I find it very relaxing to spend a morning or afternoon in my kitchen trying new recipes. This recipe is one of my favorites-it won first prize in a statewide contest! The salsa is a fun and zippy addition.

1/3 cup fresh lime juice
3 garlic cloves, minced
1/2 teaspoon ground ginger
1/2 teaspoon crushed red pepper flakes
1/4 teaspoon salt, optional
1 pound boneless skinless chicken breast halves, cut into 1-inch strips
SALSA:
2 cups diced fresh plum tomatoes
1 cup diced green pepper
1/2 cup diced red onion
1 tablespoon minced fresh cilantro
1 tablespoon olive oil
1 tablespoon fresh lime juice
2 garlic cloves, minced
1/4 teaspoon salt, optional

Steps:

  • In a large resealable plastic bag, combine the lime juice, garlic, ginger, red pepper and salt if desired; add the chicken. Seal bag and turn to coat; refrigerate for 2-4 hours. , Meanwhile, combine all salsa ingredients; cover and refrigerate until ready to serve. , Discard marinade. In a large nonstick skillet, brown chicken for about 10 minutes or until chicken is no longer pink. Serve with salsa.

Steps:

  • Pound the chicken to 1/2 inch thickness. In a large resealable plastic bag combine the garlic, ginger, oil and lime juice. Seal bag and shake until blended. Open bag and add chicken. Seal bag and marinate in refrigerator for no more than 20 minutes.
  • Remove chicken from bag and grill or broil, basting with marinade, until cooked through and juices run clear. Dispose of any remaining marinade.

1kg pack boneless skinless chicken thighs
1 thumb-size piece of fresh ginger, peeled and very finely chopped
4 garlic cloves, finely chopped
1 tsp mild chilli powder
15g pack fresh coriander, chopped
juice of 1 lime
2 tbsp sunflower oil
2 medium onions
1 tsp ground turmeric
400ml can reduced-fat coconut milk
1 fresh red chilli, deseeded and sliced
1 chicken stock cube

Steps:

  • Slice each chicken thigh into 2 or 3 large chunks, then put in a bowl with the ginger, garlic, chilli powder, half the coriander, lime juice and 1 tbsp of the oil. Stir well, then cover and leave in the fridge to marinate until ready to cook. For the best flavour, do this in the morning or, better still, the night before.
  • Peel and quarter the onions, then very finely chop them in a food processor; for a curry you want the onion really fine. Heat the remaining oil in a wok or large frying pan, then add the onion and stir-fry for about 8 mins until soft. Stir in the turmeric and cook for 1 min more, stirring well.
  • Tip in the chicken mixture with the marinade and cook over a high heat until the chicken changes colour. Pour in the coconut milk, add the chilli and stock, then cover and simmer for 20 mins until the chicken is tender. Stir in the remaining coriander, then serve with pilau rice, a bowl of mango chutney - we like Geeta's - and some poppadoms or naan bread.

1 (2-inch) piece fresh ginger, peeled and chopped
4 cloves garlic, smashed
3/4 cup soy sauce (gluten-free, if desired)
1/2 cup fresh lime juice
2 tablespoons sugar
1/4 cup chopped green onions
1/4 cup peanut oil
1/4 teaspoon coarsely ground black pepper
2 pounds large shrimp, shells and tails on

Steps:

  • Place shallots, ginger, garlic, soy, lime juice, and sugar in a blender and blend until smooth. Add the green onion and oil and blend until combined. Season with black pepper, to taste. Place shrimp in a large bowl, pour the marinade over, and let marinate at room temperature for 20 minutes.
  • Preheat a grill to high. Remove shrimp from the marinade and grill for 1 1/2 to 2 minutes per side. Serve on brown paper bags, if desired.

