1/2 cup A.1. Original Sauce
3 Tbsp. orange marmalade
2 Tbsp. soy sauce
1/2 tsp. ground ginger
1 beef top round steak (1-1/2 lb.)

Steps:

  • Preheat grill to medium heat. Mix steak sauce, marmalade, soy sauce and ginger; set aside.
  • Grill steak 7 to 8 min. on each side for medium doneness (160°F), brushing with 1/4 cup of the steak sauce mixture during the last 2 min. of the grilling time. Let stand 5 min.
  • Meanwhile, heat remaining steak sauce mixture. Cut steak across the grain into thin slices. Serve topped with the warm steak sauce mixture.

2 pounds medium beets (about 7), trimmed
3/4 cup fresh orange juice (from 2 to 3 oranges)
2 tablespoons white miso paste
2 1/2 teaspoons sugar
2 1/2 teaspoons soy sauce
4 1/4-inch-thick slices ginger
3 cloves garlic, smashed
Kosher salt
Sliced scallions, for topping

Steps:

  • Preheat the oven to 400˚ F. Put the beets in a large baking dish and add 1/3 cup water; cover the dish with foil. Roast, adding more water to the pan if needed, until the beets are easily pierced with a knife, 50 to 60 minutes. Uncover and let cool. Rub off the beet skins and cut the beets into 1/2-inch-thick wedges; transfer to a medium bowl.
  • Combine the orange juice, miso paste, sugar, soy sauce, ginger and garlic in a medium skillet over medium-high heat. Bring to a simmer and cook, stirring occasionally, until thickened and reduced to about 1/4 cup, 8 to 10 minutes. Strain through a fine-mesh sieve and pour over the beets. Season with salt and toss. Sprinkle with scallions.

My friend call this her "go to" recipe for entertaining for good reason. You prepare the marinade the night before and the glaze early on the day before you serve it. Leaves you with a great meal and time to mingle. Cut the recipe in half and use only one 2 lb. steak or two 1 pound steaks. Other steak cuts work well, too. 2/3 cup dry red wine
1/2 cup fresh orange juice
1/3 cup fresh lime juice
1/2 cup honey
1/4 cup cider vinegar
1/4 cup soy sauce, preferably Kikkoman
2 tablespoons mild olive oil
1 1/2 teaspoons minced garlic
1 teaspoon finely grated orange zest
1 teaspoon Tabasco sauce
1/2 teaspoon ground cumin
1/2 teaspoon dried thyme, crumbled
1/4 teaspoon fresh ground black pepper
2 (2 lb) beef flank steaks, marinated in marinade overnight

Steps:

  • To make the marinade, combine all the ingredients in a shallow 14-inch glass baking dish and stir until the honey is dissolved.
  • Add the flank steaks and turn to coat with the marinade. Cover and refrigerate overnight.
  • Bring the steaks to room temperature.
  • Prepare coals for grilling or preheat the broiler.
  • Drain the steaks, reserving the marinade.
  • Place the marinade in a large skillet and bring to a boil over high heat. Continue boiling until the liquid is syrupy and mahogany-colored, about 10 minutes.
  • Remove from the heat and let cool. (There should be about 1 cup of glaze.).
  • Brush the glaze on both sides of the steaks.
  • Grill or broil the steaks 4 inches from the heat until nicely glazed, about 5 minutes.
  • Turn and grill or broil 5 minutes longer for medium-rare steaks.
  • Let the meat rest for 5 minutes before carving.
  • Transfer the steaks to a cutting board. If you broiled the steaks, reserve any pan drippings.
  • Holding a sharp knife at a 45-degree angle, cut the steaks across the grain into thin slices.
  • Transfer the meat to a warmed platter, top with the pan drippings, and serve immediately.

1 cup (250 mL) VH® Medium Garlic Rib Sauce
1/2 cup (125 mL) VH® Orange Ginger Stir-Fry Sauce
1/2 cup (125 mL) red wine vinegar
1 tbsp. (15 mL) sesame oil
4 green onions; sliced, white and green separated
1 1/2 lbs. (700 g) boneless top sirloin steak cut into 4 equal portions, 3/4 -1" (2-2.5 cm) thick
PAM® Grilling Spray

Steps:

  • Whisk VH® Medium Garlic Rib Sauce, VH® Orange Ginger Stir-Fry Sauce, red wine vinegar and sesame oil together. Reserve 1 cup (250 mL). Place remaining sauce, the white part of the onion and the steak into a resealable bag. Seal bag and let stand at room temperature for up to 20 minutes, or refrigerate for 8-24 hours, turning occasionally.
  • Spray grill and utensils with PAM® Grilling Spray. Preheat grill to medium heat.
  • Remove steak from bag, shaking off excess marinade. Discard marinade. Place steaks on grill and cook for approximately 5 minutes on each side for medium-rare. Remove from heat and let steak stand for 5 minutes before serving.
  • Meanwhile, add onion greens to the reserved mixture and heat in a small saucepan until warm. Drizzle steaks with sauce. Serve the rest for dipping.

1 1/2 lbs london broil beef, trimmed of visible fat (1 inch thick, divided)
2 teaspoons dried orange peel or 1 1/2 teaspoons freshly grated orange zest

1 tablespoon olive oil
1/4 cup orange juice
1 tablespoon dried basil
1/4 teaspoon black pepper
1/4 teaspoon seasoning salt

Steps:

  • Put all ingredients in a medium sized freezer bag. Shake well. Let sit in the refrigerator at least 1/2 hour.
  • Preheat a pan on the stove (I recommend cast-iron) on medium heat.
  • Remove the pan from the heat to set the steaks in the pan.
  • Pour the marinade over top of the steaks.
  • Return the pan to the heat, flipping the steaks several times (every 3 minutes or so)until the marinade has cooked off and the steaks have browned (about 10-15 minutes).
