- Freeze the chicken breasts for 20 to 30 minutes and then thinly slice the chicken against the grain into strips. Toss the strips with about half the garlic and ginger, the soy sauce, sugar, 1 teaspoon of the cornstarch, 1 teaspoon of the salt, and the sherry in a bowl. Marinate at room temperature for 15 minutes. Mix the remaining cornstarch with the broth.
- Heat 1 tablespoon of the oil a large nonstick skillet over high heat. Add the asparagus, scallions, remaining garlic, ginger, 1/4 cup of water, and season with 1/4 teaspoon salt. Stir-fry until the asparagus is bright green but still crisp, about 3 minutes. Transfer to a bowl.
- Heat the same skillet until very hot, then add remaining 1 tablespoon oil. Add the chicken and stir-fry until it loses its raw color and gets a little brown, about 3 minutes. Return the asparagus to the pan and toss to heat through. Stir in the reserved cornstarch mixture and bring to a full boil to thicken. Mound the stir-fry on a serving platter or divide among 4 plates; serve with rice.

- Snap off and discard the tough bottoms of each asparagus spear. Cut the asparagus into 2-inch lengths
- In a wok or cast-iron skillet, heat the oil until nearly smoking. Add the asparagus, season generously with salt and pepper and stir well, making sure the asparagus is coated and glistening with oil. Continue to stir-fry over high heat for about 1 minute, until the asparagus looks bright green and barely cooked. Add the garlic, ginger and chile and stir-fry for 30 seconds more.

GINGER CHICKEN ASPARAGUS STIR FRY
This is a delicious stir-fry recipe and a really quick and easy dinner. Although the original recipe calls for asparagus, I have used fresh green beans (cut into 1-inch pieces) in place of the asparagus. The amounts for this recipe serves really only about 3 people, however all ingredients can easily be doubled to serve more. This is delicious!

- In a small bowl, combine the lemon juice, soy sauce, fresh ginger and garlic; mix/whisk to combine.
- Toss the chicken pieces well with about 3 tablespoons of the lemon/soy mixture; reserve the remaining mixture.
- Dissolve/whisk the cornstarch in chicken broth.
- Heat the oil in a wok or frying pan until hot.
- Add in mushrooms and chicken; stir over high heat until chicken looses the pink colour.

- 1. In a small bowl, combine the honey, lemon juice, garlic chili sauce, soy sauce, red pepper flakes and ground ginger. Whisk or mix together well. Set in pork and coat completely. Set bowl in refrigerator to marinate.Begin presoaking noodles in warm water.Begin chopping vegetables. 2.After 45 minutes, preheat a wok with the oil over medium high heat until very hot. GINGERED BEEF WITH LEEKS AND ASPARAGUS

- To make marinade, mix first 6 ingredients and thoroughly mix with the beef. Let stand for at least 1 hour, preferably overnight, refrigerated. In a hot pan or wok, coat with Canola oil and add leeks, garlic and ginger. Stir for 3 minutes to caramelize. Add drained beef and stir for 2 minutes. Add asparagus and heat thoroughly. - Combine the soy sauce, rice wine vinegar, sesame oil and brown sugar in a mixing bowl, stir well and set aside.
- Cook the noodles in boiling water, drain, put them in a bowl of cold water to stop them from over-cooking and set aside.
- Heat 1 Tablespoon of canola oil in a large wok or skilletover medium-high heat. Add tofu and stir-fry until golden brown, about 6 minutes.
- Remove the tofu from the wok and set aside.
- Heat remaining 1/2 tablespoon of canola oil in the wok. Add Asparagus, mushrooms, onion, ginger and red pepper. Stir-fry until tender, about 5 minutes.
- Add garlic and stir-fry only 30 seconds, so it becomes fragrant not bitter.
- Add the Sherry.
- Add the noodles, tofu and soy sauce mixture, toss well and heat through.
- Serve garnished with sesame seeds.

SESAME-GINGER ASPARAGUS AND TOFU STIR-FRY
A tasty meatless stir-fry. This is fairly mild, spice-wise. Feel free to add more "heat". Time does not include marinating time.

- Place tofu between several sheets of paper towels on a plate and top with another plate or heavy pan and let sit for 30 minutes to press out liquid. Discard towels and turn tofu block on it's side and slice in half, making halves about 1 inch thick. Place slices in a pie plate or shallow baking dish.
- In a small bowl, mix vinegar, sesame oil, 2 tbls soy sauce, honey, ginger, garlic and chili sauce. Pour this mixture over the tofu slices and cover with plastic wrap. Refrigerate for 2-4 hours, turning slices over halfway through.
- Wash asparagus and snap off tough ends. Slice spears and tips into 1-inch pieces.
- Remove tofu from marinade and pat dry. Save marinade.
- Mix reserved marinade in a bowl with 1/4 cup soy sauce, lime juice, water and cornstarch.
- Cut tofu slices into 1-inch cubes.
- Heat oil over medium-high heat in wok or large skillet and stir-fry tofu until it begins brown, about 5 minutes. Remove tofu from pan to a plate.
- Add asparagus, green onion and mushrooms to wok or skillet (add more oil if needed) and stir-fry until asparagus is just beginning to be tender, about 6 minutes. Return tofu to pan and stir-fry another minute or two.
- Stir in marinade mixture and bring to a boil, cooking until slightly thickened. Serve at once over rice or noodles.
