GIBLET BROTH
In general "giblets" refers to all the loose parts-the neck, heart, liver, and gizzard of poultry. A broth made of giblets and vegetables will add richness to gravy, as will the chopped giblets themselves. Because of its strong flavor, the liver should not be cooked in the broth, but separately.

- Rinse the gizzard, heart, and neck, and trim all fat, membranes, and blood. Put the giblets in a saucepan, cover with cold water, and add the thyme, onion, celery, and a sprinkle of salt and pepper. Bring to a boil and simmer 45 minutes, or until the gizzard is tender. Meanwhile, cook the liver under the roasting bird 5-10 minutes or sauté lightly in some butter. Strain the giblets, reserve the broth, and finely dice the gizzard, liver, and heart.
QUICK TURKEY GIBLET BROTH
Don't throw away the neck and giblets that come with your turkey. They can be turned into a tasty broth that makes a classic pan gravy. There's no need to simmer the broth for hours, either. - Chop the turkey neck into three to four pieces with a cleaver. Chop the gizzard in half. Heat the oil in a large saucepan over medium-low heat. Add the turkey neck, gizzard, tail, and heart (don't use the liver) along with the onion and 1/2 tsp. salt. Stir to coat with oil, cover, and cook gently for 20 minutes, stirring occasionally; the meat will release lots of juice.
- Add 4 cups cold water and the carrot, celery, bay leaf, thyme, parsley, and peppercorns. Bring to a boil over medium-high heat, cover, and reduce the heat to maintain a gentle simmer. Simmer until the broth is flavorful, 30 to 40 minutes. Strain the broth and use immediately or let cool. Pick the meat from the neck and tail to add to the gravy along with the chopped gizzard and heart, if you like.

- 1. Rinse giblets and chicken in water and drain.
- 2. In a 3 quart heavy bottomed saucepan, put the first seven ingredients in and bring to a boil.
- 3. Cover and reduce heat to a simmer. Simmer for about an hour.
- 4. Add the next eleven ingredients and bring to a boil again. Simmer until carrots are tender and rice is done. About 30 minutes.
- 5. Add reserved onion tops and cilantro leaves. Stir and taste for seasoning.
- 6. Serve alongside some tortilla chips or pretzels.
GIBLET STOCK FROM TURKEY OR CHICKEN OR ?? FOR SOUP OR GRAVY
You can use this recipe for chicken or turkey stock for soup or gravy. I like the extra wing added to my stock. But it's not necessary.Cook time between 1 1/2 -2 hours. If cooked down less then 3 cups add water.I like to leave the skin on the onion it gives it a darker richer color.

- In a large saucepan, combine the wing, neck and giblets (excluding the liver), 6 cups water, celery, carrot, onion, sage,garlic, bay leaf and peppercorns.
- Bring mixture to a boil, reduce heat and continue to cook at a simmer, skimming the froth occasionally for 1 hour.
- Add liver and continue to cook at a bare simmer for an additional 30 minutes.
- Strain the stock through a fine sieve into a bowl.
- There should be about 3 cups of stock.
- Reserve the turkey wing, liver, neck and remaining giblets.
- Chop the giblets finely and shred the meat from the wing for the gravy or soup.

- Rinse giblets and neck. Wrap liver airtight and chill to use in gravy, or save for other uses.
- In a 5- to 6-quart pan over high heat, melt butter; add gizzard, heart, and neck and turn often until well browned, about 5 minutes. Add carrots, celery, and onions and stir often until onions are lightly brown, about 5 minutes. Add broth and stir to release browned bits. Cover and bring to a boil. Reduce heat and simmer until gizzard is very tender when pierced, 1 1/4 to 1 1/2 hours.
- Pour the broth through a fine strainer into a 2-quart measure. Reserve neck and giblets; discard vegetables. If you have more than 8 cups of broth, boil to reduce; if you have less, add chicken broth.

- Pour water over the cleaned, washed and chopped giblets (without the livers), add salt and simmer with the finely chopped onions until almost soft.
- Then add the vermicelli, livers , finely chopped tomatoes and a little later, the butter, which has been colored from the shredded carrot sauteed in it and then strained.
- After removing the soup from the heat, add a boiled thickener made from the yoghurt, egg, flour and spices .

Steps:
- Heat oil in soup kettle; add giblets, neck, and tail, then sauté until golden and fragrant, about 5 minutes.
- Add onion; continue to sauté until softened, 3 to 4 minutes longer.
- Reduce heat to low; cover and cook until turkey and onion release their juices, about 20 minutes.
- Add stock and herbs, bring to boil, then adjust heat to low.
- Simmer, uncovered, skimming any scum that may rise to surface, until broth is rich and flavorful, about 30 minutes longer.
- Strain broth (you should have about 5 cups) and reserve neck, heart, and gizzard.
- When cool enough to handle, shred neck meat, remove gristle from gizzard, then dice reserved heart and gizzard.
- Refrigerate giblets and broth until ready to use.
- While turkey is roasting, return reserved turkey broth to simmer.
- Heat butter in large heavy-bottomed saucepan over medium-low heat.
- Vigorously whisk in flour (roux will froth and then thin out again).
- Cook slowly, stirring constantly, until nutty brown and fragrant, 10 to 15 minutes.
- Vigorously whisk all but 1 cup of hot broth into roux.
- Bring to boil, then continue to simmer until gravy is lightly thickened and very flavorful, about 30 minutes longer.
- Set aside until turkey is done.
- When turkey has been transferred to carving board to rest, spoon out and discard as much fat as possible from roasting pan, leaving caramelized herbs and vegetables.
- Place roasting pan over two burners at medium-high heat (if drippings are not a dark brown, cook, stirring constantly, until they caramelize.) Return gravy to simmer.
- Add wine to roasting pan of caramelized vegetables, scraping up any browned bits with wooden spoon and boiling until reduced by half, about 5 minutes.
- Add remaining 1 cup broth, then strain pan juices into gravy, pressing as much juice as possible out of vegetables.
- Stir giblets into gravy; return to a boil.
- Adjust seasonings, adding salt and pepper to taste if necessary.
- Serve with carved turkey.

- In a saucepan add giblets and neck, salt, celery leaves, and onion slices. Cover with water and simmer for 1 hour. Remove the giblets and onions from the broth and let them cool and then chop them into small pieces. Remove the meat from the neck bones. Discard the bones and chop up the neck meat as well. Add enough water to the reserved broth to equal 3 cups of liquid total. Add the flour to a saucepan and add just a little of the broth (enough to make a roux). Slowly add the rest of the broth while whisking and add the pepper. Cook until thick and bubbly. Stir in the giblets and chopped boiled eggs. Enjoy!
