Use fresh and ground ginger to make these moreish biscuits. They're perfect served with a cuppa for afternoon tea, or as a treat anytime

100g salted butter , cubed
75g light brown soft sugar
1 tbsp grated fresh ginger
100g golden syrup
250g self-raising flour
1½ tbsp ground ginger
1 tsp bicarbonate of soda
1 small egg yolk, beaten

Steps:

  • Heat the oven to 190C/170C fan/gas 5. Line two large baking trays with baking parchment. In a saucepan over a low heat, melt the butter, sugar, fresh ginger and golden syrup and leave to cool.
  • Mix the flour, ground ginger and bicarbonate of soda together in a bowl with a wooden spoon. Gradually stir in the cooled sugar mixture and the egg yolk and knead briefly to make a dough.
  • Roll the dough into 20g balls and put on the prepared baking trays with 3cm between each to allow for spreading. Bake for 8-10 mins until golden brown. Leave to cool on the trays for a min, then transfer to a cooling rack to cool completely.

Bake these grown-up gingerbread biscuits, spiced with black pepper and stem ginger. They're perfect after dinner with an iced shot of limoncello or a hot toddy

175g butter , softened
85g dark muscovado sugar
1½ tsp ground ginger
½ tsp ground cinnamon
½ tsp coarsely ground black pepper
1 lemon , zested and 3-4 tsp juice
225g plain flour
50g candied lemon peel (or a mix of lemon and orange)
50g stem ginger , chopped into small chunks
100g icing sugar

Steps:

  • Mix the butter and sugar with a wooden spoon. Stir in the spices, lemon zest and flour, then tip in the candied lemon peel and stem ginger - you might need to get your hands in to bring the mix together as a dough. Divide the dough in two and shape each half into a log about 5cm across. Wrap in cling film, then chill for 1 hr. You can freeze the unbaked dough for up to three months.
  • Heat oven to 180C/160C fan/gas 4. Slice the logs into 1cm-thick rounds, place on two baking trays lined with baking parchment and bake for 12-15 mins. Leave to cool completely on the tray.
  • Mix the lemon juice with the icing sugar to make a thin glaze. Brush over the biscuits and leave to set. Will keep for three days in an airtight container.

120g unsalted butter, softened
1½ tbsp black treacle
170g soft light brown sugar
½ tsp fine sea salt
1 medium egg
200g plain flour
¼ tsp bicarbonate of soda
¼ tsp ground cloves
1½ tsp ground ginger
½ tsp ground cinnamon
60g golden caster sugar

Steps:

  • Beat together the butter, treacle, brown sugar and salt in a large mixing bowl. Add the egg, then beat through all of the remaining dry ingredients apart from the caster sugar. Chill the mixture in the fridge for 1 hr.
  • Heat the oven to 200C/180C fan/gas 4. Line two baking sheets with baking parchment. Roll the mixture into 20 even-sized balls (weighing for accuracy, if you like). Tip the caster sugar onto a small plate, then add each ball and roll around to coat. Space each ball out on the baking sheets. Bake for 9-10 mins until golden brown. Leave to cool completely on a wire rack.

My English cousin in Yorkshire sent me this old-fashioned recipe for buttery ginger cookies (or "biscuits" if you're British). You'll love the taste!

Number Of Ingredients 8

2-1/2 cups biscuit/baking mix or self-rising flour
1/2 cup sugar
1-1/4 to 1-1/2 teaspoons ground ginger
1 teaspoon baking soda
Pinch salt
1/2 egg, beaten
1/2 cup corn syrup or maple syrup
1/4 cup butter, cubed

Steps:

  • In a bowl, combine baking mix or flour, sugar, ginger, soda and salt. Using hands, rub egg into mixture. , In a saucepan, warm syrup and butter; stir into batter. Let stand for 3-4 minutes, then knead. Roll heaping teaspoonfuls into small balls. Place 2 in. apart on greased baking sheets. , Bake at 325° for 12-15 minutes. Cookies will flatten and "crackle" when done.

  • In the bowl of a stand mixer with paddle attachment, beat butter and brown sugar until light and creamy. Beat in egg, and then add treacle and Vanilla Extract and beat until smooth.
  • In a medium bowl, add flour, baking soda, salt, ginger, cinnamon, nutmeg and clove and whisk until combined. Add the crystalised ginger and flour mixture to the butter mixture and mix on low until just blended. Cover bowl with cling wrap and refrigerate for at least 1 hour and up to 3 hours.
  • With a tablespoon, scoop up a heaped spoonful of chilled dough and roll into balls. Roll balls in sugar before placing onto prepared baking sheets, spacing 5cm apart. Pop back in fridge for 10 minutes, before putting in the oven.

  • Make the biscuits. Beat the butter and sugar in the bowl of a stand mixer fitted with the beater until light and creamy. Beat in the treacle and egg yolk followed by all the dry ingredients until you have a soft dough.
  • Turn out the dough onto a work surface and gather it into a ball, then wrap it in cling film and refrigerate for 30 minutes until firm enough to roll.
  • Heat the oven to 180°C/160°C fan/350°F/Gas 4. Roll out the chilled dough on a lightly floured surface to about 5mm thick, then cut out a variety of shapes with the cutters. Place the biscuits on the lined baking trays and bake for 10–12 minutes, depending on size, until they just darken a little at the edges. Allow to cool on the trays for 5 minutes, then transfer to a wire rack to cool completely.
  • To decorate, dust the work surface with a little icing sugar and knead the sugar paste to soften. Roll out the sugar paste to about 3mm thick and cut out shapes with the biscuit cutters to match the biscuits. Brush the biscuits with a tiny amount of edible glue and stick the matching shapes of sugar paste on top.
