Not your average salad, this colorful, hearty main dish features pork chops, broccoli, red cabbage, and brown rice.

3 tablespoons rice vinegar
5 tablespoons vegetable oil
4 cups finely shredded red cabbage (from 1/2 head)
Kosher salt and freshly ground pepper
4 boneless pork chops (1/2 inch thick; 1 pound total), patted dry
4 cups broccoli florets (12 ounces)
4 scallions, thinly sliced, whites and greens separated
2 tablespoons minced fresh ginger (from a 2-inch piece)
2 mini cucumbers, halved lengthwise and thinly sliced (3/4 cup)
1 cup cooked brown rice

Steps:

  • In a large heatproof bowl, whisk together vinegar and 3 tablespoons oil. Add cabbage; toss to coat. Season generously with salt. Season pork with salt and pepper. Heat a large skillet over medium-high. Add 1 tablespoon oil and broccoli; season with salt and pepper. Saute 2 minutes. Add 1/4 cup water; cover and cook until broccoli is crisp-tender, 3 minutes. Stir in scallion whites and ginger; cook, stirring, 30 seconds. Transfer to bowl with cabbage.
  • Add remaining 1 tablespoon oil to skillet over medium-high heat, then pork. Cook, flipping once, until a thermometer inserted in thickest parts registers 140 degrees, 3 to 4 minutes. Transfer to a plate; let cool slightly, then thinly slice. Toss cucumbers and rice with cabbage mixture; season with salt and pepper. Divide among plates; serve with pork and top with scallion greens.

1 lime
1 tablespoon peanut oil
Kosher salt
1 10-ounce bag mixed vegetable slaw or salad blend (such as kale, cabbage and kohlrabi)
2 Persian cucumbers, thinly sliced
1 shallot, thinly sliced
1 tablespoon grated peeled fresh ginger
1 pound ground pork
1 tablespoon chili-garlic sauce
1 tablespoon fish sauce
1 cup packed fresh cilantro and/or mint
1/4 cup chopped roasted salted peanuts

Steps:

  • Grate the lime zest and set aside, then juice half of the lime into a large bowl and cut the other half into small wedges. Whisk 1 teaspoon peanut oil and a pinch of salt into the lime juice. Add the slaw and cucumbers and toss to coat.
  • Heat the remaining 2 teaspoons peanut oil in a large skillet over medium-high heat. Add the shallot and cook until softened, 2 to 3 minutes. Add the ginger and cook, stirring, until soft but not browned, about 1 minute. Stir in the pork and ½ teaspoon salt and cook, breaking up the meat with a wooden spoon, until browned in spots and no longer pink, 6 to 8 minutes. Carefully pour off all but about 1 tablespoon fat from the skillet. Stir in the chili-garlic sauce, fish sauce and lime zest and remove from the heat.
  • Divide the slaw mixture among bowls. Top with the pork, herbs and peanuts; serve with the lime wedges.

This salad is best served when freshly made and still very crisp, but won't suffer much from sitting out for an hour or two.

1 teaspoon finely grated lime zest
2 1/2 tablespoons fresh lime juice, plus more to taste
2 tablespoons fresh orange juice
2 tablespoons fish sauce, plus more as needed
1 tablespoon honey
Fine sea salt
4 tablespoons grapeseed or safflower oil
1/2 cup thinly sliced shallot (1 large)
6 ounces pad Thai or other flat rice noodles
2 garlic cloves, finely grated or mashed to a paste
1 (2-inch) piece ginger, peeled and grated (about 2 teaspoons)
1 Thai or serrano chile, thinly sliced and seeded if you like
1 pound ground pork (or turkey)
1 cup thinly sliced cucumbers
2 scallions, white and green parts, sliced
1 1/4 cups cherry tomatoes, halved
1 cup mung or other bean sprouts (or 1 cup lettuce)
1 packed cup mint leaves
1 packed cup cilantro or basil sprigs, or a combination
2 cups shredded romaine or other crisp lettuce
Red-pepper flakes, for serving
Lime wedges, for serving

Steps:

  • In a small bowl, whisk together lime zest and juice, orange juice, 2 tablespoons fish sauce, honey and a small pinch of salt. Pour half of the mixture into a large bowl and whisk in 3 tablespoons grapeseed oil and the shallots. Set both mixtures aside.
  • Cook noodles in salted water and according to package directions. Rinse under running water to remove any excess starch, then drain well and add to bowl with shallots, tossing well. Set aside while preparing remaining ingredients.
  • Heat remaining 1 tablespoon grapeseed oil in a large skillet over medium-high heat. Add garlic, ginger and chile, and cook until lightly golden and aromatic, about 1 minute. Add pork and stir, breaking up pieces with a wooden spoon. Cook without stirring too often, until browned, about 8 minutes. Pour in lime juice mixture from the small bowl. Simmer gently until most of the liquid is evaporated, stirring to coat pork in the glaze, another 1 minute. Remove from heat and set aside to cool slightly.
  • Add pork, cucumbers, scallions, cherry tomatoes, bean sprouts and herbs to the noodles and toss well to combine. Taste and add more fish sauce, lime juice or both. Just before serving, toss in lettuce, and serve sprinkled with red-pepper flakes with lime wedges on the side.

1 garlic clove, minced

1/4 cup Minute Maid orange passion juice blend
1/4 cup teriyaki sauce
1 tablespoon peeled and grated fresh gingerroot

1 (16 ounce) bag iceberg lettuce or 1 (16 ounce) bag mixed salad greens
1 (10 ounce) bag romaine lettuce hearts
1 (15 ounce) can mandarin oranges
1/3 cup sweetened dried cherries
1/3 cup sliced honey-roasted almond (or toasted almonds)
1 tablespoon stemmed and finely chopped fresh cilantro leaves (optional)

1/2 green onion, Japanese negi (negi in Japanese = green onion = huge, or you could fake it with one American one if necessary)
1/2 of a japanese cucumber (maybe 1/4 of American size)
2 shiso leaves (see pic, Google it, check your Asian market, there's no subsititute for that flavor)
200 g sliced pork (about half a pound, about 6 slices)
1 tablespoon mirin
1 tablespoon cooking sake
2 tablespoons soy sauce
1 tablespoon ginger, grated

  • Salad:.
  • Thinly slice all, and put in the fridge while working on the pork.
  • To serve, add tomato if desired. Dressing is very optional - there is SO much flavor. A bit of Japanese-style mayo adds a nice touch.
  • Ginger Pork:.
  • Fry pork slices in 1T vegetable oil until done and browned on both sides.
  • While frying the pork, combine the remaining ingredients to make the sauce.
  • When the pork is done, add the sauce, heat just a bit more and serve (best with rice and miso soup!).

½ cup all-purpose flour
1 ½ tablespoons peanut oil
¼ cup chicken broth
¼ cup water
