon water in a small bowl. Set aside.
  • Heat a heavy skillet (12") over high heat until extremely hot. Carefully swirl 2 tablespoons oil to coat the bottom. Fry green beans, flipping every 30 seconds or so with a wide spatula, until slight charred and crisp-tender - about 4 minutes. Add scallions, continue cooking in same manner until scallions are charred and beans are tender.
  • Make a well in the center of the pan; mash garlic and remaining 1 t. oil together. Fry until fragrant - about 5 seconds - and stir into vegetables. Add soy mixture and toss into vegetables to coat; Cook until liquid is reduced by about half, about 15 seconds. Serve immediately.
