- Bring the ingredients to a boil in a saucepan. Remove from heat; steep, covered, until the liquid cools to room temperature. Strain and reheat to serve. The brews can be stored in the refrigerator for up to a week.

I REALLY enjoy this "tea". It would be equally as good with lemon. I actually use more water than what the recipe calls for.

- Bring 8 cups water and 1 cup thinly sliced unpeeled ginger to a simmer in a saucepan; simmer until reduced to 5 cups, about 25 minutes. Sweeten with 1/4 cup honey and divide among mugs (strain, if desired). Dust with cinnamon.

LEMON GINGER TEA
Steps:
- In a saucepan bring water to a boil. Add lemon juice, the squeezed lemon, and ginger. Let steep about 20 minutes. Stir in honey. Line a strainer with a thin wet cloth and strain tea into a pitcher. Chill thoroughly and serve on ice with thin slices of lemon and lime.
LEMON-GINGER ICED TEA
This Arnold Palmer has just a little kick to it because of the ginger. But it's so good! It's not intended to be a syrupy, sweet tea, so don't load it with sugar. Keep the taste of the ginger as the focal point.

- Cut the lemon in half. Squeeze the juice from one half and slice the rest. Divide the lemon juice and slices between 2 mugs, along with the sliced ginger.

COCONUT GINGER TEA WITH LIME, HONEY AND TURMERIC
I love the fair trade teas produced by Zhena's Gypsy Tea, especially her Coconut Chai. Inspired by the perfume of coconut in that tea, I infused shredded coconut and ginger and added a little fresh lime juice, honey and a smidgeon of turmeric. The idea of making a turmeric and honey paste comes from Heidi Swanson's 101cookbooks.com.

- Place the coconut and ginger in a large pyrex measuring cup or teapot and pour on the boiling water. Cover and allow to steep for 30 minutes or longer. Strain into another measuring cup, a bowl or a teapot and press the coconut against the strainer to extract all the flavorful liquid.
- Reheat the infusion and pour into cups. Stir 1/2 to 1 teaspoon lime juice and 1 to 1 1/2 teaspoons honey or honey-turmeric paste into each cup.