2 lb boneless skinless chicken breasts
4 cloves of garlic, minced
1 inch nub of fresh ginger, peeled and minced
1/4 cup soy sauce or coconut aminos
1/4 cup lime juice
1/4 cup avocado oil or olive oil
1 tbsp fish sauce

Steps:

  • At least 1 hour prior to cooking combine minced garlic and ginger, lime juice, coconut aminos or soy sauce, avocado oil, and fish sauce in a large mixing bowl and whisk thoroughly. Add chicken breasts to the bowl and toss until they are evenly coated in the marinade. Cover the bowl and place in the fridge for at least 1 hour to marinate.
  • Clean your grill and preheat to high heat. Once the grill is hot, place marinated chicken on grill grates diagonally. Close the grille and cook for 3 minutes
  • Flip the chicken to the other side maintaining the same diagonal on the grill. Close the grill and cook for 3 minutes.
  • Flip the chicken and rotate 45 degrees - this will ensure the chicken cooks evenly and you get those X grill marks. Close the grill and cook for 3 minutes. Open the grill and flip again without rotating, close and cook for final 3 minutes - in total your chicken should cook for 12 minutes.
  • Use an instant read thermometer to check the internal temperature of the chicken. When it shows 165F the chicken is cooked through. Enjoy immediately or store in an air tight container for up to 4 days

Steps:

  • Chicken:
  • Combine garlic, ginger, citrus juice, soy sauce, vinegar, and sugar in a medium bowl. Place chicken halves in a large resealable plastic bag and pour in marinade. Seal bag, pressing out any air. Chill at least 12 hours and up to 2 days.
  • Place rack in top third of oven; preheat to 425°F. Remove chicken from bag; discard marinade. Pat chicken dry with paper towels; season lightly with salt.
  • Roast chicken on a foil-lined rimmed baking sheet until deep brown and cooked through, 30-40 minutes.
  • Dipping sauce and assembly:
  • Bruise lemongrass stalk by lightly crushing with a rolling pin. Bring lemongrass and 1/2 cup water to a boil in a small saucepan. Remove from heat and let sit until very fragrant, 8-10 minutes; strain lemongrass infusion into a large measuring glass.
  • Meanwhile, heat a large skillet, preferably cast iron, over medium-high. Toast shallots, scallions, chile, and garlic, tossing occasionally, until dark brown in spots, 8-10 minutes. Let cool. Remove skins from garlic and coarsely chop garlic with shallots, scallions, and chile.
  • Add garlic, shallots, scallions, chile, and ginger to lemongrass infusion. Stir in fish sauce, lime juice, and sugar.
  • Using a sharp knife, remove peel and white pith from pomelo; discard. Working over a medium bowl, cut along sides of membranes to release segments. Squeeze juice from membranes into bowl; discard. Tear segments into large pieces. Mix into dipping sauce.
  • Transfer chicken to a platter, spoon some dipping sauce over, and top with cilantro. Serve with remaining dipping sauce alongside.

An offspring of the recent RSC #9, this recipe was inspired by some leftover light coconut milk. Despite it's odd origins this chicken is light, easy and delicious. You could give it a more Thai feel with the addition of nam pla or a more Caribbean flair by replacing the cayenne with a small amount of finely diced scotch bonnet peppers. While I prepared this on my George Foreman, certain it would work equally well on an outdoor grill. (As per WW Recipe Builder, 3 pts per serving.)

zest and juice 1 lime
1 tbsp maple syrup or clear honey
thumb-size piece fresh root ginger , cut into matchsticks, plus 1 tsp grated root ginger
2 skinless, boneless chicken breasts
450g/1lb sweet potatoes , roughly chopped
1 tbsp olive oil

Steps:

  • Mix half the lime zest and all the juice with the maple syrup and grated ginger. Slash each chicken breast 3-4 times with a sharp knife, then coat well with the marinade. Set aside for 10 mins. Heat the grill and line the grill tray with foil.
  • Cook the sweet potatoes in salted boiling water for 10-12 mins until tender. Drain and mash well, adding the rest of the lime zest, plus some seasoning. Meanwhile, grill the chicken breasts for 10-15 mins, until cooked through and slightly caramelised.
  • Heat the oil in a small frying pan. When it's really hot, add the ginger matchsticks and fry for 1 min until the ginger is crisp. Lift out the matchsticks with a slotted spoon, then stir the mash into the gingerinfused oil. Divide the mash between 2 plates, top each with a chicken breast, scatter with the crisp ginger and serve with some sugar snap peas.

