APPLE AND GINGER TEA RECIPE
An aromatic apple and ginger tea that is calming and great for the body and spirit. Sip it warm in the winter or over ice cubes in the summertime.

Steps:
- Gather the ingredients.
- Cut the apples into large wedges, but discard the core and stem.
- The ginger should be left unpeeled but cut into small pieces.
- Place all of the ingredients, except the sweetener, into a pot then cover and simmer under medium heat until it comes to a boil. After it boils, turn the heat to low and leave covered. Continue to simmer for another 10 to 15 minutes.
- Add the honey (or sweetener of choice) and turn the heat off. Allow it to sit for about 5 minutes before serving. Taste and adjust the sweetener if desired. You can also sprinkle some ground cinnamon into each cup.
- Serve warm or chilled over ice cubes in the warmer months.

APPLE CRISP WITH GINGER
A fun twist on the standard apple crisp, this apple crisp with ginger is going to delight your taste buds and have you coming back for more and more!

- Preheat oven to 350°F. Lightly spray a 10 by 8 inch baking pan with cooking spray. Set aside.
- In a large bowl, mix ginger root, lemon zest, lemon juice, sugar, and cinnamon. Add apple chunks and mix thoroughly. Make sure the zest and ginger root are distributed equally throughout the apples. Put into baking dish.
- In the same bowl that you used for the apple mixture, mix flour, oats, cinnamon, nutmeg, and brown sugar. Add the softened butter, and use two knives held together in your hand (or a pastry cutter or fork) to cut the butter into the dry ingredients. The mixture should hold together in large clumps.
- Using a large spoon or your hand, sprinkle the crisp topping over the apple mixture. Put into preheated oven and bake 1 hour and 10 minutes, or until apples are soft and crisp is lightly browned on top. Cool slightly, and serve warm with ice cream, if desired.

APPLE CUPCAKES

- For the cake: Preheat oven to 350 degrees F. Line 24 muffin tins with paper liners.
- Using a hand mixer or standing mixer, cream the butter and vanilla sugar together until fluffy, about 2 to 3 minutes. Add eggs, one at a time and vanilla extract, beating until smooth.
- Combine the flour, nutmeg, baking soda and salt in a medium bowl. Add half the flour mixture to the creamed butter, then add the sour cream, and then the rest of the flour. Beat until well combined, taking care not to over mix. Gently fold in the chopped apples.
- Divide batter between prepared muffin tins, filling them 1/2 way full. Bake until a toothpick inserted into the center of the cupcakes comes out clean and the tops spring back when pressed gently, about 20 minutes. Cool the cupcakes in the tin on a rack for 10 minutes then remove from the tin and cool completely.
- Put apple butter into a small pastry bag with an open tip Squeeze a small amount into the center of each cupcake. Continue cooling completely. Then frost with icing.
- For the frosting: Using a hand or standing mixer, beat cream cheese and butter together, at medium speed, until fluffy, about 2 minutes. Add in vanilla and lemon juice. On low speed, gradually add in confectioners' sugar and beat until well combined. Frost as desired.
GINGER APPLES

- In large non-aluminum kettle, combine water and lemon juice. Peel and core apples; cut into eighths and place immediately into lemon water.
- Add sugar and ginger; bring mixture to boiling over high heat, stirring constantly. Reduce heat to low and cook, uncovered, 10 minutes, stirring constantly.
- Meanwhile, sterilize 2 quart or 4 pint jars and the necessary lids, and bands, according to manufacturer's directions. With slotted spoon, divide apples and ginger among sterilized jars. Fill with hot syrup leaving 1/2 inch space at top of jar. Wipe rims of jars to remove any syrup and seal with lids and bands.
- Process jars in boiling water bath for 20 minutes (both quarts or pints). Remove jars from water bath, tighten lids immediately, and set aside to cool completely. Label jars and store in cool, dry place

- Preheat oven to 375°F. Pulse flour, brown sugar, granulated sugar, cinnamon, salt, ginger, and baking powder in a food processor until combined, about 2 times. Add butter, and process until flour mixture goes past the crumbly stage and starts to clump together and look moist, about 30 seconds. Add oats, and pulse to combine, about 3 times. Transfer to a medium bowl, break up any large clumps, and chill, covered, until ready to use.
- Heat a 9-inch cast-iron skillet over medium-high. Add butter, and melt until sizzling. Stir in sugar to moisten in spots. Cook, stirring occasionally, until sugar is a deep amber color, about 5 minutes. Add apples (the pan is going to be overflowing, but they will cook down quickly), lemon juice, and salt. Cook, stirring often, until apples have softened and liquid is slightly reduced, 5 to 6 minutes. Stir in flour and apple brandy until combined. Scatter oat topping evenly over apple mixture, and top evenly with ginger candy. Bake in preheated oven until oat topping is golden brown, 30 to 35 minutes. Let cool slightly, about 10 minutes. Spoon into bowls, and serve with vanilla ice cream or whipped cream.