2 lbs boneless chicken (breasts, thighs or tenders)
⅓ Cup Mayonnaise
1 zest Lime
2 lime juice
2 Tbs Garlic Ginger Paste (see recipe on Loaves and Dishes or substitute 2" ginger peeled and grated and 3 tsp minced garlic.)
1 Tbs Kosher Salt

Steps:

  • Remove the chicken from the package and examine. If the breast is very large (thicker than 1"), using your knife, cut the breast in half as if you were making a book out of the breast. This will result in two even pieces of chicken. Set the chicken aside and wash your hands, clean up your work area with hot soapy water.
  • Into a bowl, whisk together the mayo, lime zest, lime juice and garlic ginger paste (if you don't have the paste, see notes for the substitution), salt.
  • Pour the marinade into a zip style plastic bag (or you can just leave the marinade in the bowl). Put the chicken into the marinade. Make sure that the marinade completely covers all of the chicken pieces. If leaving in the bowl, put plastic wrap over the top or seal the plastic bag very well. Allow to marinate for up to 24 hours (24 hours is really optimal).
  • After marinating, cook the chicken on the grill. Do not reuse any of the marinade to baste the cooking chicken. Discard all of the marinade after removing the chicken.
  • Serve chicken with slices of lime on the side.

Steps:

  • In a large non-reactive bowl, combine soy sauce, lime juice, lime zest, ginger, garlic, honey, oil and 2 tablespoons cilantro; mix well. Remove and reserve 2 tablespoons of the marinade. Add chicken to bowl, tossing to make sure each piece is coated; refrigerate for 2 to 4 hours.
  • Preheat broiler to high. Remove chicken from marinade and place in a baking dish; discard marinade. Broil chicken, 4 to 6 minutes; flip and brush chicken with reserved marinade. Return chicken to oven and broil until chicken is cooked through, about 4 to 6 minutes more.
  • To serve, sprinkle chicken with scallions, remaining 2 tablespoons cilantro and any sauce accumulated in baking dish. Yields 1 chicken breast and about 1/3 cup sauce per serving.

Steps:

  • Using a sharp knife, score chicken halfway through the flesh in a criss-cross pattern.
  • Combine remaining ingredients (lime juice through peel) in a double plastic bag. Add chicken and squeeze bag to coat chicken with marinade; seal bag.
  • Allow chicken to marinate for 20 minutes, turning bag occasionally.
  • Remove chicken from marinade; discard marinade. Grill chicken on an oiled grid over medium heat on natural gas barbecue for 12 - 15 minutes or until chicken is cooked through.

Steps:

  • Preheat barbecue to medium heat.
  • Make shallow cuts to both sides of the chicken.
  • In a small bowl, mix together lime juice, honey, ginger, vegetable oil, cumin and salt. Brush marinade over both sides of the chicken.
  • Place chicken on the barbecue with lid down. Turn and baste often with marinade for the first five minutes. Continue to barbecue until the chicken feels springy when pressed and a meat thermometer reaches 165F, about 5 to 7 more minutes, depending on your barbecue.

This ginger and lime sauce is a light, fresh, and zesty sauce that is perfect for dipping spring rolls into or using as a marinade or condiment.

2 tablespoons lime juice ( freshly squeezed ; see note below on using limes)
1 teaspoon honey
2 tablespoons olive or avocado oil
2 tablespoons fish sauce
1 splash soy sauce (amount is to taste)
1 large garlic clove, minced
1 teaspoon fresh ginger , grated
1 tablespoon finely chopped chili pepper, seeds included (use Thai chile or any pepper with medium-high heat and as many as you'd like)
1 small handful cilantro leaves, roughly chopped, adjust to taste

Steps:

  • Gather the ingredients.
  • Combine all ingredients in a small bowl. Give the ingredients a good stir and then set the bowl aside.
  • Allow the sauce to sit on the counter for a minimum of 10 minutes. You may also allow the sauce to sit overnight and use the next day; just cover the bowl and place it in the refrigerator. After the 10 minutes, or overnight, taste the sauce and see if it is to your taste or if it needs tweaking. You may at this time also want to think about what you'll be using it on and if you should add more soy sauce.
